NOT-TOO-SWEET SWEET POTATO SOUP
This soup is easy, healthy, and turned out delicious. This would be very good served with a side salad or some chips and dip. It can be served as the main course or as an appetizer in little shot glasses. The whole family will enjoy!

Steps:
- Stir chicken broth, chickpeas, sweet potatoes, butternut squash, onion, ginger, garlic, nutmeg, and cayenne pepper together in a large pot. Bring to boil and cook over medium-high heat for 20 minutes. Reduce heat to medium low and cook until squash and potatoes are soft and soup flavors have blended, about 3 hours.
- Blend soup using an immersion blender, or in batches in a food processor, until smooth.

Steps:
- Roast Yams/Sweet potatoes @ 375 for 45 minute.
- Peel Bananas and quarter.
- Roast Bananas in greased pan @ 375 10 minute.
- Scoop out Yams from skins.
- add Bananas to Yams/Sweet Potatoes.
- add remaining ingredients (not zest).
- whip Yam/Potato mixture until creamy.
- Grate Zest of lime over top of mixture.

NOT TOO SWEET SWEET POTATOES
I needed a good sweet potato recipe for Thanksgiving that satisfied the marshmallow topping brigade as well as those of us who didn't want something quite so sweet. So I played around with a variety of recipes and came up with this. It's definitely sweet, but not too sweet. And no marshmallow in sight!

Steps:
- Heat oven to 350°F.
- Peel sweet potatoes and chop into one inch cubes.
- Melt butter and honey together in the microwave or on the stovetop.
- Stir spices, salt and lemon juice into butter mixture.
- Place sweet potatoes in a casserole dish.
- Pour butter mixture over sweet potatoes and stir to coat well.
- Bake for about 1 hour, until sweet potatoes are soft. Stirring occasionally.
- Once sweet potatoes are done, sprinkle almonds over the top before serving.

Steps:
- In a large pot, boil sweet potatoes and carrots until very soft. Drain, peel and cube.
- Saute onions in oil until soft.
- Put sweet potatoes, onion, carrots and spices in food processor, and puree until slightly chunky.
- Add cream and milk until desired consistency is reached.
- If desired, simmer over low heat for 5 minutes.
- Garnish with bell pepper and parsley.

If desired, garnish each serving with a dollop of sour cream, some chopped cilantro, and a few sweet, spicy nuts. A Thanksgiving favorite that's a kid favorite year-round. Freezes well!

- Heat olive oil in a large soup pot over medium heat; cook and stir shallots in the hot oil until soft, about 3 minutes. Stir apples, ginger, zest from 1 lime, red pepper flakes, and cayenne pepper into the pot. Reserve lime juice. Cook and stir mixture until apples are very soft, about 15 minutes.
- Pour chicken broth into pot; add sweet potatoes and salt. Cover and bring to a boil. Reduce heat to low and simmer for 10 minutes. Puree soup with an immersion blender until smooth. Stir reserved lime juice into soup. Garnish with lime wedges to serve.
