Easy, cheesy one pot pizza pasta! This will feed even the pickiest of eaters. This simple pasta recipe with cheese and pizza toppings is a perfect weeknight meal.

12 ounces Rotini Pasta (or your favorite kind of pasta)
1 cup pizza sauce
1 1/2 cups mozzarella cheese (shredded)
Pizza toppings: pepperoni, olives, etc.

Steps:

  • Boil water for pasta in a large (at least 3 quart) saucepan. Cook pasta according to package directions. Reserve one cup pasta cooking water and set aside, drain remaining pasta.
  • While you're draining the pasta, place the pizza sauce and reserved pasta water in the pan and heat until simmering. Add pasta back into pot and toss to combine.
  • Top with cheese and desired pizza toppings. Turn heat to low and cover just until the cheese is melted. Serve immediately.

One pot is all you need for this mouth-watering Pizza Pasta! It's loaded with your favorite pizza toppings like ground beef, pepperoni, onions, peppers, and olives! The sky is the limit!

1 Tablespoon vegetable oil
½ lb. ground beef
Salt/Pepper (to taste)
1 small onion (diced)
2 cloves garlic (minced)
½ green bell pepper (diced)
15 oz. marinara sauce (about 2 cups)
1 ½ cups chicken broth (See Note #1)
½ lb. Rotini pasta (uncooked)
¼ teaspoon red pepper flakes (optional)
1/3 cup pepperoni
¼ cup black olives (thinly sliced)
2 cups mozzarella cheese (shredded)
½ cup Parmesan cheese (shredded (optional))
Fresh Parsley (finely diced)

Steps:

  • Preheat the oven to 375 degrees.
  • Heat the vegetable oil over medium-high heat in a large, oven-safe skillet.
  • Slice ¼ of the onion into strings and set them aside to top the pizza pasta. Finely dice the rest.
  • Roll the ground beef into small balls and season with desired amounts of salt and pepper. See Note #2
  • Place the meatballs in the preheated skillet, you should hear a sizzle. Brown all sides and then reduce the heat to medium.
  • Add the finely diced onions and cook until they're soft and translucent.
  • Add the minced garlic and half of the diced bell peppers and cook for an additional minute.
  • Use a spoon to remove some of the meatballs to top the pizza pasta with later. Set them aside.
  • Add the marinara sauce, Rotini, and chicken broth. Stir to combine.
  • Let the pasta gently bubble for the amount of time instructed on the package, use a silicone spatula to stir it often so it doesn't stick to the bottom. The texture should be just at the al dente point once finished.
  • Remove the pan from the heat. Top it with the Mozzarella and Parmesan cheese.
  • Top the pasta with the reserved onion strings, pepperoni, black olives, remaining bell peppers, and reserved meatballs.
  • Place in the oven, uncovered, for about 10 minutes, or until the cheese is hot and melted. You may choose to warm some garlic bread during this time as well.
  • Remove from the oven and sprinkle with parsley. Serve, and enjoy!

3 tablespoons extra virgin olive oil
3/4 pound ground spicy Italian chicken sausage ((optional))
4 cloves garlic minced or grated
1 tablespoon dried oregano
2 teaspoons dried thyme
1-2 teaspoons fennel seeds (use to your taste)
1 pinch crushed red pepper flakes
kosher salt and black pepper
3 cups marinara sauce
1/2 cup vodka ((chicken broth or water also work))
1/2 cup basil pesto, homemade or store-bought
1 pound dry short cut pasta
2 cups shredded fontina cheese
8 ounces mozzarella, torn
1/2 cup grated parmesan or asiago cheese
3 ounces pepperoni sliced
1/2 cup fresh basil, chopped

Steps:

  • 1. Preheat the oven to 350° F.2. Heat the olive oil in a large pot over high heat. When the oil shimmers, add the chicken sausage (if using) and brown all over, about 5 to 8 minutes. Stir in the garlic, oregano, thyme, fennel, and chili flakes, cook another 3-5 minutes, until very fragrant. Add the marinara sauce, vodka, pesto, and a pinch each of salt and pepper. Then add 2 1/2 cups water and the pasta. Increase the heat to medium-high. Bring the mixture to a boil. Stir frequently until the pasta is al dente, about 8-10 minutes. 3. If needed, transfer the pasta to a baking dish. Top with the cheeses, then pepperoni. Sprinkle the basil over top.4. Transfer the baking dish to the oven and bake 20-25 minutes or until the cheese has melted and is lightly browned on top. Cool 5 minutes before serving. Serve with fresh rosemary. Enjoy!

8 ounces rotini pasta
Kosher salt and freshly ground black pepper, to taste
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat oven to broil. Heat olive oil in a large oven-proof skillet over medium high heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat. Stir in 1/4 cup pepperoni until heated through, about 1 minute. Stir in tomato sauce, oregano, basil garlic powder, pasta and 1 1/2 cups water; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes. Remove from heat; top with mozzarella and remaining 1/4 cup pepperoni.
