Baked gnocchi with kale pesto & ham image

Bake ready-made gnocchi with walnuts, lemon and mozzarella for a delicious and easy weeknight meal

85g kale
50g walnut pieces
150ml olive oil
juice 1 lemon
50g parmesan , roughly chopped
2 x 500g gnocchi
4 thick slices ham , diced
125g ball mozzarella , drained
100g bag mixed salad leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the kale, walnuts, oil, lemon juice and Parmesan in a processor and blitz until the kale is very finely chopped. Bring a large pan of water to the boil and cook the gnocchi in 2 batches, for 2 mins each time.
  • Drain the gnocchi thoroughly, then tip into an ovenproof dish and stir through the kale pesto and the ham. Tear the mozzarella into pieces and dot over the gnocchi. Bake for 20-30 mins or until the cheese is bubbling. Serve with the salad leaves.

1 tablespoon unsalted butter
1 onion, chopped
One 8-ounce piece deli ham, diced
1/2 teaspoon chopped fresh thyme
1/2 cup low-sodium chicken broth
One 17.5-ounce package potato gnocchi
1 cup frozen peas, thawed
1/4 cup heavy cream
Kosher salt and freshly ground black pepper

1 cup shredded Swiss or Gruyere cheese

Steps:

  • Preheat the broiler to high heat.
  • Melt the butter in a large ovenproof skillet over medium heat. Add the onions and cook until softened, about 3 minutes. Add the ham and thyme and continue to cook until the ham is lightly browned.
  • Add the chicken broth and 3/4 cup water and bring to a simmer. Add the gnocchi, stir well, cover and cook until the gnocchi is slightly tender, about 5 minutes. Remove from the heat. Uncover and stir in the peas, cream, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle the cheese over the top and broil until golden and bubbly, about 3 minutes. Serve.

  • Remove kale leaves from stems. Heat some olive oil in a pot over medium-high heat. Add kale leaves, season with salt and pepper, and cook for approx. 8 - 10 min.
  • Peel avocado, remove the pit and dice half. Put the diced avocado into a liquid measuring cup with some pine nuts and remaining olive oil. Dice Parmesan cheese and add to the measuring cup. Add lemon juice and kale and use immersion blender to blend until smooth. Add more oil to loosen if needed. Dice the other half of the avocado and set aside.
