Fruit Pizza is a colorful, sweet treat made with a sugar cookie crust, cream cheese frosting, and fresh fruit toppings.

¾ cup (170g) unsalted butter (at room temperature)
⅔ cups granulated sugar
1 egg
1 teaspoon pure vanilla extract
1¾ cups all purpose flour
1 teaspoon baking powder
½ teaspoon salt
fresh fruit (for topping)
1 8-oz package cream cheese (softened)
½ cup powdered sugar
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 390°F/200°C degrees.
  • In a bowl, using a hand mixer cream together the sugar and the butter until it's well combined and creamy (about 1 minute). Mix in the egg and the vanilla extract.
  • Add the flour along with the baking powder and salt, and beat with the mixer on slow speed until just combined.
  • Line a 12-inch pizza pan with parchment paper, grease your hands with cooking spray then spread the dough in the pan in an even layer. You will have to use your hands to press down the dough.
  • Bake in the oven for 13-15 minutes. The cookie base does not have to brown, it might look undercooked but that's totally fine as baking it for longer will dry it out. Remove from the oven, and cool completely on a cooling rack.
  • To make the cream cheese frosting, whip the cream cheese with the powdered sugar and vanilla extract. Add the powdered sugar in batches to avoid getting a sugar storm.
  • Once the cookie base has cooled completely, using a spatula spread the cream cheese frosting over the cookie dough base, and then decorate with fresh fruit creating a pattern. Drizzle/brush the fruit with honey if desired.

3/4 cup butter
1/4 teaspoon cinnamon
3 tablespoons brown sugar
1 1/2 cups self rising flour
8 ounces cream cheese
2 cups Cool Whip
1 cup confectioners' sugar
1 pint strawberry
1 cup blueberries
1 kiwi
3/4 cup mandarin orange
1/2 teaspoon cornstarch
1/4 cup orange juice
1/4 cup sugar
1/2 tablespoon butter

Steps:

  • preheat oven to 350 degrees.
  • melt butter before measuring. then add flour, brown sugar, and cinnamon and mix into a paste. pat dough onto a standard size pizza pan (note: we use the disposable aluminum ones).
  • bake 14-16 minutes, until golden brown. let stand until completely cooled.
  • while crust is baking, allow cream cheese to soften, then beat until smooth.
  • add confectionary sugar and cool whip and mix thoroughly.
  • spread onto cooled crust.
  • add your fruit on top of the creamy topping. you can choose whatever you like. i have listed a rough estimate of what we like to use above, but you can use any fruit of your choosing. arrange by placing one type of fruit in a circle around the edge, working inward with different fruits in each row. (wash fruit thoroughly and drain fruit thoroughly if you use canned fruit.).
  • combine cornstarch and sugar with orange juice and boil for one minute.
  • add 1/2 tbsp butter. if too thick, thin down with a little water. let it cool.
  • brush over the fruit and serve!

1 package (8 ounces) cream cheese, softened
1/3 cup sugar
3/4 cup pineapple tidbits with juice
1 small firm banana, sliced
1 medium kiwifruit, peeled and sliced
1 cup sliced fresh strawberries
1/4 cup chopped pecans
1 ounce semisweet chocolate
1 tablespoon butter

Steps:

  • Prepare brownie batter according to package directions. Spread onto a greased 12-in. pizza pan. Bake at 375° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool completely. , In a large bowl, beat cream cheese and sugar until smooth. Spread over brownie crust. Drain pineapple, reserving juice. Toss banana slices with juice; drain well. Arrange the banana, kiwi, strawberries and pineapple over cream cheese layer; sprinkle with pecans. , In a small microwave, melt chocolate and butter; stir until smooth. Drizzle over fruit. Cover and refrigerate for 1 hour.

1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit.   • Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan. Remove chilled cookie dough from the refrigerator and press onto the pizza pan in an even flat circle, as pictured above. Bake for 18-20 minutes or until the edges are very lightly browned. Overbaking will lend a hard crust. Allow crust to cool completely before decorating. I put the crust in the refrigerator after 10 minutes of cooling at room temperature – this sped up the process.
