1 lb carrot, grated
12 ounces onions, finely chopped
12 ounces celery & leaves, chopped
2/3 cup plain low-fat yogurt
2/3 cup canola oil
1 3/4 cups vinegar
1/4 cup honey
4 teaspoons paprika
4 teaspoons caraway seeds
2 3/4 cups dill weed
3/4 teaspoon celery seed
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup parsley, chopped

Steps:

  • In a very large bowl, combine cabbage, carrots, onions and celery.
  • Mix well.
  • Chill.
  • Combine dressing ingredients and whisk until well blended.
  • Chill.
  • Just before serving, pour dressing over vegetables and toss well.
  • Note: For added color, use purple cabbage when it's available.
  • Make the dressing the day before to fully develop the flavors.

1/2 cup chopped onion
3 tablespoons mayonnaise

4 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine cabbage, green pepper and onion. In a small bowl, combine mayonnaise, vinegar, sugar and salt. Pour over cabbage mixture and toss to coat. Cover and refrigerate at least 4 hours. Stir in bacon just before serving.

3 to 4 cloves garlic, peeled, crushed and chopped (2 teaspoons)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Dijon-style mustard
1 tablespoon red-wine vinegar
1 tablespoon soy sauce
3 tablespoons canola oil
1 firm head Napa cabbage (about 1 pound)

Steps:

  • Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
  • Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. Wash well and spin dry in a salad dryer (moisture would dilute the dressing). Ten or 15 minutes before serving, add the cabbage to the dressing, toss well and set aside, so the dressing can penetrate the cabbage and soften it slightly.

2 stalks napa cabbage, Finely Chopped
2 bunches green onions, Finely sliced
1 sweet red pepper, diced for color
2 -3 ounces oriental-flavor instant ramen noodles
4 -8 ounces sunflower seeds, I like the salted kind better
4 ounces sliced almonds
1 cup olive oil
1/2 cup vinegar
1 cup sugar
2 teaspoons soy sauce
2 teaspoons dry mustard
2 oriental-flavor instant ramen noodles

Steps:

  • The Salad.
  • Saute broken up noodles, sunflower seeds, and almonds in olive oil until brown.
  • let cool and mix with cabbage, red pepper and onions.
  • Just before serving mix dressing in with salad or it gets soggy.
  • I saute the crunchy stuff and keep it in a closed container until ready to use.
