GRANDMA'S HOMEMADE GRANOLA
My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
- Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
- Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
- Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more.
- Remove from the oven and let cool, 20 to 30 minutes. Toss with cranberries. Store in an airtight container.

BAKED HOMEMADE GRANOLA (LOWER FAT)
By making your own granola you can reduce the fat and increase the richness of nuts and seeds. This is great alone as a snack or on top of yogurt or anything! For the mixed nuts and seeds you can use all or a mixture of slivered almonds, coarsley chopped walnuts, pumpkin seeds, sunflower seeds and sesame seeds.

Steps:
- Set oven to 300 degrees.
- Place oven rack to center position.
- Lightly oil two large baking sheets.
- In a large bowl stir together oats with nuts, seeds and spices.
- In a small bowl stir together the warm water with maple syrup and vanilla.
- Slowly pour the syrup mixture over the nut mixture; stir with a wooden spoon to combine.
- Spread out on the greased baking sheet/s.
- Bake (center oven rack) for about 30 minutes, stirring every 10 minutes to prevent burning, until granola is crumbly and golden.
- Remove from oven and immediately stir in the raisins and apricots.
- When the mixture is cool, store in an airtight container for up to 5 days or refrigerate for 1 month.
- Delicious!

FRUIT AND NUT GRANOLA (CHRISSIE'S GRANOLA)
Originally given to me at work as a 'Hey! I made this, try it, it's vegan (I'm not vegan), you'll love it!' and I did; I really did love it. I've made it several times now and a modified version for my husband (omitted the chocolate and used deluxe mixed nuts). I have to stash some or get none in my house.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a large baking sheet.
- Pour the oats into a large bowl. Add almonds, cinnamon, cocoa powder, salt, brown sugar, and dried fruit into the oats respectively, stirring each into the mixture before adding the next.
- Mix maple syrup and vanilla extract together in a small bowl. With a rubber spatula, add the maple syrup-vanilla mixture to your dry ingredients. Fold the two together until mixed and all dry ingredients are well coated.
- Bake in preheated oven for about 20 minutes, stir, and continue baking until golden brown, about 25 minutes more. Set aside to cool slightly, about 20 minutes.
- Gently fold chocolate chips into the granola mixture, allowing the chocolate to coat the granola as it melts slightly. Cool completely before storing.

- Preheat the oven to 300º. Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats and nuts. In a measuring cup, whisk together the coconut oil, maple syrup, vanilla extract, cocoa powder, and sea salt. Pour over the granola mixture and stir until all of the dry ingredients are coated. Spread the granola in an even layer on a parchment-lined baking sheet and press down with a spatula or your hands.
- Bake for 30 to 45 minutes, rotating the pan halfway through to help the granola bake evenly. When it is browned and feels dry to the touch, remove it from the oven and sprinkle with chocolate chips. Let sit for about 2 minutes until chocolate chips have melted, and gently stir in the chocolate chips to coat the granola. If desired, sprinkle a bit of flaky sea salt on top. Let the granola cool completely.
- Store at room temperature in an airtight container.

- Preheat the oven to 300 degrees F. In the container of a blender, put in the oil, honey, syrup, peanut butter, apple juice, cinnamon, ginger and cloves. Mix well. Remove the mixture to a large mixing bowl and add the oats, bran, both types of pecans, almonds and cashews. Mix thoroughly.
- Spread the coconut on a jelly-roll pan and bake in the oven for 20 minutes. Stir once halfway through the cooking time. Let cool and reserve. Use two metal baking pans that measure 19"x12"x1 3/4" and line each with a piece of parchment paper. Divide the granola equally between the pans and toast for 1 hours, stirring occasionally, until the granola has an allover golden color. Remove from the oven and add the toasted coconut. - Cook pasta as directed.
- Heat olive oil over medium high heat in large frying pan. Add onion, garlic, chicken and Italian seasoning. Saute for 5 minutes, until chicken is no longer pink.

- Cover a large cookie sheet with parchment paper.
- Pulse oats in a food processor just until slightly ground. Transfer to a large bowl. Repeat with flax seeds, then almonds, and finally pumpkin seeds, pulsing just one ingredient at a time.
- Add puffed rice, milk powder, cranberries, protein powder, sesame seeds, chia seeds, and shredded coconut to the bowl; mix to combine.
- Mix almond butter, peanut butter, honey, coconut milk, vegetable oil, and vanilla together in a quart-sized bowl until well combined. Pour wet mixture into the dry mixture and stir until well blended. Spread thinly onto the prepared cookie sheet.

NIF'S GRANDPA'S BAKED GRANOLA
When I was a little girl, my Grandma would make batches of this for my Grandpa. It filled her house with a wonderful aroma and tasted terrific. She would store it in large glass Mason jars when it cooled. This is a half batch of what she used to make and my Sister makes this amount fresh every week. You can eat this as regular granola with milk or sprinkle on yogourt or ice cream. Thanks Grandma! Enjoy!

- Mix dry ingredients in a large bowl. Mix wet mixture ingredients together in a medium bowl. Add wet mixture to dry. Mix until small clusters form. If you live in a dry area, you may need to add more water - add 1/4 cup more at a time. Spread very evenly onto 2 cookie sheets.
- Bake for 30 - 35 minutes at 350°F Bake in 9-10 minute intervals, then mix on the pan. Make sure that it is evenly distributed so corner areas don't burn.
- You can enjoy some of it warm but cool completely to store in an airtight container.
