1 tb Worcestershire Sauce
1/2 md Red onion; finely diced
1 c Garlic; finely diced
1/4 c Ketchup
1 ts Cayenne
1 tb Pasilla chile powder
2 tb Dark; (1/2 pint) whipped
2 tb Dijon mustard
2 tb Unsalted butter
6 Plum tomatoes; coarsely
1 tb Honey

Steps:

  • In a medium sauce pan over medium heat, heat the butter and sweat the onion and garlic until translucent. Add the tomatoes and simmer for 15 minutes. Add the remaining ingredients and simmer for 20 minutes. Puree the mixture in a food processor, pour into a bowl, and allow to cool at room temperature. This sauce will keep for 1 week in the refrigerator or several months frozen. New Mexico Red Chile Sauce image

Red chile is a staple of the New Mexican and West Texan diet, and this recipe is my grandmother's recipe. When I make it, it reminds me of the smells of her cooking in her kitchen, fresh corn tortillas, beans, and red chile peppers. You can kick up the spiciness by adding more arbol chile pods.

2 tablespoons canola oil
20 New Mexico dried red chile pods, stemmed and seeded
10 dried chile de arbol peppers, stemmed and seeded
1 large yellow onion, chopped
3 cloves garlic, chopped
1 quart chicken stock, or more if needed
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1 tablespoon honey

Steps:

  • Coat the bottom of a heavy saucepan with oil; add chile pods. Toast over medium heat until aromatic, about 3 minutes.
  • Stir in onion and garlic; cook and stir until fragrant, about 5 minutes. Add enough chicken stock to allow pods to float; simmer until they develop the texture of wet leather, 5 to 7 minutes.
  • Fill blender halfway with chile-stock mixture. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Pour into a bowl; repeat with remaining mixture. Strain sauce through a fine mesh strainer into a saucepan over medium heat. Discard solids.
  • Stir cumin, coriander, and oregano into the saucepan; add honey. Cook until sauce is thick and evenly coats the back of a spoon, about 10 minutes.

This is one of the best barbecue sauces I have tasted in a long time. It can be used as a marinade, a basting sauce and a dipping sauce. I used it for pork ribs but it would be good with chicken, too.

2 teaspoons vegetable oil
2 garlic cloves, minced
1/3 cup onion, minced
3/4 cup ketchup
1/3 cup water
2 tablespoons cider vinegar
4 teaspoons brown sugar, packed
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon Worcestershire sauce
1/2 teaspoon ground cumin
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon liquid smoke

Steps:

  • In a saucepan, heat the oil over medium heat; fry the garlic and onion, stirring occasionally, until softened, about 3 minutes.
  • Add the ketchup, water, vinegar, sugar, chili powder, oregano, Worcestershire sauce, cumin, mustard, salt and liquid smoke; bring to a boil.
  • Reduce the heat and simmer until slightly thickened, about 3 minutes.
  • Let cool before using for marinating or basting. If using as a dipping sauce, measure off the required amount, reheat and thin with a little water.

6 medium plun tomatoes coarsely chopped
1/4 c ketchup
2 Tbsp dijon mustard
2 Tbsp dark brown sugar
1 Tbsp honey
1 tsp cayenne pepper
1 tsp ancho chile powder or one ancho chile
1 tsp chile powder
1 Tbsp paprika
1 Tbsp worcestershire sauce

Steps:

  • 1. In a Large saucepan over medium heat ,heat the butter and sweat the onion and garlic until translucent.
  • 2. Add the tomatoes and simmer for 15 minutes add remaining ingredients and simmer for 20 minutes.
  • 3. Puree the mixture in the food processor pour into a bowl and let cool at room temperature.
