Classic Deviled Eggs can be so simple to make if you know a few tricks. These are a cheap and easy appetizer to share.

1/4 cup mayonnaise
1/2 tbsp mustard
salt & pepper
paprika

Steps:

  • Hard boil eggs
  • Peel and slice eggs lengthwise
  • Scoop out the yolk
  • Crumble yolks in a medium bowl and combine with mayonnaise, mustard, salt, and pepper
  • Use a ziptop bag or pastry bag to pipe yolk into egg whites
  • Garnish with paprika if desired

15 jumbo eggs
¾ cup cooked and chopped bacon, divided
⅓ cup minced onion
3 tablespoons dill pickle relish
3 tablespoons mayonnaise
2 teaspoons prepared yellow mustard
2 teaspoons bacon drippings
1 pinch salt and ground black pepper
1 teaspoon paprika

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil; remove from heat and let eggs stand in hot water for 15 minutes. Remove eggs from hot water. Cool under cold running water; peel eggs. Slice each egg in half lengthwise. Place yolks in a small bowl.
  • Mix 1/2 cup bacon, onion, dill pickle relish, mayonnaise, mustard, and bacon grease with the egg yolks using a fork; keep the yolks chunky. Stir in salt and black pepper.
  • Scoop yolk mixture into 24 of the egg white halves. Sprinkle paprika and remaining 1/4 cup bacon on top.

It comes from the Durbin Inn, a well-known restaurant in Rushville, Indiana from the 1920s until it closed in the late '70s. 1/4 cup low-fat (1 percent) creamy cottage cheese, drained

Dash hot pepper sauce
Paprika, for sprinkling
Parsley sprigs, for garnish

Steps:

  • Place 4 of the egg yolks in a food processor or blender (discard the other 4) with the mayonnaise, cottage cheese, curry, mustard and pepper sauce. Process until smooth.
  • Spoon the filling into a pastry bag with star tip. Pipe the filling into the egg whites, then sprinkle with the paprika. Garnish with the parsley. Refrigerate, covered, until ready to serve.

We have chickens and deviled eggs are becoming a weekly treat for us. I have played around with this recipe for a while and think I have it perfect now. If you don't like a deviled egg that is slightly sweet this may not be for you. I have to say the idea of powdered sugar comes from a cooking blog "Measured by the Heart" in her recipe she suggested powdered sugar will blend better than granulated sugar and I agree. I adapted my own recipe but like the powdered sugar idea. Credit for the heavy cream comes from the Pioneer Woman, works nicely to make a creamy filling.

1 tablespoon sweet pickle relish
1 tablespoon honey mustard
2 tablespoons Miracle Whip
1 tablespoon powdered sugar
1/8 teaspoon salt

1 tablespoon heavy cream (optional)

Steps:

  • Boil eggs in a large pot using the method you choose. Peel and slice eggs in half.
  • Remove the yolks from the eggs and place them in a bowl. Mash the yolks with a fork or in a food processor. Add all of the ingredients. If necessary add a little more Miracle Whip and mustard to make the mixture creamy.
  • Spoon the filling into the egg whites. I like to use two spoons to do this. Or you can use a piping bag.
  • Top with a tiny sprinkle of paprika if desired.
