1 1/2 tablespoons grated orange rind
4 cups fresh orange juice
1/2 cup kosher salt
1/4 cup packed brown sugar
1/4 cup low sodium soy sauce
2 cups ice cubes
1 (3 lb) boneless pork loin, trimmed
1/4 cup orange marmalade
2 tablespoons fresh orange juice
1 tablespoon low sodium soy sauce
orange slice
parsley sprig

Steps:

  • In a small saucepan, combine 1 cup water and orange rind; bring to a boil; remove from heat; pour into a large bowl; cool to room temperature.
  • Add 2 cups water, 4 cups juice, salt, sugar, and ¼ cup soy sauce; stir until the salt and sugar dissolve.
  • Pour salt mixture into a 2 gallon zip-lock plastic bag; add in ice and pork; seal.
  • Refrigerate 24 hours, turning bag occasionally.
  • Preheat oven to 450°.
  • Combine marmalade, 2 tablespoons juice, and 1 tablespoon soy sauce; bring to a boil; cook 10 seconds or until marmalade melts; remove from heat.
  • Remove pork from bag; discard brine.
  • Pat pork dry with paper towels; place pork on roasting pan coated with cooking spray.
  • Bake for 15 minutes; decrease temperature to 325°, bake 45 minutes.
  • Brush marmalade mixture over pork; bake 5 minutes or until thermometer inserted into thickest portion reads 155°.
  • Place pork on a platter; cover with foil; let stand 15 minutes.
  • Garnish with orange slices and parsley.

1/2 cup soy sauce
4 shallots, sliced
1/2 cup white wine
2 tablespoons salt
1 tablespoon sugar
1/4 cup olive oil
2 star anise, crushed
1 sprig marjoram
1 sprig rosemary
1 (3 to 4 pound) pork loin (boneless center cut)
1 cup orange juice
1 cup sugar
2 ounces ginger, chopped
1 small jalapeno, chopped
1 small orange, zested
2 tablespoons rice wine vinegar
2 ounces unsalted sweet butter, cubed
1 teaspoon salt

Steps:

  • Combine all ingredients and pour over the pork. Refrigerate for 24 to 48 hours. Preheat oven to 375 degrees F. In hot saute pan with 2 tablespoons of peanut oil, brown pork loin on all sides. Place it in the oven for 30 to 45 minutes until internal temperature reaches 150 degrees F. Remove pork from the oven; let rest on a rack for 10 minutes. Slice.
  • Reduce orange juice to 1/3 cup. Combine sugar, ginger, jalapeno, orange zest and rice wine vinegar. Cook in a 1-quart pot until it's a medium-dark amber color. Stir in orange juice, butter and salt. Strain through a sieve and keep warm. Arrange pork on serving platter and drizzle with sauce.

Pork roasts are an easy and affordable option for feeding a crowd, but the lean meat can become dry in the oven. This recipe solves that problem with a super flavorful brine full of bright, warming flavors like orange, ginger, star anise and dried chilies.

2/3 cup kosher salt
1/3 cup sugar
2 2-inch pieces fresh ginger, quartered lengthwise and smashed
3 cloves garlic, smashed
12 star anise pods
8 dried chiles de arbol, torn into pieces
1 orange, quartered
1 bone-in, center-cut pork roast (8 ribs; about 7 pounds), bones frenched
1/2 cup fresh orange juice (from 2 oranges)
1/3 cup hoisin sauce
1/4 cup soy sauce
1 teaspoon sugar

Steps:

  • Brine the pork: Combine the salt, sugar, ginger, garlic, star anise and chiles in a large pot with 4 cups water. Bring to a simmer, stirring occasionally to dissolve the sugar and salt. Remove from the heat and let cool completely. Squeeze the orange juice into the brine, then add the squeezed orange pieces and 2 cups cold water.
  • Place the pork on a cutting board, fat cap-side down and make a few slits between the ribs with a sharp knife; transfer to a large pot or resealable plastic bag. Add the brine, plus up to 2 cups more water if needed to cover the pork. Cover and refrigerate overnight.
  • Preheat the oven to 375˚ F. Remove the pork from the brine and pat very dry. Let stand at room temperature for 30 minutes. Set a rack in a roasting pan and place the pork on the rack, fat-side up. Roast until a thermometer inserted into the center registers 115˚ F to 120˚ F, about 1 hour 15 minutes. Remove from the oven and increase the temperature to 425˚ F.
  • Meanwhile, make the glaze: Combine the orange juice, hoisin sauce, soy sauce and sugar in a medium nonstick skillet over medium heat. Simmer, stirring, until thickened, 5 to 8 minutes. Set aside about half of the glaze for serving.
  • Brush some of the remaining glaze over the roast. Return to the oven and continue cooking, brushing with more glaze every 5 minutes, until the thermometer registers 135˚ F to 140˚ F, 15 to 25 more minutes. Transfer the pork to a cutting board and let rest 20 to 30 minutes before carving. Serve with the reserved glaze and any collected juices.

2 (1 pound) pork tenderloins
½ cup orange juice concentrate, thawed
3 large cloves garlic, minced

Steps:

  • Dissolve salt and sugar in 1 quart of water in a bowl. Add meat and let stand 45 minutes. Rinse, then pat dry.

4 cups ice
1 bay leaf
1 small bunch thyme
1/2 orange, zest removed in strips and fruit reserved for garnish
12 whole peppercorns, plus freshly ground pepper
1 boneless pork loin (2 pounds)
Coarse grain mustard, for serving

Steps:

  • Prep:Bring water, sugar, and salt to a simmer in a large pot, stirring to dissolve. Remove from heat. Add ice, bay leaf, thyme, orange zest, and peppercorns, and let cool completely. Place pork in a nonreactive dish, and completely cover with brine. Refrigerate at least 6 hours and up to 8 hours. Remove pork from brine, and let stand at room temperature 30 minutes.   • In a large bowl or plastic bag, combine 4 cups water, salt, sugar, peppercorns, coriander, oregano, and bay leaf and stir until sugar and salt dissolve. Add pork and refrigerate at least 1 hour (or up to 8 hours).
  • Set up a grill for indirect cooking (see note below) over medium-high. Clean and lightly oil hot grill. Remove pork from brine, pat dry, and grill directly over heat source until brown all over, 15 minutes. Move to cooler side of grill. Since everyone seems to be doing the brining thing, I thought you all might like this roast. I got the recipe several years ago on the FoodTV network - can't remember which show. The low temp isn't a typo - it cooks at 250 degrees. The flavor and taste are exceptional. Great for a Sunday dinner with garlic mashed potatoes and Sauerkraut with Apples #53036 - this recipe came from the same show. Hope you enjoy - it's a favorite of ours.

8 cups water
1/4 cup coarse salt
3 tablespoons sugar
3 bay leaves
2 whole cloves
1 cinnamon stick
2 teaspoons whole black peppercorns
1 clove garlic, smashed
7 rib pork loin roast (or whatever size your family needs)
salt and pepper, to taste.
6 -8 slices bacon (enough slices to cover the top of roast)

Steps:

  • Bring water, salt and sugar to boil.
  • Add bay leaves, cloves, cinnamon stick, peppercorns and garlic.
  • Simmer 5 minutes.
  • Remove from heat and let cool to room temp.
  • Pour over pork roast and marinate a minimum of 8 hours or overnight.
  • Drain.
  • Pre-heat oven to 250 degrees.
  • Season meat with salt and pepper.
  • Place in a roasting pan with meat side down.
  • Drape bacon slices over the roast so the top and sides are covered with the bacon.
  • Bake in pre-heated oven until internal temperature of the meat is 140 degrees.
  • (Approx. 2 hours+ depending on roast size.) Let roast rest about 20 minutes before slicing.
  • I've found it easiest to cut with an electric knife with the meat down and ribs up- slicing between the rib bones.
