You don't need to hit the trails to enjoy this easy, make-ahead snack. All you need to prove is that you're a peanut butter lover through and through. Sweet, salty, chewy, and crunchy, this treat will become your new favorite breakfast on-the-go or afternoon pick-me-up.

3 cups rolled oats
1 cup chunky peanut butter
¾ cup honey
1 teaspoon kosher salt
1 cup raisin
1 cup peanuts
1 cup golden raisin

Steps:

  • Toast the oats in a medium nonstick skillet over medium heat for 2-3 minutes, until golden brown and fragrant. Remove the pan from the heat and let the oats cool.
  • Melt the peanut butter and honey together in a small saucepan over medium heat for about 2 minutes, until pourable and smooth. Stir in the salt, then remove the pot from the heat.
  • Transfer the peanut butter mixture to a large bowl. Add the toasted oats, raisins, peanuts, and golden raisins. Stir until well coated.
  • Transfer the mixture onto a sheet of parchment paper and roll into a log, pressing together. Wrap in plastic wrap and freeze for at least 4 hours, up to overnight.
  • Remove the roll from the freezer and slice into 24 pieces. The slices will keep in the freezer for up to 1 month or in the refrigerator for up to 5 days.

This recipe comes from Snack Attack Cookbook for kids. It is easy, and does taste so good. Take it with you when you go and discover the great outdoors and hunger strikes you.

Number Of Ingredients 8

1/4 cup apple jelly (or your favourite jelly)
3 tablespoons granulated sugar
2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon ground cinnamon
1 cup rolled quick-cooking oats (old fashioned)
1/2 cup slivered almonds
1/4 cup shelled sunflower seeds
1/4 cup coconut

Steps:

  • Turn on the oven to 325 degrees F.
  • Put jelly, sugar, butter, and cinnamon in a saucepan, and over low to medium heat cook until all is melted and the sugar is well dissolved.
  • Remove from heat. Turn off the stove.
  • Add the rolled oats ( not instant) , nuts, seeds and coconut, stir well with a wooden spoon.
  • Pour the mixture into the ungreased baking sheet 9 x 13 inches.
  • Spread evenly and place in oven .
  • Twice during the baking time open the door and stir with spoon.
  • Bake for 20 to 25 minutes until lightly golden brown.
  • Turn off oven, and using again those hot pads, remove from oven to a rack.
  • Cool completely.
  • Store cooled mixture in a plastic container and cover tight.
  • Store in cool dry place for up to two weeks.

1 cup wheat germ
1/2 cup shelled sunflower seeds
1/2 cup sesame seeds
1/2 cup shredded coconut
1/2 cup chopped peanuts
2/3 cup vegetable oil
2/3 cup honey

Steps:

  • In large bowl combine all ingredients except oil and honey.
  • In small saucepan heat oil and honey, until warm do not boil.
  • Pour over oat mixture and stir until evenly mixed.
  • Spread evenly in 2 large cookie sheets.
  • Bake at 275 for 30 minutes, or until lightly browned, stirring every 10 minutes.
  • Cool throughly and store in air tight container.
  • Makes 10 cups.

1 cup mixed dried fruit
1/4 cup packed brown sugar
1 cup boiling water
3 cups oats
1/4 cup slivered almonds
2 tablespoons nonfat dry milk powder
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 250 degrees.
  • Combine the first three ingredients together in a bowl, and let stand for 15 minutes.
  • Combine oats and remaining ingredients together and stir into the dried fruit mixture.
  • Sprinkle granola mixture over a cookie sheet, and bake at 250 degrees for about 1 hour stirring every 15 minutes, to prevent burning, until crunchy.
  • Cool granola to room temperature.
  • Store in air tight container.

1 cup rolled oats
1 cup jumbo oats
1/2 cup sunflower seeds, roasted & lightly salted
2 tablespoons sesame seeds
1/4 cup golden flax seed
1/2 cup hazelnuts, roasted and skins removed, coarsely chopped
1/4 cup almonds, coarsely chopped
1/4 cup sunflower oil or 1/4 cup canola oil
1/4 cup raw honey
1/2 cup golden raisin (sultanas)
1/2 cup dried sweetened cranberries

Steps:

  • Preheat the oven to 140 C / 275°F.
  • Mix together the oats, seeds and nuts in a bowl.
  • Heat the oil and honey in a large pan until warm and well blended. Remove the pan from heat.
  • Add the oat mixture to the pan and stir well.
  • Spread out on one or two baking sheets.
  • Bake for about 40-50 minutes until crispy, stirring occationally to prevent the mixture from sticking.
  • Remove from the oven and mix in the raisins and cranberries.
  • Leave to cool, then store in airtight containers.
  • SUBSTITUTIONS: Try a variety of nuts, grains, seeds and dried fruits in this recipe, depending on your individual preferences.

1 (12 ounce) bag semisweet chocolate chips
4 cups quick-cooking oats
2 cups sliced almonds
2 cups chopped pecans
2 cups raw pumpkin seeds
2 cups unsweetened flaked coconut
¾ cup honey
½ cup canola oil
1 tablespoon ground cinnamon
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Combine chocolate chips, oats, almonds, pecans, pumpkin seeds, and coconut in a large bowl.
  • Whisk honey, canola oil, cinnamon, and vanilla extract together in a measuring cup; pour over oat mixture and stir until well coated. Divide oat mixture between 2 large baking sheets.
  • Bake in the preheated oven for 15 minutes. Stir granola and switch position of the sheets. Continue baking until granola is lightly browned, 15 to 30 minutes more. Cool completely, about 15 minutes. Store in a resealable container.
