ONE SHOT SAUCE
Goodnight Trail Cook, TX 1861. Charlie was a cook for the Goodnight Outfit. He was bad to drink whiskey. One day he was drinking when he saw the boss coming and he emptied a glass of whiskey into the steak sauce he was cooking. He didn't have time to make more steak sauce, so he served it with the whiskey in it. All the hands and the boss thought it was good, so he made it this way all the time. RED HOT SHOT

- Place 8 cinnamon candies in a food processor and pulse until finely ground. Place the cinnamon dust on a small plate and stir in the salt. Run the lemon wedge around the edge of 8 shot glasses and dip them into the cinnamon-salt mixture.
- In a cocktail shaker filled 1/2 way with ice, add the cinnamon schnapps and tequila. Shake well and pour into the prepared shot glasses. Top off with a dash of hot sauce and enjoy! Use the remaining cinnamon candies as a chaser.
ONE-POT SPAGHETTI WITH FRESH TOMATO SAUCE
This one-pot meal is perfect for the beginner cook: Everything but the cheese goes into one skillet, and it all magically comes together. The tomato paste is here for a little flavor insurance, just in case your tomatoes aren't at their best. Feel free to add an extra tablespoon when they're out of season.

- Put the spaghetti, oil, tomato paste, garlic, tomatoes, basil, crushed red pepper and 1 teaspoon salt in a high-sided medium skillet. Add 5 cups water, and bring to a boil over medium-high heat. Continue to cook, stirring the spaghetti frequently to keep it from clumping, until it is al dente and the sauce has reduced and thickened, 6 to 8 minutes.
- Stir in the Parmesan (the sauce will thicken more), and season with salt if needed. Divide the spaghetti among 4 bowls, and garnish with more Parmesan and torn basil leaves.

If a steak is good it doesn't need any sauce -- just some garlic butter and a dusting of salt is best. Anything else -- even my favorite BBQ sauce -- just covers up the real taste.

- 1. Bring to a boil for 2 minutes stirring.
- 2. Remove from heat. Allow to cool to lukewarm.
- 3. Put mixture in a blender till it is pureed. Pour in bottle.
- 4. Cap tightly and refrigerate to use within 90 days.
HOT AND SPICY BBQ SAUCE
This sauce is great on ribs, chicken, burgers, pork chops and steaks. This recipe is one of my brothers that he swears is his own creation. It is a Hot and Spicy BBQ Sauce, you don't have to use as much of the hot sauce as the recipe calls for. That is the way my brother likes it, "Nice and Hot".
