Here's what you need: ground beef, tomato, whole kernel corn, tomato sauce, water, taco seasoning, salt, pepper, elbow macaroni, colby jack cheese

1 lb ground beef
1 can tomato, diced (15 oz - 425g)
1 can whole kernel corn, (15 oz - 425g)
1 can tomato sauce, (15 oz - 425g)
2 cups water
1 package taco seasoning
salt, to taste
pepper, to taste
2 cups elbow macaroni, uncooked
1 ½ cups colby jack cheese

Steps:

  • In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
  • Add taco seasoning, water, diced tomatoes, corn and tomato sauce. Bring to a boil.
  • Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
  • Remove from heat. Sprinkle cheese on top and cover.
  • Serve once cheese is melted!
  • Enjoy!

Quick and easy taco pasta recipe, homemade with simple ingredients in one pot over stovetop in 30 minutes. This Mexican pasta is cheesy, creamy, loaded with ground beef.

2 tbsp Oil
1/2 pound Ground beef
1/2 tsp Ginger powder
1/2 tsp Garlic powder
Salt (To taste)
Pepper (To taste)
1/2 cup Red beans (Canned, Drained and rinsed)
1/2 cup Corn (Frozen)
1 cup Salsa (Mild)
3 tbsp Taco seasoning
8 oz. Rotini pasta (Uncooked)
2 cups Water
1.5 cups Shredded Cheese (Use Mexican cheese blend)
Toppings (E.g. Lettuce, Sour cream, Onions, Jalapenos, Avocado slices, Cilantro, Salsa)

Steps:

  • Heat oil in a large nonstick pot over medium-high heat.
  • Add ground beef, ginger, garlic, salt, pepper and mix it together.
  • Cook for a few minutes, while stirring occasionally, until beef is cooked through and no longer pink.
  • Drain fat.
  • Add red beans, corn, salsa, taco seasoning, uncooked pasta, water, additional salt and pepper (if needed) and mix everything together.
  • Bring everything to a boil. The, cover and let cook for about 15 minutes or until the pasta is cooked through.
  • If the mixture is getting too thick and the pasta still needs some time to cook, add a little more water ( ¼ cup at a time). Then, cover and cook for a few more minutes.
  • Remove from heat and mix in 1 cup shredded cheese.
  • Garnish with remaining 1/2 cup cheese and additional toppings of your choice and enjoy!

½ tablespoon olive oil
1 pound ground beef
1 onion (chopped)
1 stalk celery (chopped)
1 tablespoon taco seasoning
3 cups chicken broth (or more, depending on your pasta (some kinds need more liquid, but only add more as it cooks and is too dry))
1 cup salsa
1 (12-oz) box small pasta shapes
1 red pepper (chopped)
½ cup sweetcorn
salt & pepper (to taste)
½ cup shredded Mexican blend cheese (or more to taste)

Steps:

  • Sauté vegetables: Heat oil in a large, deep skillet or large pot over medium heat. Add onion and celery and cook until softened but not browned, about 3-4 minutes.
  • Brown beef: Increase heat to medium-high and add the ground beef. Cook until browned, breaking up meat to crumble as it cooks. Stir in taco seasoning, then pour in chciken broth, scraping any browned bits off the bottom of the skillet.
  • Add remaining ingredients: Add salsa, pasta, red pepper, corn, salt and pepper to skillet and stir well. Bring to a boil.
  • Simmer: Reduce heat to a simmer, cover with a lid and cook until sauce has thickened and pasta is done (about 10-15 minutes, depending on your pasta). Uncover and stir every 2-3 minutes to keep pasta from sticking to bottom. Depending on thickness of your pasta, you may need to add up to ½ extra cup of broth during cooking if it's looking dry. Cook uncovered for final 2-3 minutes.
  • Finish: Once pasta is done, take skillet off the heat. Check for seasoning and add salt and pepper, if needed. Stir in cheese and let pasta sit for 1-2 minutes or until cheese has melted. Serve immediately.
