A delicious and satisfying gluten-free, vegan-friendly oat bran muffin.

1 1/2 cup gluten-free oats
1 cup gluten-free oat bran
1/2 cup brown rice flour
1/2 cup chickpea flour
1/3 cup coconut sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1 tsp cinnamon
1/4 tsp ground ginger
1 cup applesauce
1/2 cup water
1/4 cup maple syrup
1 Tbsp lemon juice
1 tsp lemon zest

Steps:

  • Preheat oven to 350 degrees and line muffin tin with unbleached liners.
  • Mix dry ingredients in a mixing bowl.
  • Mix wet ingredients in separate bowl or blender.
  • Pour wet ingredients into dry and mix just until combined.
  • Dollop into muffin tin and bake for 20-25 minutes (until inserted toothpick comes out clean).

These Oat Bran Muffins are great with or without added sweeteners. The recipe is very forgiving and super filling so you aren't tempted to overeat!

2 1/2 cups uncooked oat bran
2 teaspoons baking powder
1-2 teaspoons salt ((I use 2 teaspoons but some think that's too much. Start with 1 to see how you like it))
2 teaspoons cinnamon ((omit for unsweetened version))
2 eggs or equivalent substitute
3/4 cup filtered water
2/3 cup vegetable glycerine ((omit for unsweetened version--see Recipe Notes for other sweetener options))
2 teaspoons vanilla extract ((omit for unsweetened version))
4 tablespoons coconut oil
1/4 cup nuts ((optional))

Steps:

  • Preheat oven to 425 °F.
  • Mix dry ingredients together and set aside.
  • Mix wet ingredients in a separate bowl.
  • Add wet ingredients to dry ingredients.
  • Let the batter soak overnight or for 24 hours if desired, for better digestibility.
  • Add nuts if using.
  • Put into greased muffin tins (mini or regular size) or for a simpler option (my favorite....cleaning muffin tins is one of my least favorite jobs in the kitchen :-)) simply place on a prepared cookie sheet or baking stone.
  • Bake for 10-20 minutes until the middles are pretty well set.

These muffins are fiber-filled with oat bran and flaxseed leaving you feeling full for longer! A simple recipe for on-the-go mornings, paired perfectly with a chai latte.

1 cup oat flour (see note)
1 cup oat bran cereal
2 eggs
2 ripe bananas (mashed)
2 tbsp ground flaxseed
1/3 cup coconut oil (melted )
1 tbsp coconut oil (melted, for lining muffin pan)
3/4 cup Califia Toasted Coconut AlmondMilk (or milk replacement of choice)
1/4 cup Swerve granular sugar replacement (or can use maple syrup)
1 tsp vanilla extract
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp sea salt
1/2 cup shredded carrots
1/4 cup raisins
1/2 cup fresh blueberries
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 375°F
  • Use your fingers to coat the muffin tin with melted coconut oil
  • Combine oat flour, oat bran, flaxseed, cinnamon, baking soda and salt in a large bowl.
  • Mash bananas in a bowl. Add egg, coconut oil, almond milk, Swerve granular sugar, vanilla extract and use a hand mixer or whisk to mix well.
  • Pour wet ingredients into the bowl with the dry ingredients and mix with a spatula. Be careful not to over mix.
  • Add shredded carrots, raisins, blueberries, and chopped walnuts (optional). Mix with a spatula.
  • Use a ladle or spoon to fill each muffin cup to the top.
  • Bake for 25 minutes, until the top is golden brown and a toothpick comes out clean.
  • Remove and let cool for 10 minutes before serving!

This is a family recipe that I reworked after going gluten free. By soaking the oatmeal overnight, it makes prep in the morning a breeze and everyone loves these soft muffins warm out of the oven!

1 cup gluten-free oats
1 cup buttermilk
1 cup gluten-free all-purpose baking flour
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon xanthan gum
½ cup brown sugar
⅓ cup shortening
1 egg

Steps:

  • Soak oats and buttermilk in a bowl for at least 1 hour, to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin.
  • Combine flour, baking powder, baking soda, and xanthan gum in a bowl.
  • Combine brown sugar, shortening, and egg in a second bowl; beat with an electric mixer until smooth and creamy. Add flour mixture and soaked oats and stir until combined. Fill the prepared muffin cups 2/3 full with batter.
  • Bake in the preheated oven until tops spring back when lightly pressed, 15 to 20 minutes.

Banana Oat Bran Muffins With No Added Sugar image

Yummy muffins with only fruit as the sweetener. Also, no flour only oat bran. This is the second recipe I have tried from "Sweet & Natural; Desserts without sugar, honey, molasses or artificial sweeteners" by Janet Warrington. This is definitely not a cupcake, but a good solid muffin with good nutrition. My kids liked them with jelly or a little spray butter (Hey, we can't eat perfectly ALL the time!). Dense and moist these are a nice breakfast or snack. I used frozen banana because I have a ton of bananas in my freezer, plus I think it mashes more easily. But feel free to use what you have!

1/8 teaspoon nutmeg
1 cup mashed banana
1/2 cup skim milk
2 egg whites
2 tablespoons oil
1/2 cup raisins

Steps:

  • Preheat the oven to 425°F Spray your muffin cups with cooking spray.
  • Combine the dry ingredients in 1 bowl.
  • In another mix the banana, the milk, egg whites, and oil together until they are well combined.
  • Add the wet to the dry and mix until it is combined. Then add the raisins and combine.
  • Put them into the muffin tins.
  • Bake for 18-25 minutes or until golden.
