TRUST ME! You will love this!! GIve it a chance. In Corsicana TX there is a restaurant called Old Mexican Inn and this is served with Tortilla Chips and I crave it all the time since I've moved to Tennessee. I've even called them and asked for the recipe. They laugh and hang up because they are called so often. Once I saw how much mayo was in it I was kinda worried at how much I had consumed lol. It is delicious. Serve it at partys and tell them it's a family secret so they will eat it and love it. You will not regret this recipe!!!!

Ingredients

2 cups mayonnaise (I use Kraft Real Mayonaise)
3 teaspoons vinegar
3 teaspoons garlic powder
5 teaspoons paprika
1 teaspoon lemon juice

Steps:

Mix ingredients and refrigerate for 1 hour before eating. Eat with Tortilla chips or Scoops!

This is a recipe I developed to copy a tasty dip that came from our favorite local mexican restaurant when my husband and I were in college at Michigan State University. It's pretty close to the real thing! A very simple and easy dip to serve with tortilla chips and salsa.

1 (24 ounce) container cottage cheese
1/2 cup sour cream
1/2 cup monterey jack cheese, grated
2 green onions, sliced thinly
2 -3 cloves fresh garlic, minced
1/4 teaspoon cumin (optional)
black pepper

Steps:

Mix all above ingredients together in a medium sized bowl.
For best results, use regular cottage cheese and sour cream, rather than reduced fat.
This will help form a thicker dip.

If the tomatillos still have the papery husky remove it and wash them well. Roughly chop them and put them in a food processor or blender.
Process the 3 tomatillos until they are a puree. Measure out enough puree to 1 c. Discard the rest. It should be very close to 1 cup.
Remove the avocados from their skins and place them in the bowl of the food processor or blender. Pulse just until smooth along with the tomatillo puree, salt, garlic powder, onion powder, 1 T plain white vinegar, 1 T fresh lemon juice, 2 T. water, and 1 T. oil. Make sure not to pulse it too long or it will become mousse-like from whipping so much air into the avocados!
Serve as a salad dressing on top of the thinly shredded iceberg lettuce. Top with a sprinkling of diced tomato.
