NANA'S MEATLOAF WITH TOMATO GRAVY

Nana's Meatloaf with Tomato Gravy image

Provided by Food Network

Categories     main-dish

Time 2h25m

Yield 6 to 8 servings

Number Of Ingredients 20

2 pounds 80/20 ground beef
1 pound pork sausage, meat removed from casings
2 eggs
1 cup panko breadcrumbs
One 32-ounce can whole peeled tomatoes
1/2 cup red wine vinegar
1/2 cup Worcestershire sauce
2 teaspoons dried oregano leaves
2 teaspoons ground black pepper
2 teaspoons dried thyme leaves
1 teaspoon kosher salt
1 teaspoon seasoning salt
5 cloves garlic
1 yellow onion
1 Anaheim chile
1/2 red onion
1/2 cup ketchup
1/2 cup tomato paste
1/4 cup yellow mustard
Kosher salt and ground black pepper

Steps:

  • For the meatloaf: Preheat oven to 350 degrees F. Place beef, sausage, eggs and panko in a large bowl. Set aside.
  • Place tomatoes, vinegar, Worcestershire, oregano, pepper, thyme, kosher salt, seasoning salt, garlic, yellow onion, chile and red onion in a high-powered blender and puree. Reserve half of this mixture for the tomato gravy. Pour the remaining half into the mixing bowl with the meat. Mix the meat really well with your hands until the meatloaf mixture is all the same color.
  • Pack the meatloaf mixture into a 6-by-11-inch pan (or something similar). Place pan on a baking sheet to catch any fat that spills out during cooking. Bake the meatloaf until an instant-read thermometer inserted in the center registers 155 degrees F, 1 hour 30 minutes. Let meatloaf rest for 10 minutes, then pour the fat out of the pan.
  • For the tomato gravy: Meanwhile, whisk together ketchup, tomato paste, mustard and reserved vegetable mix in a saucepan. Place over medium heat and bring up to a simmer. Reduce heat to low, then simmer, stirring every couple of minutes, for 30 minutes. Adjust the seasoning with salt and pepper. Serve the tomato gravy with your finished meatloaf! Most importantly, enjoy with friends and family!

CLASSIC SAUSAGE GRAVY

Classic Sausage Gravy image

A staple in Southern households, this sausage gravy can be served over grits but goes beautifully with biscuits too.

Provided by JimmyDean

Categories     Pork Gravy

Time 25m

Yield 4

Number Of Ingredients 7

1 tablespoon canola or vegetable oil
1/2 (1-pound) package Jimmy Dean Premium Pork Sausage
3 tablespoons all-purpose flour
2 cups milk
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon sliced green onions, or to taste

Steps:

  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain.
  • Add flour and mix well with the sausage. Reduce heat to medium and add 1 cup of milk, stirring to prevent any flour lumps. Add the remaining milk and the salt and pepper. Bring heat up to medium-high for 2 to 3 minutes, or until the sauce bubbles up to the top of the pan (do not allow it to boil over).
  • Reduce heat to medium-low, stirring the sauce frequently until it thickens, about 5 minutes.
  • Serve over cooked grits or biscuits, and top with green onions.

SAUSAGE GRAVY

Sausage Gravy image

Grandma's own! Adjust the milk to the thickness you like. Works with bacon, too. Serve hot over freshly baked biscuits!

Provided by Denyse

Categories     Side Dish     Sauces and Condiments Recipes     Gravy Recipes     Pork Gravy

Time 30m

Yield 12

Number Of Ingredients 3

1 pound ground pork sausage
3 tablespoons all-purpose flour
3 cups milk

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
  • Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
  • Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

BEST SAUSAGE GRAVY AND BISCUITS

Best Sausage Gravy and Biscuits image

For the best sausage gravy with biscuits, try this recipe at home and you won't even have to wait to order them at a restaurant. Creamy, meaty, and savory... each bite is nice and salty with a slight kick of spice from the hot sauce.

Provided by NicoleMcmom

Time 30m

Yield 6

Number Of Ingredients 8

1 pound bulk country sausage
2 tablespoons butter
¼ cup all-purpose flour
2 ½ cups milk, or more as needed
2 teaspoons hot sauce
½ teaspoon ground black pepper
¼ teaspoon salt
6 hot biscuits, split

Steps:

  • Heat sausage in a large skillet over medium-high heat. Cook, crumbling with a spoon and stirring often, until browned and cooked through, 5 to 7 minutes.
  • Add butter to skillet and melt. Sprinkle flour evenly over skillet and stir for 1 minute. Whisk in 2 1/2 cups milk and scrape up any bits off the bottom of the skillet. Bring mixture to a simmer.
  • Reduce heat to low and cook, stirring often, until thickened, about 10 minutes. If mixture becomes too thick, thin slightly by adding more milk or water. Season with hot sauce, pepper, and salt; cook for 1 more minute.
  • Serve immediately over hot biscuits.
