PORTOBELLO "PIZZA" NICOISE

2 cloves garlic
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil
2 anchovy fillets, mashed with a fork
1/2 cup fresh basil leaves, finely chopped
1/3 cup Nicoise olives, pitted
1 tablespoon capers, drained
Pinch crushed red pepper flakes
1 red bell pepper
1 yellow bell pepper
2 cups grape tomatoes
4 large portobello mushrooms, stems removed
Canola oil, for brushing
6 ounces soft goat cheese

Steps:

  • Chop the garlic cloves, then sprinkle with some salt and smear to a paste, using the side of your knife blade. Transfer the garlic paste to a bowl and stir in the vinegar. Slowly whisk in the olive oil until emulsified. Fold in the anchovies, basil, olives, capers and pepper flakes. Taste and season with salt and pepper. Let sit at room temperature while you grill the vegetables.
  • Heat a grill to high. Brush the red and yellow peppers with oil and season with salt and pepper. Grill, covered, until charred on all sides and soft, 3 to 4 minutes per side. Remove the peppers to a bowl, cover tightly with plastic wrap and let steam for 15 minutes. Meanwhile, put the tomatoes in a grill basket and grill, covered, tossing occasionally, until charred in spots and softened, about 5 minutes. Set aside.
  • Brush the portobellos with canola oil and season on both sides with salt and pepper. Grill on both sides, covered, until a paring knife inserted in the center meets no resistance, 3 to 5 minutes per side. While the portobellos are cooking, peel, seed and thinly slice the peppers.
  • Turn the portobellos gill-side up and top each with some of the goat cheese. Grill, covered, until the cheese softens, about 2 minutes. Transfer to a platter and top each mushroom with some tomatoes and peppers. Spoon a generous amount of dressing over each "pizza" and serve warm.

Use ciabatta bread mix to make this easy pizza dough, then top with red pesto, green beans, melted brie, tangy anchovies and olives

500g pack ciabatta bread mix
4 tbsp red pesto
½ red onion , thinly sliced
50g green beans , trimmed and halved
100g brie , sliced into strips
6 anchovies
8 black pitted olives , halved
handful basil leaves

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put a large baking sheet, about 38 x 28cm, in the oven to heat up. Make up the bread mix following pack instructions. Roll out the dough on a large sheet of baking parchment to a rough rectangle of about 35 x 25cm.
  • Spread the pesto over the dough, then scatter on the red onions. In a chevron pattern, arrange the beans and cheese over the top. Add the anchovies along the middle and dot with the olives. Put the pizza, on the baking parchment, onto the hot baking sheet. Turn the oven down to 200C/180C fan/gas 6 and bake for 15-18 mins. Scatter with basil leaves just before serving.

Cornmeal, for dusting
1 cup pitted kalamata olives, rinsed and drained
2 tablespoons fresh lemon juice (from 1/2 a large lemon)
2 tablespoons extra-virgin olive oil
1 tablespoon capers, rinsed and drained
1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
2 anchovy fillets in oil, drained
1 clove garlic, peeled and coarsely chopped
All-purpose flour, for dusting
One 1-pound ball pizza dough, halved
1 large tomato, sliced into eight 1/4-inch-thick slices
Olive oil, for drizzling
One 5-ounce can tuna in olive oil, such as Flott
6 string beans, blanched and each cut into four 1-inch pieces (see Cook's Note)

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Dust a baking sheet with cornmeal. Set aside.
  • For the tapenade: Place the olives, lemon juice, oil, capers, rosemary, thyme, anchovies and garlic in a food processor. Blend until smooth.
  • On a lightly floured work surface, roll out the pizza dough into two 10-inch diameter circles, each about 1/4-inch thick. Using a 4-inch round cookie cutter, cut out 4 circles of dough from each and transfer to the prepared baking sheet. Using the tines of a fork, prick the dough all over. Spread about 1 tablespoon of the tapenade over each dough circle (any extra can be used to top fish or chicken, or mixed through pasta or used as a spread for sandwiches) and place a slice of tomato on top. Drizzle with olive oil and bake until the dough is crisp and golden, 15 to 20 minutes.
  • Place the tuna and the olive oil from the tuna can in a small bowl. Using a fork, lightly mash the tuna. Divide the tuna and spoon on top of the cooked dough. Arrange 3 pieces of green bean on top of the tuna and serve.

1 teaspoon active dry yeast
⅔ cup warm water (110 degrees F/45 degrees C)
2 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
1 (10 ounce) can tomato sauce
1 pound shredded mozzarella cheese
½ cup grated Romano cheese
¼ cup chopped fresh basil
1 tablespoon dried oregano
1 teaspoon red pepper flakes
2 tablespoons olive oil

Steps:

  • Sprinkle the yeast over the surface of the warm water in a large bowl. Let stand for 1 minute, then stir to dissolve. Mix in the flour, salt and olive oil. When the dough is too thick to stir, turn out onto a floured surface, and knead for 5 minutes. Knead in a little more flour if the dough is too sticky. Place into an oiled bowl, cover, and set aside in a warm place to rise until doubled in bulk.
  • Preheat the oven to 475 degrees F (245 degrees C). If using a pizza stone, preheat it in the oven as well, setting it on the lowest shelf.
  • When the dough has risen, flatten it out on a lightly floured surface. Roll or stretch out into a 12 inch circle, and place on a baking pan. If you are using a pizza stone, you may place it on a piece of parchment while preheating the stone in the oven.
  • Spread the tomato sauce evenly over the dough. Sprinkle with oregano, mozzarella cheese, basil, Romano cheese and red pepper flakes.
  • Bake for 12 to 15 minutes in the preheated oven, until the bottom of the crust is browned when you lift up the edge a little, and cheese is melted and bubbly. Cool for about 5 minutes before slicing and serving.

4 roma (plum) tomatoes, cut into 1/4-inch slices
1 medium green bell pepper, cut into 1/4-inch rings
1 large onion, thinly sliced
1/2 cup Italian dressing
1/2 loaf (1-pound size) French bread, cut horizontally in half
2 hard-cooked eggs, sliced
1/4 cup sliced ripe olives
1 cup finely shredded mozzarella cheese (4 ounces)

Steps:

  • Heat oven to 450°. Line jelly roll pan, 15 1/2x10 1/2x1 inch, with aluminum foil. Spread tomatoes, bell pepper and onion on foil. Brush both sides of vegetables with about half of the dressing. Bake uncovered 12 to 15 minutes or until onion is crisp-tender.
  • Reduce oven temperature to 375°. Remove vegetables and foil from pan. Place bread halves, cut sides up, in pan. Brush with remaining dressing. Top evenly with roasted vegetables, eggs, olives and cheese.
  • Bake 8 to 10 minutes or until cheese is melted. Cut into 2-inch slices.

1/3 recipe Basic Pizza Dough, or 3/4 pound store-bought dough
1 to 2 small potatoes, peeled and thinly sliced
1/4 cup black nicoise olives, pitted
Extra-virgin olive oil
Coarse salt
3 to 4 ounces jarred oilpacked tuna (about 1/2 jar)
2 ounces haricots verts, blanched and sliced in half on the bias
1 small red tomato, cut into thin wedges
1 handful baby arugula
1/4 small red onion, halved and thinly sliced
2 teaspoons red-wine vinegar

Steps:

  • Preheat oven to 475 degrees. Form dough (as directed in Basic Pizza Dough recipe) in a 9-by-13-inch rimmed baking sheet. Arrange half of potato slices on top half of dough, the rest on bottom half, covering entirely; press into dough. Add olives, pressing into dough. Brush with oil and sprinkle with salt.
  • Bake until cooked through and crust is golden on edges and bottom, about 18 minutes.
  • Using a metal spatula, slide pie onto a cutting board. Artfully arrange tuna and remaining vegetables on top; sprinkle with vinegar and drizzle with more oil. (Alternatively, toss these ingredients together in a bowl, then top pie with salad.) Slice into 6 pieces and serve.

½ pound new potatoes, quartered
¼ cup chopped fresh parsley
¼ cup pitted nicoise olives
½ onion, thinly sliced
1 (5 ounce) can tuna
⅓ pound fresh green beans - rinsed, trimmed and blanched
½ pound mixed salad greens
1 cup lemon vinaigrette
3 hard-cooked eggs, quartered
3 roma (plum) tomatoes, thinly sliced
1 tablespoon capers
4 anchovy filets

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain and cool.
  • In a large bowl, combine the potatoes, parsley, olives, onion, tuna and green beans. Refrigerate for 2 to 4 hours.
  • In large bowl, toss greens with vinaigrette and top with chilled potato mixture. Garnish with eggs, tomatoes, capers and anchovies.
