1/4 cup butter or margarine, softened

Steps:

  • Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
  • In medium bowl, stir all ingredients until blended. Pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.

1 teaspoon sugar
1 cup plus 1 tablespoon butter flavored shortening, chilled
1/3 cup ice water
1 tablespoon vinegar
1 egg, beaten
1 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 1/2 cups water
3 egg yolks, slightly beaten
2 tablespoons butter
1 teaspoon finely shredded orange peel
1/4 cup fresh squeezed orange juice
4 ounces cream cheese
1/2 cup powdered sugar
1 cup whipped topping
Whipped Topping, garnish
Shredded coconut, garnish

Steps:

  • Pie Crust:
  • Chill all ingredients, including the flour and vinegar. Combine the flour, salt and sugar. Cut in shortening with a pastry blender until the mixture resembles cornmeal. In another bowl, mix water and vinegar with the beaten egg. Add the liquid mixture, 1 tablespoon at a time, to the flour mixture, tossing with a fork to form a soft dough.
  • Filling:
  • In saucepan combine sugar, cornstarch, and salt. Gradually stir in water. Cook and stir until thickened and bubbly. Reduce heat, cook and stir 2 minutes more. Remove from heat. Gradually stir 1 cup hot mixture into yolks. Return mixture to saucepan, bring to a gentle boil. Cook and stir 2 minutes more. Remove from stove. Stir in butter, orange peel and orange juice.
  • Turn into pastry shell. Refrigerate.
  • Meanwhile prepare next layer by combining cream cheese and powdered sugar until well blended. Beat in the whipped topping until light and fluffy. Spread over orange filling.
  • Top with whipped topping and sprinkle with shredded coconut as desired. Chill until serving.

  • Combine sugar, flour, milk and cream in a heavy saucepan. Cook over medium-high heat, stirring constantly, until thick and bubbly. Continue to boil for one minute. Remove from heat.

1 cup sugar
4 eggs

This classic southern dessert is very rich and sweet and should be served in small wedges.

Number Of Ingredients 8

1 All Ready Pie Crust (half of 15-ounce package), room temperature
1/2 cup (1 stick) unsalted butter
1 1/2 cups sugar
3 eggs, beaten
4 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1 1/2 cups sweetened shredded coconut
Additional sweetened shredded coconut (optional)

Steps:

  • Preheat oven to 450°F. Press out folds in crust. Press crust into 9-inch glass pie plate. Trim and crimp edges. Bake crust until light golden, about 9 minutes. Transfer to rack and cool. Reduce oven temperature to 350°F.
  • Melt butter in heavy medium saucepan over low heat. Add sugar and stir until mixture is heated through. Transfer to bowl. Add eggs, lemon juice and vanilla and whisk to combine. Stir in 1 1/2 cups coconut.
  • Pour filling into crust. Bake until filling is deep golden brown and set, about 40 minutes. Cool on rack. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.) Garnish with shredded coconut, if desired.
