Learn how to make my Pain Perdu Recipe the "Original" French Toast. An easy recipe for a delicious breakfast treat that will put any stale bread to good use!

1 day old baguette cut into 8 slices (2in thick)
3 eggs
1/2 cup (120 ml) milk
1 teaspoon (5 ml) sugar
¼ teaspoon (1.25 ml) salt
2 teaspoon (10 ml) vanilla
1 tablespoon (15 ml) orange zest
2 tablespoon (30 ml) syrup
2 tablespoon (30 ml) butter
1 tablespoon (15 ml) orange zest
A sprinkle of orange zest for garnish

Steps:

  • Slice baguette into 2" thick slices set aside.
  • In a shallow bowl add the eggs, milk, sugar, salt, whisk that together and then add the vanilla and orange zest, whisk to combine.
  • Then place bread in the bowl to soak for at least a total of 6 mins (3 mins on each side)
  • While bread in soaking you can heat the syrup. In a sauce pan heat 2 tablespoon (30 ml) of syrup, 2 tablespoon (30 ml) butter and 1 tablespoon (15 ml) orange zest until warm. Keep on a very low flame just to keep warm.
  • Then heat 1 tablespoon (15 ml) of butter in a large non-stick skillet. Place soaked bread in pan, be careful not to crowd them so they can brown. Once browned on 1 side, flip them on the other side and cook for another 1-2 mins until golden brown. Then turn them on their sides to brown a bit, making sure the raw egg is being cooked on all sides.
  • Then remove from a pan and place on a serving platter. Drizzle the orange syrup over the bread and top with some freshly grated orange zest to garnish. Enjoy!

2 tablespoons honey
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400°. In a small bowl, mix the butter, honey and cinnamon. Pour into a greased 13x9-in. baking pan; spread to coat bottom of pan. , In a shallow bowl, whisk the eggs, orange juice and, if desired, salt. Dip both sides of bread in egg mixture. Mom's Orange French Toast is the best French Toast ever! Orange extract provides delicious flavor.

2 eggs ((extra large; or 3 large))
1/4 cup milk ((or half & half))
3 sprinkles salt
1 1/2 teaspoons orange extract
4 slices bread ((about 1/2-inch thick))
1 1/2 tablespoons salted butter ((divided use))
maple syrup ((for serving))
orange slices ((optional))

Steps:

  • In a small mixing bowl, add the eggs, milk, salt and orange extract. Beat well with a fork or whisk.
  • Stack your bread in the bowl. Coat both sides of each slice with the egg mixture, letting it soak in for a bit. (Using a spatula, you can take turns carefully transferring the bottom piece of bread to the top of the stack and keep going, then flip the bread and repeat.) If there is leftover egg mixture, pour some on each piece when you start cooking.
  • Heat a skillet or griddle to medium high. (If using an electric skillet, set it to 375 degrees F.) Melt a tablespoon of butter in the pan and spread it around with a spatula to coat the pan. Cook 3-4 slices of French toast at a time, depending on what will fit. Start checking each piece after 3-4 minutes on the first side.
  • Flip each slice when it is starting to brown. Add another 1/2 tablespoon of butter to the pan and use your spatula to disperse it so it flows underneath the bread. Continue cooking the French Toast on the second side, until it is browned to your liking.
  • Serve the French toast with maple syrup and orange slices, if desired.

1/2 cup heavy cream
1/2 cup milk
2 tablespoons sugar
1/4 cup butter, divided
1 teaspoon vanilla extract
Pinch kosher salt
1/2 cup semisweet chocolate chips or chopped chocolate
2 eggs
6 slices white bread, crusts removed and cut into triangles

Steps:

  • In a small pot over low heat, add 1/4 cup cream, milk, sugar, 3 tablespoons butter, vanilla, and salt and bring to a simmer. Put the chocolate into a medium bowl and pour in the cream mixture. Let sit until the chocolate is melted, about 5 minutes. Add the eggs and mix until well combined.
  • Grease the baking dish with the remaining tablespoon of butter, and it line with the bread slices, overlapping slightly. Pour the chocolate mixture over the bread, making sure to cover the tips. Push the bread down with your fingers to coat the bread completely. Refrigerate, covered, for at least 2 hours. Remove from the refrigerator 30 minutes before baking.
  • Preheat the oven to 375 degrees F.
  • Bake until the custard sets and the bread turns golden at the edges, about 30 minutes.
  • Add the remaining cream to a chilled bowl and whisk until soft peaks form. Serve the French toast on individual plates with a dollop of cream.

2 tablespoons orange liqueur
1 teaspoon orange zest
12 slices white bread

Steps:

  • In a large bowl, combine eggs, sugar, milk, brandy and orange zest. Beat until thick and foamy.
  • Pour mixture into a shallow pan.
  • Soak bread slices in the mixture for 1 to 2 minutes on each side until they are thoroughly soaked through.
  • Heat a griddle or frying pan over medium heat. Lightly spray griddle with cooking spray.

Yes, this is French toast, but a superior one. Unlike normal French toast this batter cooks into a custardy, crispy coating that leaves the bread creamy and oh so good. The use of good egg bread is a must here. Homemade is best, however store bought (such as Hawaiian bread) will work in a pinch.

4 (1/2 inch) slices egg bread
1 egg
5 tablespoons unsalted butter
3 tablespoons white sugar
1 pinch salt
½ teaspoon ground cinnamon
1 pinch ground nutmeg
⅓ cup all-purpose flour
¾ cup milk
¾ teaspoon vanilla extract

Steps:

  • Cut the bread and place on a wire rack to dry out a little as you prepare the batter.
  • Whisk the egg to blend. Melt 3 tablespoons of the butter in a saucepan or on the stovetop and allow to cool slightly. Whisk the sugar, salt and spices into the egg. When the butter has cooled slightly, slowly drizzle it in to the egg, whisking all the time. A little at a time, add the flour to the egg mixture to make a smooth thick paste. After it is all added, slowly blend in the milk and finally the vanilla. Whisk until just smooth and set aside.
  • Heat the remaining butter in a large skillet over medium heat. Dip a slice of the bread in the batter and allow to soak for 30 seconds, no more. Remove from the batter and allow the excess to drip off, back into the bowl. Place the battered slice in the skillet. Repeat with the remaining slices. Cook until golden on one side and then flip to brown the other. Serve immediately--a fresh squeeze of lemon juice and a good dusting of powdered sugar is traditional.

1/2 cup milk
2 teaspoons orange zest (from about 1/2 medium orange)
1/4 teaspoon ground cinnamon
4 (1/2-inch thick) slices whole grain bread or country white bread, preferably 1 day old
1 medium orange
3/4 cup sugar
1/2 cup water
1/4 cup orange liqueur or fresh orange juice
2 star anise pods
1 cinnamon stick or 1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter, at room temperature
1 cup (about 6 ounces) fresh blueberries
2 tablespoons finely chopped fresh mint leaves
Powdered sugar, for dusting

Steps:

  • For the toast: In a medium bowl, whisk the eggs, milk, orange zest, and cinnamon together until smooth. Pour the mixture into a 9-by-13-inch casserole. Add the bread slices in a single layer. Let the bread soak for 10 minutes, turning once.
  • For the syrup: Peel the orange and remove the white pith. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and place in a small saucepan. Add the sugar, water, orange liqueur or orange juice, if using, star anise, and cinnamon stick. Bring the mixture to a boil over medium-high heat, stirring constantly, until the sugar has dissolved. Simmer for 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Remove the star anise pods and cinnamon stick and discard.
  • Preheat a griddle or large nonstick skillet over medium-low heat and add the butter. Using a spatula, remove the bread slices from the egg mixture, allowing any excess liquid to drain. Cook until golden, about 3 minutes each side. Place on 4 serving plates and drizzle with the orange syrup and orange segments. In a small bowl, toss the blueberries and mint together and spoon on top of the French toast. Dust with powdered sugar and serve.

stale wholegrain or multigrain bread (sliced), or toast if no stale bread is available
I have made this recipe for friends on low-fat diets using just egg whites (one can also use 1/2 the eggs whole and the other 1/2 just egg whites).

Steps:

  • Break the eggs in a small bowl. Pour in equal parts milk and orange juice, until you reach a desired consistency. Whip these three ingredients together, taking care to break up the whites of the eggs (because they tend to want to stay together). If stale bread is not available, place sliced bread in the toaster (toast allows bread to stay stiff, so it won't fall apart when placed in the liquid egg mixture). Place one piece of the bread into the small bowl and let it soak for a little bit, then flip so that both sides are equally soggy. Place the bread on a heated non-stick skillet. As one piece of bread is cooking on the skillet, soak the next piece in the egg-milk-orange juice mixture. Repeat! It is up to the cook if s/he wants to provide maple syrup or other garnishes. Personally, I like to eat these plain. With the nice and subtle orange flavor, they really don't need anything else!

LOUISIANA STYLE FRENCH TOAST (OR PAIN PERDU)

I learned how to make this rich, gooey, caramel-ly version of French Toast when I lived in Louisiana. It is very sweet - feel free to decrease the amount of sugar if you wish. There is no milk in this version. If you don't have a good nonstick pan, you may need to grease your pan with some oil or butter rather than the nonstick spray, as the sugar caramelizes and can be a little messy to clean.
