Egg-In-A-Hole Sweet Potato Nests Recipe by Tasty image

Here's what you need: large sweet potato, medium yellow onion, salt, pepper, garlic powder, flour, eggs, olive oil, bacon, raspberry, banana, spring onion

1 large sweet potato
1 medium yellow onion
1 ½ teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
3 tablespoons flour
7 eggs
3 tablespoons olive oil
bacon, crumbs, to taste
raspberry, to taste
banana, sliced, to taste, to garnish
spring onion, to taste, to garnish

Steps:

  • Peel the skin off the sweet potato, and coarsely grate on a box grater.
  • Peel the onion, and coarsely grate on a box grater.
  • Transfer the grated sweet potato and onion to a towel-lined bowl.
  • Gently twist the towel, squeezing the liquid into an empty bowl and discard.
  • Transfer the sweet potato and onion to a bowl, and sprinkle with salt, pepper, garlic powder, flour, and 1 egg. Gently stir to combine.
  • Form large flat patties with your hands, approximately ⅓ cup of mixture each.
  • Heat a 9 ½ -inch (24 cm) fry pan on medium heat and coat with oil.
  • Add the sweet potato patties. Fry for 2-3 minutes, then gently flip.
  • Immediately use a small cookie cutter to remove a hole in the middle of each fritter.
  • Crack an egg in the hole, add a pinch of salt and pepper, then cover.
  • Fry for 3-7 minutes, or until cooked to your preference.
  • Uncover and serve with desired garnishes.

1 1/4 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup hot water
2/3 cup unsweetened baking cocoa
3/4 cup shortening
1 1/2 cups granulated sugar
2 eggs
1 teaspoon vanilla
6 cups powdered sugar
2/3 cup butter or margarine, softened
1 tablespoon vanilla
3 to 4 tablespoons milk
3 graham cracker squares, crushed
About 1/3 cup Betty Crocker™ Decorating Decors green candy sprinkles
24 colored straws
Colored paper and tape
24 white gum balls or other round white candies

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.
  • In medium bowl, mix flour, baking soda, salt and baking powder; set aside. In small bowl, mix hot water and cocoa until dissolved; set aside.
  • In large bowl, beat shortening with electric mixer on medium speed 30 seconds. Gradually add granulated sugar, about 1/4 cup at a time, beating well after each addition. Beat 2 minutes longer. Add eggs, one at a time, beating well after each addition. Beat in 1 teaspoon vanilla. On low speed, alternately add flour mixture, about a third at a time, and cocoa mixture, about half at a time, beating just until blended.
  • Divide batter evenly among muffin cups, filling each about two-thirds full.
  • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove cupcakes from pans to cooling racks. Cool completely, about 30 minutes.
  • In large bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in 1 tablespoon vanilla and 3 tablespoons milk. Gradually beat in just enough remaining milk to make frosting smooth and spreadable. Frost cooled cupcakes.
  • On one side of each cupcake, sprinkle about 1/2 teaspoon graham cracker crumbs for "sand." On other side of cupcake, sprinkle generous 1/2 teaspoon green sprinkles for "grass."
  • Cut straws into 3 1/2-inch lengths. Cut colored paper into flags. Tape each flag to one end of each straw piece; poke into cupcake. Gently press one gum ball into each cupcake for golf ball.

Potatoes baked with a core of bacon and scallion. You will have great fun experimenting with this recipe. I have made them using fresh herbs, garlic slivers and grated cheese. (Added post review) Some of the newer apple corers are much larger. Mine is made by OXO.

4 baking potatoes
4 slices lean center cut bacon
fresh fresh coarse ground black pepper
4 scallions, tails

Steps:

  • Preheat oven or covered BBQ grill to 350°F.
  • Wash potatoes and cut a thin slice off each end.
  • Plunge an apple corer through one cut end (lengthwise) as far as it will go, twist and remove.
  • Sprinkle bacon with pepper, top with a scallion"tail" and fold the bacon over the scallion.
  • Insert into the potato, packing in the bacon and scallion with a finger, trim if necessary to leave room at both ends for a"plug".
  • Cut slices off the potato cores, wide enough to plug the holes, when the slices are turned sideways.
  • Plug both ends of the potatoes, wrap in foil and bake 50- 60 minutes or until done.

1 package chocolate cake mix (regular size)
1/2 cup shortening
1/2 cup butter, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons whole milk
Green paste and liquid food coloring
#233 multi-opening pastry tip or #2 round tip
Pasty bag or plastic bag with small hole cut in corner
1/2 cup sweetened shredded coconut
1 miniature chocolate kiss
2 burstin' berry-flavored Fruit Roll-Ups, divided
5 uncooked spaghetti noodles
1 round wooden toothpick
1 butterscotch chip
1 miniature marshmallow

Steps:

  • Prepare and bake cake according to package directions, using two greased and floured 9-in. round baking pans. Cool for 10 minutes; remove from pans to wire racks to cool completely., For frosting, cream shortening, butter, sugar and vanilla in a bowl. Gradually beat in milk until light and fluffy. Tint with green paste food coloring. Place cake on a serving platter for 10-in. round covered board; frost between layers and top and sides of cake., Insert tip into pastry or plastic bag; fill with frosting. Pipe grass along bottom edge of cake., Place coconut in a plastic bag; add 5-6 drops green liquid food coloring. Shake until color is evenly distributed. Set aside. For the green, trace a 4-in. circle on waxed paper; cut out. Place on top of cake 1 in. from an edge. Sprinkle green coconut over the cake top; remove the waxed paper. Insert the chocolate kiss, point side down, into green for the hole. , For the pin, unroll one fruit roll-up. Cut a 2-1/4x2x1-in. triangle from the red portion; set aside the unused portion. Wrap shortest side of triangle around the end of one noodle. Insert noodle into the green next to the hole. , For the tee, gently insert toothpick into pointed end of butterscotch chip. Insert tee into cake opposite the pin. Place marshmallow on tee for the golf ball., From the reserved roll-up, cut a 4-3/4x1/2-in. strip out of the red section for the golf bag strap; set blue portion aside. Unroll second roll-up; cut between blue and red portions. Roll up red portion into a 1-in. diameter tube for the golf bag. Attach the strap to the side of bag. Fold the ends over top and bottom of bag, leaving a 1-in. loop near the top for the handle; set aside., For golf clubs, bread the remaining noodles into 4-in., 5-in. and 6-in. pieces. Cut the blue portions of roll-ups into eight 2-1/2-in. x 1/2-in strips. Mold each strip around one end of a noodle, forming a club head. Stand the golf bag near the tee. Steps:

  • In a small saucepan, combine potato slices, milk, garlic, salt if desired and pepper; bring to boil. Pour into a buttered 10-oz. custard cup. Sprinkle with cheese. Bake, uncovered, at 375° for 35 minutes or until potatoes are tender.

1 ½ pounds lean ground beef
2 cloves garlic, minced
salt and pepper to taste
1 (10.5 ounce) can condensed French onion soup
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
2 tablespoons cold water
1 tablespoon all-purpose flour
3 cups peeled and thinly sliced potatoes
2 (10 ounce) packages frozen mixed vegetables, thawed
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cook ground beef in a skillet over medium-high heat until evenly browned. Drain excess grease. Season with garlic, salt and pepper. Stir in the onion soup, Worcestershire sauce and mustard, and bring to a boil. Mix together the cold water and flour, and stir into the sauce. Simmer over low heat for a few minutes, then set aside.
  • Meanwhile, place potatoes in a saucepan and add enough water to cover. Bring to a boil, and cook for 3 minutes, not until tender. Drain.
  • Spread half of the beef mixture in the bottom of a 9x13 inch baking dish. Arrange half of the potatoes over the beef. Cover with a layer of mixed vegetables. Repeat layers.
  • Cover the dish, and bake for 50 minutes in the preheated oven. Uncover, and sprinkle shredded cheese over the top. Bake for an additional 10 minutes to melt cheese.
