NO-FUSS PERFECT BAKED BROWN RICE



No-Fuss Perfect Baked Brown Rice image

Nothing exotic here except perfect brown rice every time. I was surprised that there was no recipe for this already. I hated making brown rice on the stove top, so I have used this for almost 20 years. Smells like popcorn when it is baking. Be creative! Add spices to match any meal. Make a double recipe and you have the beginnings for a breakfast frittata or stir fried rice.

1 ⅔ cups uncooked brown rice
½ teaspoon salt
2 ½ cups boiling water
2 teaspoons canola oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 baking dish.
  • Place rice in prepared baking dish; sprinkle salt and oil on top. Pour boiling water over rice. Cover baking dish tightly with double layer of aluminum foil and pinch edges to seal.
  • Bake in center of preheated oven until water is absorbed, about 1 hour.
  • Remove rice from oven, uncover, and fluff with fork.

4 cups milk
½ cup white sugar
½ cup long-grain white rice
1 tablespoon margarine
1 egg
2 tablespoons milk
½ teaspoon vanilla extract
½ teaspoon almond extract
⅛ teaspoon salt

Steps:

  • Stir 4 cups milk, white sugar, and rice together in a slow cooker until the sugar dissolves; add margarine.
  • Cook on High for 2 1/2 hours.
  • Beat egg, 2 tablespoons milk, vanilla extract, almond extract, and salt together in a bowl.
  • Temper the egg by stirring a small amount of the hot rice mixture into the egg mixture to gently warm the egg without cooking it; stir the egg mixture into the rice in the slow cooker.
  • Continue cooking on High until creamy, about 15 minute more.
  • Transfer pudding to a glass baking dish, cover with plastic wrap leaving two corners uncovered to vent, and refrigerate until chilled completely, at least 1 hour.

Light and fluffy rice every time. I make up a batch and freeze the rest in small freezer bags. To re-heat, add about 1T of water and microwave until fully heated through (about 2 minutes for 1 cup)

vegetable oil cooking spray
2 cups long grain brown rice
1 tablespoon butter (or vegetable oil)
1/2 teaspoon salt
3 cups boiling water

Steps:

  • Coat slow cooker with vegetable oil spray. Add rice, butter and salt to prepared slow cooker then stir in boiling water. Cover and cook unil rice is tender, about 2 hours on high.
  • Fluff rice with fork and season with salt and pepper to taste. Drape towel over the top of slow cooker, cover with lid and let sit for 5 minutes before serving.
  • Note: After the rice is cooked, this dish does not hold well on warm setting.
