Whole wheat and rolled oats lend lots of fiber to these tasty cookies, along with a little-known ingredient, okara. Okara is soybean meal, a natural by-product of tofu. It is usually available in Asian markets that sell fresh tofu and health food stores. 1 cup okara (soybean meal)
1/2 cup whole wheat flour
1 1/2 cups rolled oats
3/4 teaspoon baking soda
1/4 cup vegetable oil
1/2 cup honey
1 teaspoon pure vanilla extract
1/4 cup carob chips (may substitute chocolate chips)
1/4 cup sunflower seeds, pistachios or 1/4 cup chopped walnuts

Steps:

  • Preheat oven to 350°F Line cookie sheets with Silpat baking liners or parchment paper.
  • Stir together okara, whole wheat flour, rolled oats, and baking soda in a medium bowl.
  • In a small bowl, whisk together vegetable oil, honey, and vanilla extract.
  • Add wet ingredients to the dry ingredients, stirring with a large fork until combined. Fold in carob chips or chocolate chips, along with sunflower seeds or nuts.
  • Drop by the teaspoonful on to prepared cookie sheets. Flatten slightly with the back of an oiled fork to about 1/2-inch thickness.
  • Bake 12 to 15 minutes.

1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup vegan butter
1/2 cup sugar
1 1/2 teaspoons Ener-G Egg Substitute
2 tablespoons water
1/2 teaspoon vanilla
3/4 cup carob chips

Steps:

  • Preheat oven to 375 degrees.
  • In a medium sized bowl, sift together flour, baking soda, and salt. Set aside.
  • In another bowl combine the vegan butter, sugar, vanilla, egg replacer (mixed with the water beforehand. Mix well.
  • Add the dry ingredients. Mix.
  • Add carob chips (and nuts if desired).
  • Drop teaspoonfulls on a greased cookie sheet and bake 8-10 min(i like my cookies more chewy, so about 8 minutes works great.
  • Cool on a rack and try not to eat them all up too fast!

1 cup whole grain wheat flour
1 teaspoon baking soda
1/3 cup brown sugar
1/3 cup rolled oats
1 1/2 tablespoons carob powder
1/2 cup vanilla-flavored soymilk
1/2 tablespoon vanilla extract
2 tablespoons chopped almonds
1/3 cup vegetable oil
1 dash cinnamon
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees (F).
  • Mix all of the ingredients together in a bowl.
  • On a greased cookie sheet, place balls of dough spaced about 2" apart.
  • Bake for 8 minutes, then check on them. How long they take to bake will depend on your oven as well as how large you made each cookie. Mine usually take between 10 and tweleve minutes to bake.

1 cup soymilk or 1 cup water
1 teaspoon vanilla
1/2 teaspoon salt
2 cups old fashioned oats
1 cup carob chips
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Place banana, dates, soy milk or water, vanilla, & salt in blender & mix until smooth.
  • Put oats, carob chips & walnuts in a large bowl & mix.
  • Add blended mixture to bowl & mix well.
  • Form into cookies.
  • Bake for 25-30 minutes.
