Olive Garden's Sambuca Chocolate Fudge Sauce image

This chocolate sauce is so yummy! If you don't want to use Sambuca, you can use Coffee, it is great either way. You could pour it over Ice Cream or even better Dip some big juicy strawberries in there. My mouth is watering right now!

8 oz semi-sweet chocolate morsels
8 Tbsp sweet butter
2 Tbsp sambuca liqueur or strong espresso coffee
vanilla ice cream

Steps:

  • 1. MELT chocolate and butter in a sauce pan over low heat, stirring until smooth. (I do mine in a glass bowl, sitting on top of a sauce pan with boiling water.)
  • 2. Add Sambuca or espresso coffee and stir.
  • 3. POUR over ice cream and let harden. SERVE immediately.

The recipe may be reduced by half half to make 1 cup, if you are reducing the recipe by half use only a small amount of salt, or if you are on a sodium reduced diet you can omit the salt totally! This can also be made in the microwave.

1/2 cup sugar
1/2 cup sifted unsweetened baking cocoa
1 tablespoon cornstarch
1 pinch salt
1 cup evaporated skim milk
1 tablespoon vanilla

Steps:

  • In a small heavy-bottomed saucepan combine sugar, cocoa, cornstarch and pinch salt.
  • Stir in the evaporated milk and whisk constantly over LOW heat for 3 minutes or until the mixture comes to a boil; whisk simmering for another 1-2 minutes longer over low heat until thickened.
  • Remove from heat and stir in vanilla.
  • Serve warm or cold.
  • Delicious!

2/3 cup heavy cream
1/4 cup butter
1/4 cup granulated sugar
6 ounces semisweet chocolate
2 tablespoons brandy
3 tablespoons superfine sugar
1 orange, rind of, finely grated
6 ounces white chocolate
2 tablespoons orange liqueur
1/4 cup light brown sugar
2 tablespoons coffee liqueur or 2 tablespoons dark rum
1 tablespoon coffee extract (both variations above still require 2/3 cup heavy cream and 1/4 cup butter)

Steps:

  • Heat the cream with the butter and sugar in the top of a double boiler or in a heatproof bowl over a saucepan of hot water. Stir until smooth, then cool.
  • Break the chocolate into the cream. Stir until it is melted and thoroughly combined.
  • Stir in the brandy a little at a time, then cool to room temperature.
  • For White Chocolate Orange sauce:.
  • Heat the cream aned butter with the sugar and orange rind in top of a double boiler, until dissolved,.
  • Follow the above recipe to the end, but use White chocolate and orange liqeuer.
  • For Coffee Chocolate Fudge:.
  • Follow above recipe using the light brown sugar and coffee liquer or rum, Stir in coffe extract at the end.
  • Serve sauces over cream filled profiteroles, or ice cream, or anything you choose.

Please don't leave a feedback saying how this recipe, "Is soooo much better than Olive Garden's", or how it is, "Close to Olive Garden's, but no cigar". It IS Olive Garden's recipe. Now we just have to figure out how they make their breadsticks! I like to throw the cooked veggies in the blender so my son doesn't realize that they're in there! ;)

2 tablespoons olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 celery, finely chopped
2 garlic cloves, finely chopped
1/2 lb ground beef
6 ounces Italian sausage, skinned
1 cup red wine
28 ounces crushed tomatoes, chopped
1 teaspoon fresh rosemary, chopped (or 1/4 tsp dry)
1 teaspoon fresh sage, chopped (or 1/4 tsp dry)
salt and pepper

Steps:

  • Heat oil in a large pan. Add celery, carrot, onion, and garlic and cook about 5 minutes.
  • Add meat and cook 10 minutes over medium heat, stirring occasionally.
  • Deglaze pan with wine, let it reduce.
  • Add tomatoes and remaining ingredients and stir, simmer for about 1 hour.
  • Serve over fresh, hot pasta.

1/4 cup olive oil (plus more for drizzling)
2 garlic cloves, cut into thin slices
2 1/2 lbs tomatoes, ripe plum (peeled and seeded)
1 teaspoon red pepper flakes, crushed
1/2 teaspoon sugar
1 teaspoon salt
1 teaspoon black pepper, freshly ground
1/4 cup sambuca romana
4 tablespoons basil leaves, shredded

Steps:

  • Heat the olive oil in a medium, high-sided saucepan over medium-low heat. Add the garlic slices and cook for several minutes, until they are slightly golden, stirring occasionally. Use a fork or slotted spoon to remove them, if desired.
  • Quarter the tomatoes lengthwise , leaving the stem ends intact. Turn them on their sides and cut into 1/4-inch slices.
  • Add the tomatoes and their juices, the crushed red pepper flakes, sugar, salt and pepper to the saucepan. Cook, uncovered, for 5 minutes, stirring once or twice, then add the Sambuca and cook for 3 minutes, stirring occasionally. Remove from the heat and add the basil.
  • Adjust seasoning as needed; drizzle with a little oil just before serving.

1 lb large cooked shrimp, thawed if frozen
3 tablespoons butter (separated)
1 -2 clove minced fresh garlic, to taste
1/3 cup heavy cream
2 ounces sambuca liqueur (or other anise based liqueur)
salt and pepper

Steps:

  • Melt butter, add minced garlic and 2 tbsp of the butter, add the heavy cream and mix well.
  • Can refrigerate at this point for a couple of hours to allow the garlic flavor to blend.
  • In a heavy skillet, melt the remaining butter on med/high heat and saute the thawed shrimp until heated through.
  • Add Sambuca and flambe, (if open flame, remove from heat).
  • Reduce heat immediately and add the butter, garlic and cream mixture.
  • Simmer for about 5 minutes and serve immediately.
