EDAMAME RICE
A seasoned rice dish with edamame, ochazuke wakame (a type of furikake), and nametake (seasoned mushrooms). Flavorful and delicious! Eat plain as a simple meal, or replace your regular bowl of rice with this Edamame Rice ^_^

Steps:
- Prepare the rice. Wash the rice several times, until the water runs almost clear.
- Cook the rice. (Use the same amount of water and same standard setting and you normally use to prepare rice in the rice cooker.)
- Once the rice is finished cooking, pour in the ochazuke wakame. Use a rice paddle and gently mix.
- Add the nametake. Mix again.
- Add the cooked edamame. Mix again until everything is evenly combined.
- Ready to eat!

- Directions: Rub salmon with garlic, ginger and soy sauce. Season with salt and pepper. Bake at 350° for 15-20 minutes. Baking time will vary depending on desired temperature and thickness of filet. Prepare rice and edamame as instructed on package. In a separate large pot, simmer broth, water, garlic, ginger, soy sauce and Sriracha sauce until hot. About 10 minutes. Add the tea bags and let steep. About 5-8 minutes. Remove tea bags and stir. In a shallow bowl, layer about 1/2 cup of brown rice, 1/4 cup of edamame and top with approximately 4 ounces of cooked salmon. Ladle about 1.5 cups of broth over the salmon. Top with chopped scallions, cilantro and more Sriracha if you want to spice it up. Notes: Like I noted above, this is easily adaptable. A shrimp or tofu version would be very similar. Try adding in spinach or mushrooms. Jon says "no," but you can if you want to. Sriracha is a thai hot sauce and can be found in most grocery stores. Be warned - it's hot. I used 6 tea bags, because I really enjoy the taste of green tea. The tea flavor is easily hidden behind the garlic and ginger, so I'd recommend 6 bags if you want to taste the tea. We really were that sick - don't worry you can't catch it over the internet. We ate this almost every night without the salmon. It really did cure us - or maybe it was the two weeks of antibiotics.

- Scoop ½ cup rice onto a clean surface. Dampen your hands in a small bowl of salted water (this will prevent the rice from sticking to them and season them slightly). Firmly compress rice into a tight ball, then press down on surface to gently flatten to a 2½–3" round. Repeat with remaining rice to form 4 rice cakes.
- Heat oil in a large skillet, preferably nonstick, over medium-high. Brush one side of rice cakes with soy sauce. Cook, soy sauce side down, until edges are golden brown and crisp, 5–6 minutes. Brush tops of rice cakes with soy sauce. Turn and cook remaining side until golden brown and crisp, another 5–6 minutes. Remove from heat.
- Meanwhile, pour water into a large saucepan to a depth of 2". Bring to a boil, then reduce heat so water is at a gentle simmer. Crack an egg into a small bowl, then gently slide egg into simmering water. Repeat with remaining eggs, waiting until whites of eggs in water are opaque before adding the next (about 30 seconds apart). Poach, shaping with a slotted spoon if needed, until whites are set but yolks are still runny, about 3 minutes. Using slotted spoon, transfer eggs to paper towels as they are done.
- Add spinach to saucepan and cook until just wilted, 20–30 seconds. Drain; let cool slightly, then squeeze out excess water with your hands.

- Rinse rice until water runs clear. Cook in a rice cooker or add rice to a saucepan, cover by 2cm with water, cover and bring to the boil over high heat. Reduce heat to low and cook (12 minutes), then set aside to steam (5 minutes).
- Place dashi in a saucepan and bring to a simmer over high heat. Add tea and set aside to steep for 2 minutes, then strain.
- To serve, divide rice into bowls, top with trout and pour in hot dashi. Add cabbage and furikake, and season with shoyu to taste.
