This salad is a delicious way to enjoy the best of the fall fruit harvest.

4 medium ripe pears - peeled, cored, and cubed
4 medium apples - peeled, cored, and cubed
1 tablespoon lemon juice
1 cup sweetened dried cranberries (such as Craisins®)
½ cup chopped walnuts
½ cup granola
½ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Coat pears and apples in lemon juice.
  • Mix dried cranberries, walnuts, granola, brown sugar, cinnamon, and nutmeg together in a large bowl. Toss pears and apples into the mixture.

1 cup walnut halves
1/2 cup celery, diced
2 medium tart apples, cubed
2 tablespoons onions, finely chopped
1/2 teaspoon salt
1 cup sour cream
1/2 teaspoon cinnamon
6 lettuce cups

Steps:

  • in large bowl stir together all ingredients (except sour cream, cinnamon and lettuce).
  • in small bowl stir together sour cream and cinnamon, fold into chicken mixture.
  • cover and refrigerate at least 1 hour.
  • to serve line six bowls with lettuce and fill each with salad.

Juice of 1 lemon
1/3 cup cider vinegar
1/3 cup honey
1 teaspoon McCormick Gourmet™ Cinnamon, Roasted Ground Saigon
1/4 cup olive oil
8 cups salad greens, such as arugula, red leaf lettuce or Romaine lettuce
1/2 cup chopped dried apricots
1/2 cup crumbled blue cheese, about 4 ounces
1/2 cup pistachio nuts

Steps:

  • Cover apple slices with cold water. Add lemon juice. Let stand until ready to serve.
  • Mix vinegar, honey and roasted cinnamon in small bowl with wire whisk. Gradually add oil, whisking until well blended.
  • To serve, divide greens among 8 plates. Top each with drained apple slices, apricots, blue cheese and pistachio nuts. Serve with dressing.
