Steps:
- Fry pepper and onion in heated oil for 2 minutes; stirring constantly
- Add dried spices to the pan and cook for further 1 minute (Add more oil if the mixture is dry)
- Add rice, water and chicken stock to the hot pan
- Bring mixture to boil, then immediately turn the heat to lowest possible and add the frozen peas (move to a smaller hob if needed)
- Cover with lid and cook for around 30 minutes (until cooked). Mix the rice regularly and re-cover with the lid to ensure the rice doesn't stick.
- Once completely cooked, stir and serve

PIRI-PIRI CHICKEN WITH SPICY RICE
Use a lime-spiked spicy marinade to coat thighs and drumsticks then roast and serve with paprika rice for a cheap and healthy supper

- Heat oven to 200C/180C fan/gas 6. Slash each piece of chicken 3 times, so the marinade can really flavour the meat. Pour over the sauce and leave in the fridge to marinate, if you have time. If not, mix well and arrange, skin-side up, in a roasting tin. Cook for 30 mins, then increase heat to 220C/200C fan/gas 7 and cook for about 15 mins more until the skin is crispy and golden.
- When the chicken is almost ready, heat the oil in a frying pan. Cook the peppers and white parts of the spring onions for 5 mins. Tip in the purée and paprika, stir, then add the rice, breaking up with a wooden spoon so all the grains are coated well. Use a high heat and scrape any that sticks off the bottom so you get some soft and some crispy parts. Heat until piping hot. Scatter the green parts of the spring onion on top and serve with the chicken, and some vegetables or salad, if you like.

HOMEMADE NANDOS RICE
If you want to make Nandos style peri peri at home then this recipe for Nando's style Portuguese rice is what you need. Perfectly cooked rice flavoured with warming cumin, chilli and turmeric can be on the table in less than half an hour. Ideal with chicken and other peri peri dishes.

- Peel and chop the onion, garlic and red pepper.
- Put the oil in a pan (I like to use a shallow casserole dish). Add the onion, garlic and pepper and sauté them over a low heat. You want them to soften with the onion just starting to turn golden
- Add the chilli flakes, paprika, cumin and turmeric, stir in and fry for another minute until fragrant.
- Add the rice and stir until it is coated with the spice and oil mixture.
- Pour over the stock, Add a little salt. Bring to a gentle simmer. Then put the lid on the pan and leave on the lowest heat for 18 minutes.
- Meanwhile pour the peas into a bowl and cover with boiling water to defrost and cook them.
- After 18 minutes, turn the heat off and allow to stand for 5 minutes. The rice will have absorbed all the liquid. Drain the peas and add to the pan. Put the lid back on immediately and leave for another 5 minutes.
- Fluff the rice with a fork to mix the peas in, replace the lid and allow to stand for up to 15 minutes before serving.

EASY HOMEMADE NANDO'S SPICY RICE
Get the taste of the restaurant with our homemade version of Nando's spicy rice. This Nando's copycat version is QUICK, EASY, HEALTHY and so DELICIOUS too. Plus cooks under 30 minutes. The texture is non- sticky, every grain is separated.

- Wash the rice until clear and soak for 15 minutes in cold water. Drain and set aside. Heat oil in the Pan and add the onion, garlic. Saute, and cook for two minutes until fragrant.
- Now add diced red pepper, turmeric, chilli powder, smoked paprika, cumin and salt. Saute briefly for 1 minute.
- Add the rinsed rice and fry for 3-4 minutes until toasty.
- Add 1 1/2 Cup Boiling Water, green peas and stock cube. Stir and allow the rice to boil in medium heat.
- When the water has evaporated to the level of rice, place a lid on the pan and reduce the heat to low.
- Cook for 6-7 minutes. Once the rice has cooked, turn the heat off. Leave the lid on for a few more minutes.
- Fluff the rice with a fork and serve Homemade Nando's spicy rice with your takeaway favorite.

NANDO'S SPICY RICE
Steps:
- Dice onion and bell pepper. Finely grate or dice the garlic.
- Heat up the olive oil in a pot on the stove top on medium heat.
- Add onion to the pot, and sauté for a few minutes, until the onion is soft and translucent.
- Add garlic, seasoning and peppers to the pot. Sauté for a further minute.
- Wash the rice under running water, and add it to the pot along with the chicken stock.
- Cover the pot with a lid, and bring the rice to a boil. Leave it to boil for 1-2 minutes, then turn the heat completely off. Leave the pot to sit on the warm surface for about 10 minutes. The rice will cook in the steam.
- Add frozen peas to the rice, and stir to combine. Cover with a lid, and leave for 1-2 minutes. The peas will thaw.
- Optionally, season the rice with salt and pepper, then serve.

- Add the onion, red pepper, peas, paprika and cumin in to a large frying pan with some oil and one of the chicken stock cubes. Cook the contents of the pan while stirring frequently for 2-3 minutes.
- Add 2 cups of rice (I always use normal tea cups for rice as it’s so much easier to work out how much water to add) and 4 cups of boiling water together with the other stock cube and the turmeric. I say 4 cups but I usually hold a little bit back and add it only if I need to.
- Bring the rice mix to the boil and them simmer until all the water is absorbed - this usually takes around 20 minutes or so. Don't forget that the more the water is absorbed into the rice, the more likely it is to stick to the bottom of the pan and burn so keep with it and stir regularly.
- Keep stirring until all of the liquid is completely absorbed by the rice - the rice we made today was slightly sticky as I took it off the heat a bit too soon.

- Place the diced onion and red pepper in a reasonably large saucepan. Cover with a lid and cook over a gentle heat for 3 minutes until softened but not browned.
- Remove the lid and add the chilli flakes, turmeric and smoked paprika. Cook for 2 more minutes. Add a splash of water if it starts to get a little dry.
