2 ounces uncooked linguine
1 tablespoon cornstarch
1 cup chicken broth
2 tablespoons white wine or additional chicken broth
1-1/2 teaspoons butter
1 garlic clove, minced
3/4 cup sliced fresh mushrooms
2 green onions, sliced
1/4 cup grated carrot
1/2 pound bay scallops
1-1/2 teaspoons minced fresh parsley
Lemon wedges, optional

Steps:

  • Cook linguine according to package directions; drain. Meanwhile, in a small bowl, mix cornstarch, broth and wine until smooth. In a nonstick skillet, heat butter over medium heat. Add garlic; cook and stir 1 minute. Add mushrooms, green onions and carrot; stir-fry 2-3 minutes or until vegetables are crisp-tender., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Reduce heat. Add scallops and parsley; cook until scallops are firm and opaque. Serve with linguine and, if desired, lemon wedges.

My favorite quick and easy recipe for tender scallops and pasta. Make it in minutes and it's dairy-free.

1 pound linguine ((OR other pasta such as fettucine, rotini or penne))
1 chicken bouillon cube ((OR 1 teaspoon salt))
2 tablespoons olive oil ((OR canola oil))
1 tablespoon garlic paste ((OR 1 teaspoon garlic powder))
½ teaspoon Italian seasoning
1 pound scallops ((rinsed and patted dry))
green onions, sliced, including tops ((OR diced onions))
mushrooms ((fresh Baby Bella caps are my favorite))
sweet peppers, any color, cut into thin strips
sun-dried tomatoes in olive oil
artichoke hearts ((in brine or marinated -- drained))
black olives ((Kalamata are best - drained))
shredded or shaved Parmesan for topping ((optional) )

Steps:

  • Cook pasta according to package directions, using the bouillon cube in place of salt.
  • At the same time, sauté the vegetables in the oil and garlic (if using olives, add them in the next step instead). When the onions, mushrooms and/or artichokes are just golden, add the olives and Italian seasoning, mix well and heat through.
  • Drain pasta and add to the skillet, tossing to mix. Turn the stove off and add the scallops to the pan, tossing to mix. Cover and let sit about 3 minutes for small scallops and 5 to 7 minutes for large ones, until the scallops are just opaque.
  • Serve immediately topped with a sprinkling of cheese (optional).

1/2 pound linguini
1 pound sea scallops
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, plus some for drizzling
3 tablespoons butter, divided
2 cloves garlic, chopped
1 large shallot, finely chopped
1/2 teaspoon crushed red pepper flakes
4 springs fresh thyme, leaves removed and chopped
1 cup dry white wine
1 cup seafood stock or clam juice
25 leaves fresh basil, shredded or torn
1/2 cup chopped flat-leaf parsley, a handful
1 lemon, zested and juiced
4 cups baby arugula or any mixed greens
1/2 pint grape or cherry tomatoes, cut in 1/2
Drizzle extra-virgin olive oil
Splash balsamic vinegar
Salt and freshly ground black pepper
Strawberries
Split of Champagne, perfect for 2

Steps:

  • Place a large pot of water over high heat and bring up to a boil for the pasta. Once at a boil add some salt and cook pasta to package directions. Hold off on starting the scallops until you drop your pasta.
  • Remove the mussel from the scallops then with a paper towel pat them dry and season them with salt and pepper.
  • Preheat a large skillet over medium high heat. Add 1 tablespoon of extra-virgin olive oil, about 1 turn around the pan and 2 tablespoons of the butter. When butter melts into oil, add scallops. Brown scallops 2 minutes on each side, then remove from pan and cover loosely with foil to keep warm.
  • Add an additional drizzle of olive oil to the skillet and add the garlic, shallots, crushed red pepper flakes, thyme, a little salt and pepper. Reduce heat a little and saute garlic and shallots 1 to 2 minutes, stirring constantly. Add wine to the pan and free up any pan drippings. Reduce wine 1 minute, then add seafood stock. Continue to cook for about 1 minute. Add the basil, parsley, lemon zest and juice and the remaining 1 tablespoon of butter, shake and stir the mixture until the butter has melted. Add the cooked linguini and cook for about 30 seconds, just to combine and let the pasta soak up the sauce.
  • Divide the pasta between 2 serving plates and top with reserved scallops.
  • For the side salad, in a bowl combine the arugula and tomatoes, drizzle with a little extra-virgin olive oil, a splash of balsamic vinegar, and season with salt and pepper. Toss to coat and serve.
  • And for dessert, rinse strawberries and arrange on a plate. Serve with a glass of Champagne.

1/2 pound squid ink linguine
1/2 pound snow peas
1/2 cup finely minced shallots
1/2 cup dry white wine
1 to 2 tablespoons heavy cream
1 to 2 sticks cold butter, cut into pieces
1 pinch saffron threads
Fresh lemon juice
Salt and white pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook until tender but still firm to the bite, about 10 minutes.
  • Make the saffron sauce. In a heavy saucepan combine shallots and white wine. Reduce to 2 tablespoons and then add saffron threads and 1 to 2 tablespoons of cream. Place pan over high heat and whisk in butter a piece at a time, adding the next piece before the last one has completely melted, stirring constantly. Do not allow mixture to boil. Add fresh lemon juice and salt and white pepper to taste.
  • Place scallops in a steamer over simmering water and steam for 2 to 3 minutes. Then add snow peas and steam 1 minute more. Transfer linguine to a plate, top with scallops and snow peas and top with sauce.

1 1/2 pounds fresh bay or sea scallops
1 bunch broccoli, about 3/4 pound
Salt to taste if desired
2 tomatoes, about 1 pound, peeled
1 pound fresh mushrooms
10 cups water
2 tablespoons olive oil
1/4 cup finely chopped shallots
1/4 to 1/2 teaspoon dried hot red pepper flakes
Freshly ground pepper to taste
3/4 cup heavy cream
9 ounces linguine, preferably fresh
2 tablespoons butter
1/4 cup coarsely chopped basil or finely chopped parsley

Steps:

  • If bay scallops are used, leave them whole. If sea scallops are used, cut them into quarters.
  • Cut the broccoli into florets. Peel the stems and cut each lengthwise into quarters. There should be about 4 cups of flowerets and stems. Drop the broccoli into boiling salted water and when the water returns to the boil cook exactly 1 minute. Drain.
  • Cut away the outer thick portion of the tomatoes and cut the pieces into lengthwise strips, each about 1/4-inch thick. There should be about 2 cups.
  • Chop the inner portion of the tomatoes with their seeds. There should be about 3/4 cup.
  • Cut the mushrooms into thin slices. There should be about 3 cups.
  • Heat the water to make it ready for the linguine when it is added.
  • Heat the olive oil in a skillet and add the mushrooms. Cook, stirring, about 3 minutes. Add the shallots and stir.
  • Add the chopped inner portion of tomatoes, the red pepper flakes, salt and pepper. Cook, stirring, about 1 minute and add the cream. Bring to the boil and add the scallops. Cook 30 seconds and add the parboiled broccoli pieces. Add the tomato strips and stir.
  • Meanwhile, when the water is boiling, add the linguine. If fresh pasta is used, it will require about 1 to 1 1/2 minutes of cooking time. If dried pasta is used, cook it to the desired degree of doneness, about 7 to 9 minutes.
  • Drain the pasta and return it to the kettle in which it cooked. Pour the scallop and broccoli sauce over the pasta. Add the butter and basil and blend gently but well. Serve immediately.

SCAMPI-STYLE SCALLOPS OVER LINGUINE

I love scallops, particularly bay scallops. This is a quick and easy way I've found to prepare them. It has become a regular at my house. If you prefer a thicker sauce, make a slurry out of a teaspoon water mixed with a teaspoon of cornstarch and stir into the boiling liquid to tighten it up. Serve with crusty bread for an easy weeknight meal.

1 (2 ounce) can anchovy fillets with oil
½ onion, minced
¾ cup chicken stock
¼ cup white wine

12 ounces bay scallops
salt and pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. I wanted to whip up some pasta for dinner tonight and this is what I came up with! I kept it low calorie and low fat but feel free to add some white wine or saute the veggies in butter or oil. If I wasn't watching what I am eating, I would probably do both! :) I used cream cheese to thicken up the sauce a bit and I really like the taste. FYI - it counts as 8 WW points. Enjoy!

3 ounces whole wheat linguine (I use Smart Pasta, white pasta with lots of fibre!)
2 teaspoons chicken bouillon (OXO)
olive oil (for spritzer)
1 cup mushroom, sliced
2 tablespoons shallots, finely chopped
2 tablespoons fat free cream cheese
3 1/2 ounces sea scallops (about 1 cup)
salt and pepper
2 tablespoons fresh parsley, chopped

Steps:

  • In a pot, bring water to a boil. Add chicken boullion and linguine and cook until al dente. Reserve water.
  • Meanwhile, spritz a frying pan with olive oil and set over medium heat. Add mushrooms and shallots and saute until mushrooms are softened, about 5 minutes. Add scallops and cream cheese and 1/4 cup of pasta water. The scallops only need to cook for 2 minutes or they become rubbery.
  • When pasta is finished cooking, add directly to the frying pan without rinsing. Stir until combined. Add more pasta water if you want more sauce.
  • Pour pasta onto a plate and top with parsley.
