VINTAGE LEMONADE
In the 1800's this is how people made lemonade--you can do it too! It's not that difficult, and tastes wonderful!

Steps:
- Peel the rinds from the 5 lemons and cut them into 1/2 inch slices. Set the lemons aside.
- Place the rinds in a bowl and sprinkle the sugar over them. Let this stand for about one hour, so that the sugar begins to soak up the oils from the lemons.
- Bring water to a boil in a covered saucepan and then pour the hot water over the sugared lemon rinds. Allow this mixture to cool for 20 minutes and then remove the rinds.
- Squeeze the lemons into another bowl. Pour the juice through a strainer into the sugar mixture. Stir well, pour into pitcher and pop it in the fridge! Serve with ice cubes.

Ah, the taste of summer. This classic lemonade recipe is the one my mom used to make for me when I was little. It's the perfect combination of sweet and tart! When using a clear pitcher, adding a few of the juiced lemon halves makes it look prettier.

- Juice the lemons to make 1 cup of juice. To make your labor easier, FIRMLY roll the lemons between your hand and counter top before cutting in half and juicing.
- In a gallon pitcher combine 1 cup lemon juice, 1 cup sugar, and 6 cups cold water. Stir. Adjust water to taste. Chill and serve over ice.

OLD FASHIONED LEMON BALM AND LEMON VERBENA LEMONADE SYRUP
There are numerous recipes for lemon balm lemonade, and I have an old English recipe myself that I make regularly - but, if you find that it is sometimes a little "light" on the lemon flavour, add some lemon verbena for a super charged lemon kick! I have made this several times now and it is so refreshing and zingy, perfect for a hot summer's day. Once the syrup is made, it lasts for several weeks in the fridge, or several months in a cool dark place if you add the optional citric and tartaric acid. Serve with cold sparkling water and slices of lemon and a sprig of either lemon balm or lemon verbena.

- Place the sugar, lemon halves and water into a saucepan and heat until the sugar has completely dissolved.
- Add the lemon verbena and lemon balm leaves and boil for 2 minutes; leave to cool. Add the citric or tartaric acid if using at this stage. Allow to cool and then cover and allow to infuse for 24 to 48 hours, depending on what strength you require. (I have left this for 3 days sometimes too, for a real lemon zing.).
- Sieve through a fine mesh or colander, discarding the lemon halves and the herb leaves - then pour into clean and sterile bottle/s; seal tightly and store in a cool dark place for several months or in the fridge for several weeks.
- To use: 1 part syrup to 4 parts water or sparkling water, to taste - add more for a stronger lemon flavour or less for a more delicate flavour. Add ice, a slice of lemon and some lemon balm or lemon verbena leaves as a garnish.
OLD-FASHIONED LEMON BALM LEMONADE
An old-fashioned, simple lemonade but with the extra flavor of lemon balm! Enjoyed by children and adults alike. Serve well-chilled.

- Scrub the lemons well. Peel the rind thinly, avoiding the white pithe, and set aside the lemons.
- Place the lemon rind, lemon balm leaves, and the sugar into a small heat-proof pitcher. Pour the boiling water into the pitcher and stir well, crushing the lemon balm leaves to release their flavor. Leave mixture to infuse for about 15 minutes.
- Now, cut the lemons in half and squeeze out the juice. Strain juice into a large glass pitcher, add a few fresh sprigs of lemon balm, and add the cooled, strained syrup. Top up with water or half-water half-ice, and chill until needed.

OLD-FASHIONED LEMON BALM LEMONADE

- 1. Peel the lemons and place rinds in a heatproof jug. Add the sugar. Pour on enough boiling water to dissolve the sugar.2. Add half the lemon balm leaves and leave to infuse until cold.3. When cool, squeeze the juice from the lemons and add to the syrup. Pour in the cold water to taste, adjusting the sugar or lemon juice. Chill for about two hours.4. Just before serving, remove the lemon balm and lemon peel. Add some fresh sprigs and ice cubes.
OLD FASHIONED LEMON SAUCE
This recipe is so old that the instructions say to place the ingredients in a "tin basin" and cook! So many recipes that I have have little or no instructions, just a list of ingredients. Sometimes the list of ingedients is vague also. Example: butter the size of an egg for an amount! This sauce goes great on gingerbread!

- Cream together the sugar and butter in a small pan over low heat. Add the slightly beaten egg and blend. Add the juice from 1 lemon and the zest from the lemon. Add the boiling water slowly and stir over the low heat till mixture thickens.

- To make the sugar syrup, in a medium saucepan combine the zest, sugar and water.
- Bring to a boil over medium heat, stirring to dissolve the sugar.
- Remove from the heat, cover and let steep for 15 minutes.
- Transfer the syrup to a 2-quart pitcher.
- Let cool.
- Add the lemon juice, chopped lemon rinds and cold water.
- Stir well to combine.
- Chill until very cold.
- Serve over ice.
