2/3 cup potato starch flour
1/3 cup tapioca flour

Steps:

  • In a small bowl, combine all ingredients. Store in an airtight container in a cool, dry place for up to 1 year.

Shake up seven ingredients for a simple, homemade gluten-free flour mix; the perfect substitute in holiday baking. Thanks to a hearty blend of rice flour, tapioca flour, and potato starch, this easy gluten-free mix is ideal for baked goods that require little structure, such as sugar cookies, brownies, and crumbles. I wouldn't recommend it for desserts that require more structure, like cakes, and I haven't tried it in breads...yet. This recipe first appeared in Season 1 of Good Eats: Reloaded.

1 1/2 cups plus 2 tablespoons white rice flour
1 1/4 cups plus 2 teaspoons tapioca flour or starch

1 cup nonfat dry milk powder
1/2 cup plus 1 1/2 tablespoons potato starch
1 tablespoon plus 1/2 teaspoon xanthan gum

Steps:

  • Combine all of the ingredients in a large, airtight container, shake well, and use within 6 months.

I found this recipe in the Thanksgiving edition of the Illinois Times, when Kim O'Donnel 'caught up' with the author of 'Normal Cooking for Gluten-Free Eating. After having success with many of the gluten-free all-purpose flower mixes from the 'zaar, I can't wait to try this one and hope it helps others. On a seperate note, The columnist does say the products using this flour are grittier than gluten-containing flours; I think that is typical of gluten-free baking. Nonetheless, enjoy!
