NANA'S BEEF STROGANOFF
This is a delicious Stroganoff that my Nana made all the time. My husband's favorite meal is Stroganoff, and before we met he never had homemade Stroganoff sauce. Once my mom made this for him, he has never eaten any other! Serve over rice or egg noodles.

Steps:
- Shake 1 tablespoon flour with salt in a large, resealable plastic bag until combined; add beef and shake to coat.
- Melt 2 tablespoons butter in a skillet over medium-high heat. Brown beef in the hot butter, about 3 minutes per side. Stir mushrooms, onion, and garlic into beef; cook and stir until garlic is fragrant, 3 to 4 minutes. Transfer beef and vegetables to a bowl, leaving drippings in skillet.
- Melt 2 more tablespoons butter in skillet over medium heat. Cook and stir 3 tablespoons flour in the hot butter until smooth; stir tomato paste into flour mixture. Whisk beef stock into mixture and cook, stirring constantly, until sauce is thickened and bubbling, about 5 minutes.
- Return beef and vegetables to skillet and stir to coat with sauce. Reduce heat to very low and simmer until beef is tender, 2 to 3 hours. The longer it cooks, the more tender the meat will be. Just before serving, stir sour cream and white wine into beef mixture and heat through. Do not boil.

The best beef and egg noodles you'll ever have. Affordable, quick, and yummy! I have to give credit to my grandma. She used to cook this for her 5 kids and then later for all her grandkids.

Steps:
- Heat a skillet over medium-high heat; cook steak, working in batches, until seared and browned on all sides, about 5 minutes. Transfer seared steak to a plate.
- Melt butter in the same skillet over medium heat and saute onion until softened, 5 to 10 minutes. Add steak to onion and pour beef stock over steak; season with bay leaves, thyme, salt, and pepper. Bring to a boil, reduce heat to low, cover skillet with a lid, and simmer until steak is tender, 50 minutes to 1 hour 50 minutes. Stir peas and cornstarch into steak mixture; cook uncovered until liquid thickens, about 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain. Serve beef mixture over noodles.

NANA'S CRISPY BEEF AND NOODLES
My mom made this for us when we were growing up and it is one of my all-time favorite recipes. I usually make it with left-over steak or pork roast, but I recently made it with two raw sirloin steaks thinly sliced and it was amazing! My husband and I can eat one recipe in a sitting, but we have big appetites (I'm still nursing!), so you might want to double the recipe if you have a family of big eaters. All in all, a fast, fancy way to prepare steak or pork roast.

Steps:
- Boil water for noodles and cook noodles until al dente.
- While waiting for the water to boil, combine olive oil and butter in a frying pan over medium heat. Add meat and cook, stirring occasionally, until meat is crisp and browned, about 5 minutes
- Add parsley, basil, salt, oregano,and pepper. Cook just until parsley begins to turn limp.
- Drain noodles and place in shallow serving bowl.
- Spoon sauce over noodles and toss lightly. Sprinkle parmesan cheese on top and serve.

- Cook the noodles in a large pan of boiling water as per the cooking instructions (usually 3-4 minutes). Drain, run under cold water to stop the cooking process, then place in a bowl and toss with the sesame oil to prevent the noodles from sticking together. Put to one side.
- Place the steak strips in a bowl and add the cornflour, salt and pepper. Toss together until the beef strips are completely coated.
- Heat the vegetable oil in a wok or large frying pan over a high heat. When the oil is hot, tip the beef in and fry until dark brown and crispy. Using a slotted spoon, remove the beef from the pan and place in a bowl lined with kitchen roll to soak up excess fat.
- Turn the heat down to medium and add the ginger, garlic, broccoli and red peppers to the pan. Stir fry for 2-3 minutes until lightly cooked, but still crisp. Remove from the pan with a slotted spoon.
