Steps:
- Preheat the oven to 375 degrees F. Put the sweet potatoes on the oven rack and bake until fork-tender, about 45 minutes. When the potatoes are finished cooking, let cool slightly, about 5 minutes. Slice them open lengthwise and scrape out the flesh with a fork into a large bowl. Increase the oven temperature to 400 degrees F.
- Add the granulated sugar, milk, eggs, vanilla and salt to the bowl with the sweet potatoes. Mash the mixture with a potato masher until combined and slightly lumpy-you don't want it to be perfectly smooth.
- Now, in a separate bowl, mash the brown sugar, pecans, flour and butter with a pastry cutter or fork until thoroughly combined. The mixture should resemble a crumble.
- Spread the sweet potato mixture in a 14-cup oval-shaped baking dish and sprinkle the crumb mixture all over the top. Bake until golden brown, about 30 minutes.

- For the sweet potatoes: Preheat the oven to 375 degrees F.
- Bake the sweet potatoes until fork-tender, 30 to 35 minutes. Remove the potatoes and raise the oven temperature to 400 degrees F.
- Slice the sweet potatoes in half and let them cool slightly. Scoop out the innards, place into a large bowl and give them a good mash, leaving some texture to the potatoes--no need to mash completely. Add the granulated sugar, milk, salt, vanilla extract and eggs. Stir and mash the mixture around--you don't want them to be perfectly smooth.
- Butter a 2-quart baking dish, pour in the potatoes and smooth out the top.
- For the topping: Combine the brown sugar and flour in a bowl. Throw in the butter and with a pastry cutter, cut together until thoroughly combined. Add the pecans and combine until the topping is nice and crumbly. Sprinkle the crumb mixture all over the top of the potatoes.
- Bake until golden brown, about 30 minutes.

- fill a large saucepan two-thirds full of water. add the salt.
- using a vegetable peeler, peel the potatoes. put a peeled potato on the cutting board. cut the potato in half lengthwise. holding a potato half cut side down, slice it lengthwise into 1-inch slices. now hold the slices and cut them in the opposite direction to make 1-inch pieces. be sure to keep your fingers clear of the knife blade. add the potato to the pan. repeat with the remaining potatoes.
- put the pan on the stove and switch on the heat to high. bring the water to a boil and boil the potatoes, uncovered, until tender, about 10 minuites.( you can check by scooping out a potato cube with a slotted spoon, and poking the cube with a fork. it should go in easily) turn off the heat.
- put a colander into the sink. remove the pan from the stove and pour the water and potatoes into the colander. be very careful; the steam from the boiling water can burn you.
- return the potatoes to the pan. mash them with a potato masher. add the milk and butter. continue to mash until the butter and milk are mixed inches potatoes can be smooth or lumpy as you like. season with salt and pepper.

- Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch casserole dish with cooking spray.
- Spread 20 potato nuggets in the casserole dish.
- Bake in preheated oven until warmed through, about 10 minutes.
- Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease. Season beef mixture with 2 teaspoons Worcestershire sauce, steak seasoning, garlic powder, and black pepper.

- Peel turnips, making sure to remove the tough top bits; place in a saucepan.
- Cover with water and bring to a boil.
- Cover with pan lid, lower heat and simmer for about an hour until tender.
- Drain then cut into chunks small enough to fit in your food processor.
- Place chunked veggies, butter, and sour cream in a food processor and puree.
- Add beaten eggs and cheese and whir some more until ingredients are well-mixed (it won't take long).
- Pour into casserole dish and bake for about 20 minutes at 350°F until it's a little brown on top and edges (or you can nuke it for about 7-10 minutes).
- You might want to experiment the first couple of times you make it to see how brown you like the top.
- You can sprinkle a little more cheese on the top before baking, if you like.
- (You can also cube the turnips ahead of time then simmer and it doesn't take so long to cook, but some turnips are so hard to cut when raw that I've given up on that technique and just boil them whole.) Optional: add a garlic clove to the cooking veggies and puree along with everything else; adds.
- 25 carbs to each serving.
- Other options: 1/4 tsp dill, crumbled bacon, etc.
- Fluffier than other mashed-potato substitutes, because of the egg baked inches.
- Mmmm!
- The carb count on these might be a bit off, but they wouldn't be much more.
- Turnips are pretty low.

- Wash 4 medium sweet potatoes and bake them in a 375-degree oven until fork tender, about 30-35 minutes. When they are finished cooking slice them open and scrape out the flesh into a large bowl.
- Add 1 cup of (regular grandulated) sugar, 1 cup of milk, 2 eggs, 1 teaspoon of vanilla extract and 1 teaspoon of salt. With a potato masher, mash them up just enough-you don't want to be perfectly smooth.
- Now, in a separate bowl, add 1 cup brown sugar, 1 cup pecans, chopped (that means measure a cup of pecans, then chop them), ½ cup flour, and ¾ stick of butter. With a pastry cutter or fork, mash together until thoroughly combined.
- Spread the sweet potato mixture into a regular baking dish and sprinkle the crumb mixture all over the top.
- Bake in a 400-degree oven for 30 minutes, or until golden brown.
FRIED TATERS
My husband loves my fried taters. It's just something I've whipped up and the spices are more to the person's taste than anything. They can be a bit spicy so you can hold back on the salt. Let me know what you think.

- Chunk potatoes into large pieces and put in sauce pan.
- Add onion and salt.
- Cover with water.
- Cover and boil until a fork goes easily into potatoes.
- Drain all but 2 inches of water from the pan.About 3/4c.
- Add Velveeta.
- Cover and return to burner.
- When mostly melted, stir.
- Top with parsley and pepper.
- Let cool for 5 minutes.The longer they sit the better they are.
- You can't make enough!
