1 cup Guinness (dark beer)
1/2 cup butter, cubed
2 cups sugar
3/4 cup baking cocoa
2 large eggs, beaten, room temperature
2/3 cup sour cream
3 teaspoons vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking soda
TOPPING:
1 package (8 ounces) cream cheese, softened
1-1/2 cups confectioners' sugar
1/2 cup heavy whipping cream

Steps:

  • Preheat oven to 350°. Grease a 9-in. springform pan and line the bottom with parchment; set aside., In a small saucepan, heat beer and butter until butter is melted. Remove from the heat; whisk in sugar and cocoa until blended. Combine the eggs, sour cream and vanilla; whisk into beer mixture. Combine flour and baking soda; whisk into beer mixture until smooth. Pour batter into prepared pan., Bake until a toothpick inserted in the center comes out clean, 45-50 minutes. Cool completely in pan on a wire rack. Remove cake from the pan and place on a platter or cake stand. , In a large bowl, beat cream cheese until fluffy. Add confectioners' sugar and cream; beat until smooth (do not overbeat). Frost top of cake. Refrigerate leftovers.

4 ounces unsalted butter
10 ounces dark brown sugar
2 medium eggs, beaten
6 ounces plain flour
1/4 teaspoon baking powder
1 teaspoon baking soda
7 fluid ounces Guinness stout (or other Irish stout)
2 ounces cocoa powder
4 ounces chocolate
2 tablespoons Guinness stout
2 ounces butter
4 ounces icing sugar, sifted
1 ounce walnuts, finely chopped

Steps:

  • To make the cake-----------.
  • Grease and line two 8-inch cake pans, and preheat the oven to 350F degrees.
  • Cream butter and sugar together.
  • Gradually beat in the eggs.
  • Sift the flour, baking powder and baking soda into a separate bowl.
  • Stir Guinness into cocoa.
  • Carefully fold in alternate quantities of flour and cocoa to butter/sugar mixture.
  • Spread mixture into pans and bake for 30-35 minutes.
  • Leave to cool in pans for 5 minutes before turning out.
  • To make the icing---------.
  • Melt chocolate with Guinness, and then beat in butter and leave to cool a little before beating in icing sugar.
  • Remove ¼ of icing and stir in chopped walnuts.
  • When icing has cooled to a spreadable consistency, sandwich cake with walnut icing and use rest for top and sides.
  • Decorate with walnut halves and grated chocolate.

1/4 pound unsalted butter
1 cup dark brown sugar
3 eggs, lightly beaten
2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon allspice
1/2 teaspoon salt
1 cup raisins, soaked overnight in 1 cup Guinness
1/2 cup candied peel
4 ounces chopped walnuts
1 cup Guinness

Steps:

  • Preheat oven to 325 degrees. Cream butter and sugar in the mixing bowl until light and fluffy.
  • Beat in eggs. Sift flour and baking powder and gradually fold with allspice into the butter-sugar mixture. Add salt, raisins, peel and walnuts. Mix thoroughly.
  • Grease an eight-inch round cake tin and bake for one hour at 325 degrees. Turn down heat to 300 and bake another hour.
  • Test cake with skewer. It should come out slightly sticky but almost clean. Remove cake from oven and let it cool. Remove from cake pan and turn upside down. Using skewer, insert holes around bottom of the cake and pour in remaining cup of Guinness.

1 cup Irish stout beer (such as Guinness®)
1 cup unsalted butter, sliced
2 cups white sugar
⅓ cup unsweetened cocoa powder
⅔ cup sour cream
2 eggs
1 tablespoon vanilla extract
1 ⅓ cups all-purpose flour, sifted
1 ½ teaspoons baking soda
½ cup butter, softened
1 (3 ounce) package cream cheese, softened
1 teaspoon vanilla extract
2 cups confectioners' sugar, sifted
3 tablespoons Irish cream liqueur, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  • Pour stout beer into a large saucepan over medium-low heat. Add 1 cup sliced butter; heat until butter is melted, about 5 minutes. Whisk in white sugar and cocoa powder until dissolved. Remove from heat.
  • Mix sour cream, eggs, and 1 tablespoon vanilla extract together in a bowl. Stir into beer mixture. Whisk flour and baking soda into the beer mixture until batter is smooth; pour into the greased pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 60 minutes. Run a knife around the edge of the cake; cool to room temperature on a wire rack, about 30 minutes. Remove ring and transfer cake to a serving platter.
  • Beat 1/2 cup butter and cream cheese together in a bowl. Add vanilla extract. Mix in confectioners' slowly until icing is smooth. Add Irish cream liqueur 1 tablespoon at a time to thin frosting to a spreading consistency. Spread frosting over cooled cake.

1/2 cup unsalted butter
2 tablespoons unsalted butter, melted
1/2 cup stout beer (pour stout slowly into measuring cup, do not measure foam)
1/2 cup soft pitted prunes, chopped
3 1/2 fine quality bittersweet chocolate, chopped (use only bittersweet)
1 1/4 cups flour
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1 cup packed dark brown sugar
2 teaspoons vanilla extract

Steps:

  • Move oven rack to middle position and preheat oven to 350 degrees F. Lightly brush 6 cup Bundt pan or 8"x3" ovenproof ring mold with half the melted butter and chill 2 minutes. Butter again with remaining melted butter then chill until pan is needed.
  • Bring stout to a boil in a small saucepan and add prunes. Remove from heat and let stand until most of the liquid is absorbed.
  • Meanwhile, sift together flour, baking soda and salt into a bowl. Set aside. Melt the chocolate and 1/2 cup unsalted butter together in a small heavy saucepan over low heat, stirring constantly. Remove from heat and set aside.
  • Beat together eggs, brown sugar and vanilla in a large bowl with an electric mixer at high speed until thick, about 2 minutes. Add chocolate mixture and beat until just combined.
  • Reduce speed to low and add flour mixture, mixing until just combined. Stir in prune mixture until combined well. Spoon batter into pan and bake until a wooden toothpick inserted into middle of cake comes out clean, about 40-45 minutes.
  • Cool cake in mold on a rack 10 minutes, then invert onto rack to cool completely, at least 30 minutes.
