One-Eyed Monster Cupcakes image

Celebrate Halloween or fall with this fun and "scary" dessert. These cupcakes are made using Betty Crocker™ Super Moist™ chocolate cake mix and decorated with Betty Crocker® frosting and decorating gel.

1 box Betty Crocker™ Super Moist™ milk chocolate cake mix
Water, vegetable oil and eggs called for on cake mix box
1/2 teaspoon neon green paste food color
2 containers Betty Crocker™ Whipped fluffy white frosting
1/2 teaspoon purple paste food color
24 large candy eyes
2 tubes (0.68 oz each) Betty Crocker™ black decorating gel
24 sour candy straws, cut into thirds

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for cupcakes, using water, oil and eggs. Cool 10 minutes; remove from pans to cooling racks. Cool completely.
  • Stir green food color into 1 container of the frosting. Stir purple food color into remaining container of frosting. Spoon each color frosting into separate decorating bags fitted with star tip. Pipe frosting on cupcakes to look like monster's fur.
  • Place 1 candy eye on each cupcake. With decorating gel, draw mouths. Insert 3 sour straw pieces into frosting on each cupcake to look like hair.

1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin, divided
1/2 tsp. yellow food coloring
1/4 tsp. green food coloring
1 tub (16 oz.) ready-to-spread vanilla frosting
1 cup thawed COOL WHIP Whipped Topping
1 pkg. (2-layer size) white cake mix
8 JET-PUFFED Marshmallows, cut into thirds
24 blue candy-coated chocolate pieces (about 1/4 cup)
2 Tbsp. JET-PUFFED Vanilla MALLOW Bits

Steps:

  • Add 1 Tbsp. dry gelatin mix and food colorings to frosting in medium bowl; stir gently with whisk until blended. Stir in COOL WHIP. Refrigerate until ready to use.
  • Prepare cake batter and bake as directed on package for 24 cupcakes, blending remaining dry gelatin mix into batter before spooning into prepared cups. Cool completely.
  • Spread cupcakes with COOL WHIP mixture. Decorate with remaining ingredients.

These one-eyed monster cupcakes are as cute as they are delicious.

1 16-oz can vanilla frosting
Green, red, and yellow food coloring
12 baked and cooled cupcakes
1/2 c. each light green and red decorating sugar
Red licorice laces
12 Mega M&M's
Black licorice laces, cut into 1-inch pieces
1 tube black decorating frosting

Steps:

  • Spoon 3/4 cup of frosting into a resealable bag. Divide remaining frosting in two and tint one portion light green with the green and yellow food coloring and one portion orange with the red and yellow food coloring. Frost tops of cupcakes, then roll cupcake edges in green and red decorating sugar. (You can make the monsters other colors, too.)
  • Cut red licorice into twelve 2 1/2-inch pieces and twenty-four 1/4-inch pieces. Attach as the mouth on the lower half of cupcakes. Snip a small corner from bag with frosting and pipe teeth along the lower part of mouth.
  • Snip a large corner from resealable bag and pipe a large dot of vanilla frosting for the eye. Add M&M's as the iris. Insert three to four pieces of black licorice laces as the lashes. Pipe the pupil with black frosting on top of the candy eye.

6 marshmallows
6 chocolate or vanilla cupcakes baked in black foil liners
1 can (16 ounces) vanilla frosting
Neon green food coloring
6 small chocolate-coated mints

Steps:

  • Trim a corner from one short end of each marshmallow. Attach the marshmallows, cut side down, on top of the cupcakes with a dot of frosting., Spoon 2 tablespoons of vanilla frosting into a small resealable bag; set aside., Tint the remaining vanilla frosting neon green with the food coloring. Spoon the neon green frosting into a resealable 2-qt. freezer bag. Snip a very small corner (1/8 in.) from bag. Pipe dots of frosting along the outer edge of the cupcake with a pipe-stop-and-pull action to create spikes of frosting. Continue piping all over the cupcakes to completely cover all but the flat side of the marshmallow. Repeat with the remaining cupcakes and frosting., Snip a very small corner (1/16 in.) from the bag with the vanilla frosting. Pipe a dot of vanilla frosting in the center of each marshmallow and attach the chocolate-coated mint. Pipe a small line to add as the sparkle in the eye.
