Lemon Icing Ingredients:
1 cup POWDERED SUGAR; Plus 1 Tablespoon.
2 TBS WHOLE MILK; I Used 2%.
1/2 tsp LEMON EXTRACT

Steps:

STARBUCKS LEMON LOAF This is a Top Secret recipe version of Starbucks Lemon loaf. Instructions: Combine flour, baking soda, baking powder and salt in a bowl. Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl. Pour wet ingredient into the dry ingredients and blend until smooth. Add oil and mix well. Pour batter into a well greased 9x5-inch loaf pan. Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean. Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed. When the loaf is cool, remove it from pan and frost the top with the icing. Ingredients

1 (18.25 ounce) package yellow cake mix
1 (4.3 ounce) package non-instant lemon pudding mix
½ cup vegetable oil
4 large eggs
8 ounces sour cream
½ cup milk
6 tablespoons freshly squeezed lemon juice
2 ½ cups confectioners' sugar
3 tablespoons freshly squeezed lemon juice, or more to taste

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans.
Combine cake mix, pudding mix, oil, eggs, sour cream, milk, and 6 tablespoons lemon juice into bowl of stand mixer; beat for 2 minutes and pour into prepared loaf pans.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes. Cool in the pans for 20 minutes before removing from pans to cool completely on a wire rack.
Whisk confectioners' sugar and 3 tablespoons lemon juice together in a bowl until smooth; spoon evenly over the loaves and let set before slicing, about 30 minutes.
