Steps:
- 1. Bring 1 1/2 cups of water and 1/2 cup of butter to a boil in a saucepan. 2. Take off the heat and add oats to the boiling water. Let stand for 20 minutes. 3. Preheat oven to 350 degrees. 4. In a large mixing bowl, combine 1 cup of sugar, 1 cup of brown sugar, eggs, flour, baking soda, cinnamon, and vanilla. 5. Add the oat mixture to the ingredients in the large mixing bowl and mix well. 6. Pour into an ungreased 10" x 15" jelly roll pan. Bake at 350 degrees for 20 minutes. 7. For the frosting, bring 1/2 cup of butter, 1 cup of brown sugar and 1/4 cup of milk to a boil in a saucepan. 8. Remove from heat and add 2 cups of powdered sugar, mixing well. 9. Spread on warm bars.

BROWN SUGAR OATMEAL CREAM PIES
I loved getting oatmeal cream pies in my lunchbox, and my love for them has not changed as I've gotten older. This is my take on my classic childhood favorite-including that fluffy marshmallow cream filling instead.

Steps:
- Make the cookies: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Beat the butter and sugars together in a bowl with an electric mixer at medium speed until light and fluffy. Add the eggs, beating just until the yellow disappears. Beat in the vanilla.
- Pulse the oats and coconut flakes in a food processor until finely minced. Transfer to a medium bowl. Stir in the flour, baking soda, cinnamon, ginger and salt. Add to the butter mixture, beating until combined.
- Drop the dough into twenty-four 1 1/2-inch balls on the prepared baking sheets, spacing them about 3 inches apart. Bake until the edges just begin to brown, 13 to 15 minutes. Let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
- Meanwhile, make the marshmallow filling: Beat the marshmallow creme and butter in a bowl with an electric mixer at medium speed until fluffy. Beat in the extracts, powdered sugar and salt until combined. Transfer the filling to a piping bag fitted with a round tip or large zip-top bag and cut off the corner.
- To assemble the oatmeal cream pies, pipe the marshmallow filling onto the flat sides of 12 cookies. Top with the remaining cookies, flat-sides down.
OATMEAL PECAN BARS
These chewy bars took first place in the bar cookie division at our country fair in 2001. Topping them with a coconut-pecan frosting is a tasty twist.

- In a large bowl, combine the flour, oats, brown sugar and baking soda. Cut in butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumb mixture into a greased 15x10x1-in. baking pan. Bake at 350° for 8-10 minutes or until set., In a microwave-safe bowl, heat frosting for 30-45 seconds or until softened; stir well. Spread over crust. Sprinkle with chocolate chips and pecans. Top with reserved crumb mixture. , Bake for 14-18 minutes or until frosting is bubbly and top is golden brown. Cool completely on a wire rack; cut into squares.

OATMEAL BANANA CHUNK BARS WITH CARAMEL ICING
I made up this recipe a few months ago based on a couple other tried and true recipes. The bars are dense and chewy, like a good blondie. The caramel frosting isn't like gooey caramel, but rather it is like pralines.

Steps:
- Preheat oven to 350.
- Grease a 13x9 baking pan with nonstick cooking spray.
- In a medium bowl, combine flour, baking powder, baking soda, and salt.
- Set aside.
- Cream the butter and brown sugar.
- Add the eggs, one at a time, and beat until blended.
- Add the flour mixture slowly, mixing just until blended.
- Mix in the oats on low speed.
- Gently stir in the banana by hand until just combined.
- Spread batter in prepared pan and bake for 25 minutes.
- Put on a wire rack to cool.
- While the bars are cooling, make caramel icing.
- Put ¼ cup butter and ½ cup dark brown sugar in a medium saucepan and cook and stir over medium heat until mixture comes to a boil.
- Add milk and bring the mixture back to a boil.
- Remove from heat and add confectioners' sugar.
- Stir vigorously until the mixture is smooth.
- While it is still warm pour it over the warm bars and spread to cover evenly.
- Work quickly so the icing doesn't harden.
- Immediately sprinkle chopped pecans evenly over the icing.
- When completely cool, cut into 18 bars.

Steps:
- Preheat the oven to 350 degrees.
- Sift together the flour and these dry ingredients: soda through cloves. Set aside.
- Using an electric mixer, cream together the butter, shortening and sugar until fluffy. Add the eggs and beat until mixture is light in color, then add the buttermilk.
- Stir the dry ingredients ito the butter mixture. Fold in the oats, raisins, walnuts and vanilla, blending well.
- Drop by rounded teaspoons onto greased cookie sheets. Bake for 12 to15 minutes.
- Meanwhile, make the icing: In a small saucepan, heat the butter over medium heat until golden brown, stirring occasionally. Remove from heat; stir in the powdered sugar and vanilla. Stir in enough water to make an icing of drizzling consistency and drizzle over warm cookies.
