OPEN-FACED HAMBURGERS
This kid-friendly recipe is one of my favorites. A Swedish co-worker passed it on to me when we worked together in Iowa.

- In a large bowl, combine the cheese, green pepper, milk, mustard and salt. Crumble beef over mixture and mix well; shape into six patties. , Spread cut sides of buns with butter; top each with a patty. Place on a baking sheet. Bake at 450° for 14-17 minutes or until a thermometer reads 160° and juices run clear.

Steps:
- Preheat grill.
- Heat oil in a large nonstick skillet over medium-high heat.
- Add onion, and cook for 5 minutes or until golden.
- Add mushrooms and salt; cook 5 minutes, stirring constantly.
- Add vinegar, remove mixture from pan.
- Set aside.
- Combine the paprika and the next 4 ingredients (paprika through black pepper).
- Divide the ground meat into 4 equal portion, shaping each into a 1/2 inch thick patty.
- Coat patties with spice mixture.
- Grill patties 4 minutes on each side or until done.
- Place burger patties on muffin halves, and top each burger with 1/4 cup onion mixture.

- In a large bowl, combine the onion, garlic, thyme and 1/2 cup cheese. Crumble beef over mixture and mix well. Shape into two oval patties., In a large skillet, cook burgers over medium heat for 5-6 minutes on each side or until meat is no longer pink. Meanwhile, prepare Texas toast according to package directions., Drain burgers; set aside and keep warm. Add the tomato sauce, brown sugar, Worcestershire sauce and steak sauce to the skillet. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened. Return burgers to skillet; turn to coat. Sprinkle with remaining cheese. Serve burgers on toast.

DAD'S HALF-HAMBURGERS
A Ground beef mixture that is spread on both halves of a hamburger bun, broiled, and served open faced. Half Hamburgers come from my childrens' Dad's family. It's a mixture of all the things you'd probably put in/on a hamburger, spread on the halves of the hamburger buns. It's so easy that kids can make it, although they'll need adult help with the broiling. Men love it too, so it would be great for a poker game or Superbowl party. Get "moosh-ing" and enjoy!

- Mix the ingredients in a bowl; "moosh" by hand - clean hands, if you please - until spreadable.
- Spread mixture hamburger buns; both bottoms and tops.
- Place on an ungreased cookie sheet.
- Broil on second rack of oven for 3 - 5 minutes.
- Check center with small knife for doneness.
- Times may vary slightly from oven to oven.
OPEN-FACED BURGERS WITH HORSERADISH-CHEESE SAUCE

- In a small saucepan combine the garlic paste and the butter and heat the mixture over moderately low heat, stirring, until the butter is melted. Brush the cut sides of the roll with the butter mixture and toast the roll halves lightly. In a saucepan combine the sour cream and the Cheddar, heat the mixture over moderately low heat, stirring occasionally, until the cheese is melted, but do not let it boil, and stir in the horseradish, the pickle, and the jalapeño chili. In a heavy skillet (preferably cast-iron) heat the oil over moderately high heat until it is hot but not smoking and in it cook the patties, seasoned with salt and black pepper, turning them once, for 8 minutes for medium-rare meat. Transfer the burgers to the roll halves and spoon the horseradish-cheese sauce over them.

- In 12-inch skillet, cook ground beef, bell peppers and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in 1/4 cup of the dressing.
- Spread remaining 1/4 cup dressing on cut sides of bread. Place both halves, cut sides up, on ungreased large cookie sheet. Broil 4 to 6 inches from heat 3 to 5 minutes or until lightly toasted. Remove bread from broiler. Spread beef mixture on cut halves of bread. Top with cheese.
- Return to broiler; broil 4 to 6 inches from heat 2 to 3 minutes or until cheese is melted. Cut each half into 2 pieces.

- In a large skillet, cook ground beef and diced onion over medium heat. Stir occasionally and cook until meat is no longer pink.
- Sprinkle cornstarch over cooked meat and stir in. Add diced tomatoes, garlic, Worestershire sauce, oregano and salt. Stir well to combine and cook for about 5 minutes or until it is slightly thickened.
- Add 1/2 cup of the shredded cheddar cheese and stir well to combine. Cook for another minute or so until the cheese is melted.
- Split the hamburger buns in half. Place the split buns on a cookie sheet with the cut side up. Divide the meat among the 8 halves of the buns. Top each one with 1 tablespoon of shredded cheese.
