4 red potatoes medium, peeled, diced and cooked
1/4 cup butter or margarine, softened
2 tablespoons onions minced
6 hot dogs sliced
1 (10 1/2-ounce) can cream of mushroom soup condensed
1 cup peas thawed
1/2 cup milk
1 tablespoon mustard prepared
1/3 cup sharp cheddar cheese shredded

Steps:

  • Preheat oven to 350°.In an ungreased 2-quart casserole, toss cooked potatoes, butter or margarine, and onion. In a medium bowl, mix frankfurters, soup, peas, milk and mustard. Pour over potato mixture.Bake for 40 minutes. Top with cheese. Bake 5 minutes longer or until cheese melts.Note: Red potatoes keep their shape while cooking better than white potatoes.

2 -3 chicken breasts
2 cups chopped celery
1 cup chopped carrot
1/2 cup onion
2 -3 garlic cloves, minced
1 large bay leaf
8 cups water or 8 cups chicken broth
1 lb dried egg noodles
6 ounces monterey jack cheese, shredded (optional)
salt and pepper

Steps:

  • Boil chicken, onions, garlic and bay leaf in broth or water until chicken can be pulled away from the bones; I prefer broth for a richer taste.
  • Remove chicken and cool until you can handle it.
  • Add the celery and carrots to the broth.
  • Cut cooled chicken into bite size pieces.
  • Return chicken to the broth.
  • Simmer until veggies are almost tender.
  • Add pasta to the chicken and veggies.
  • Simmer until pasta and veggies are cooked.
  • Add salt and pepper to taste.
  • Sprinkle cheese on top if desired and stir.

4 hard-boiled eggs, shelled (obviously)
2 tablespoons mayonnaise
1/8 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/8 teaspoon paprika
2 teaspoons sweet pickle relish
salt
white pepper

Steps:

  • Cut the boiled eggs lengthwise and gently remove the yolks.
  • Mash the yolks with a fork, but do not pack.
  • Add remaining ingredients.
  • Replace the filling, back into the egg whites.
  • You can do it with a spoon, or decoratively with a cake decorating/icing pump.
  • Sprinkle with extra paprika and garnish as desired with olives, pimentos, etc.

Number Of Ingredients 6

6 yellow summer squash, diced
1 large yellow onion, sliced
1 cup shredded sharp cheddar cheese
One 8-ounce can tomato sauce
1/4 teaspoon seasoned salt
2 packets artificial sweetener (optional)

Steps:

  • Preheat the oven to 350 degrees. Combine the squash and onion in a microwave-safe container, cover, and microwave at full power until the squash is fork tender, about 4 minutes, or steam over simmering water. Transfer the vegetables to a 2-quart ovenproof casserole dish. Mix in the cheese, tomato sauce, seasoned salt, and artificial sweetener, if desired. Cover and bake for 20 minutes.

  • Chicken Stirfry. “I dice the chicken and throw in whatever vegetables I have on hand.” advises Kelly. This is a good one to use up chicken leftovers from a roast chicken dinner.
  • Chicken Chow Mein. “Chicken chow mein is my standby because it’s a one pot meal and pretty much just a throw in and leave thing.” says Jade. Here’s a nice recipe for Chicken Chow Mein.
  • Sausages. Maura says “sausages with potatoes, beans, red onion and gravy!” is a standby in her house. I always keep a packet of sausages in the freezer just in case I need a quick meal, for example, grilled sausages with mashed potato and peas.

  • Chicken & Leek Pie. Another ingredient I keep in the freezer is a packet of ready-made shortcrust pastry. After a roast chicken dinner, I combine the leftovers with bacon, leek and mushrooms in a white sauce and bake with a pastry top for an easy chicken & leek pie.
  • Macaroni & Cheese. Chandra’s suggestion for serving “Mac and cheese with chicken breast and green beans” sounds like a delicious meal. To make macaroni and cheese extra tasty, just add bacon bits and leek and make a breadcrumb topping.
  • Chicken Vol Au Vents. Elaine swears by “Chicken vol au vents with creamy mash and veg. Yum” Another handy thing to keep in the fridge or freezer are vol au vent or puff pastry cases.
  • Burgers. Make home made burgers quickly by mixing your chosen mince or mixed beans blitzed in the food processor if you want to go veggie with an egg and a handful of breadcrumbs (another thing I keep in the freezer is ends of bread whizzed up into breadcrumbs) and then optional extras like.
