EASY CRANBERRY ORANGE RELISH



Easy Cranberry Orange Relish image

A delightful change from the ordinary...the only relish most of my family will eat! Relish can be chilled up to 3 days.

1 navel orange
1 (12 ounce) package fresh cranberries
½ cup white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  • Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  • Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.

1 Bartlett pear, cored and cut into large chunks
1/2 cup light brown sugar
Pinch kosher salt
3 tablespoons toasted and coarsely chopped pecans

Steps:

  • Wash and dry the orange. Cut the orange into small wedges, including the peel, and put in a food processor. Add the cranberries, pear, sugar, and salt. Pulse until coarsely chopped. Transfer to a bowl, cover, and refrigerate for at least 2 hours and up to 2 days. Just before serving, stir in the pecans.

1 (12-ounce) bag fresh cranberries
1/2 cup sugar
3/4 cup port
2 teaspoons orange zest
2 tablespoons freshly squeezed orange juice

Steps:

  • Cook the cranberries and sugar in a small saucepan over medium 5 minutes, or just until sugar melts. Stir in the port and cook over medium-low 10 to 15 minutes, or until thickened and the cranberries begin to pop. Remove from the heat and stir in the orange zest and orange juice. Let cool completely. Cover and refrigerate until ready to serve.

3/4 cup water
2 cups cranberries, washed and picked over (1 bag)
2 small navel oranges, skin and all
2 tablespoons minced candied ginger
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1/4 cup Grand Marnier

Steps:

  • Place cranberries and oranges in a food processor. Pulse until consistency that suits you.
  • Combine in a saucepan all other ingredients, except Grand Marnier. Bring to a boil and simmer 30 minutes.
  • Cool and add Grand Marnier. Will keep several months refrigerated.
