1 cup granulated sugar
1/2 cup margarine
1 cup evaporated milk
1 teaspoon vanilla flavoring
3 cups pecan halves

Steps:

  • Combine sugar, margarine and milk.
  • Cook to a soft ball stage.
  • (when a little placed in a cup of cold water forms a soft ball) Remove from heat and stir in vanilla and pecans.
  • Stir until it begins to thicken (doesn't take long, will have to work fast).
  • Drop by tablespoons on waxed paper or buttered dish.
  • Ready to eat when cooled.
  • Store remainder in airtight container.

Planning to try this for the holidays. I've never made pralines before! Cook time includes optional pecan-roasting minutes. Prep time is an approximation of how long it will take to get all your ingredients in the pot, and on their way to soft-ball stage.

1 1/2 cups sugar
3/4 cup light brown sugar (packed)
1/2 cup milk
3/8 cup butter
1 1/2 cups pecans (roasted) (optional)
1 teaspoon vanilla

Steps:

  • Combine all ingredients and bring to soft ball stage (230 to 240 degrees), stirring constantly.
  • Remove from heat.
  • Stir until mixture thickens, becomes creamy and cloudy, and pecans stay suspended in mixture.
  • Spoon out on aluminum foil or parchment paper.
  • Makes approximately fifteen to twenty pralines, depending on size.
  • Note: To roast pecans, bake them on a sheet pan at 275 degrees for 20 to 25 minutes until slightly brown.

  • Bring sugar, cream, corn syrup, and salt to boil in a medium-size saucepan over medium heat. Stir the mixture constantly.
  • Continue cooking and stirring the sugar mixture until a candy thermometer reaches 236 degrees F or it reaches the soft ball stage. This will take an additional 6-8 minutes.
  • Remove the mixture from the heat and add the butter. Do not stir. Let it stand until it cools a bit and reaches 150 degrees F. This only takes a few minutes.
  • Add the pecans and vanilla and constantly stir until the candy begins to lose its gloss and thicken just a bit.
