Tired of the flat flavor of store bought orange gelatin? You can make your own with this simple recipe of gelatin, orange and lemon juice and zest and sugar.

4 ½ teaspoons unflavored gelatin
¼ cup cold water
1 cup boiling water
1 ¾ cups orange juice
2 teaspoons grated orange zest
1 teaspoon grated lemon zest
¾ cup white sugar
½ cup lemon juice
1 pinch salt

Steps:

  • In a medium bowl, soak gelatin in cold water for 5 minutes. Add boiling water, stirring until gelatin dissolves.
  • To 3 tablespoons of the orange juice add the orange and lemon zest; set aside for 5 minutes.
  • Strain the zest out of the orange juice and discard the zest. To the gelatin add all of the orange juice, sugar, lemon juice and salt. Stir until well blended and set aside to cool.
  • Pour cooled mixture into a 4-cup mold which has been rinsed in cold water. Cover and refrigerate to congeal.

  • In a small bowl, dissolve gelatin in boiling water. Stir in applesauce. Pour into four dessert dishes. Add oranges. Cover and refrigerate for 2 hours or until set.

  • Cut each orange in half widthwise; carefully remove fruit from both halves, leaving shells intact. Set shells aside. Section orange pulp, then dice (discard orange juice or save for another use). , In a large bowl, dissolve gelatin in boiling water. Add frozen yogurt; stir until melted. Fold in orange pulp. Refrigerate until thickened. spoon into reserved orange shells. Cover and freeze for 3 hours.

Steps:

  • In a small saucepan, combine 14 cup of the blood-orange juice and the salt. Bring to a boil and immediately remove from heat. Add the gelatin powder and stir until dissolved. Add the remaining juice and mix thoroughly.
  • Pour the mixture into a 4-cup mold, individual molds or an ice-cube tray. Refrigerate until firm, at least 4 hours.

12 ounces flavorful fresh ripe apricots, pitted
1/2 cup granulated sugar
1 1/4 cups freshly squeezed orange juice
1 tablespoon gelatin powder
light cream, to serve

Steps:

  • Heat the apricots, sugar and 1/2 cup of the orange juice, stirring until the sugar ha dissolved. Simmer gently until the apricots are tender.
  • Press the apricot mixture through a nylon sieve into a small measuring cup using a spoon.
  • Pour 3 tablespoons of the orange juice into a small heatproof bowl, sprinkle the gelatin over it and let stand for about 5 minutes, until softened.
  • Place bowl over a saucepan of hot water and heat until the gelatin has dissolved. Slowly pour into the apricot mixture, stirring constantly. Measure up to 2 1/2 cups with the reamining orange juice.
  • Pour the apricot mixture into four individual dishes and chill until set. to serve, pour a thin layer of cream over.

6 cups freshly squeezed blood-orange juice
3 envelopes unflavored gelatin
2 1/2 cups sugar
Candied Blood Orange Zest
Pomegranate seeds, for garnish

Steps:

  • Strain the juice through a double layer of damp cheesecloth or a paper coffee filter. Measure 3 cups of the juice. Sprinkle gelatin over to soften.
  • Meanwhile, bring the remaining 3 cups of juice to a boil in a small saucepan. Add the sugar, stirring to dissolve. Remove from heat as soon as it dissolves, and stir in the juice and gelatin mixture. Pour into a glass bowl, and allow to cool. Cover with plastic wrap, and refrigerate overnight. Garnish with zest and pomegranate seeds.

3 eggs
⅓ cup vegetable oil
1 cup orange crush
5 Tablespoons orange Jello dry gelatin mix
¼ teaspoon orange food coloring
⅛ teaspoon orange extract
8 orange fruit jell slices (cut into thirds (optional for topping cupcakes))
1 cup butter (softened to room temperature)
3 cups powdered sugar
1 Tablespoon orange crush
2 Tablespoons orange Jello dry gelatin mix
few drops of orange extract ((optional for more flavor))
2-3 drop of orange food coloring for more intense color

Steps:

  • Heat oven to 350 degrees and line muffin tin with cupcake liners.
  • Beat together cake mix, eggs, oil, orange crush, jello, orange food coloring and orange extract. Beat on medium speed for about 2 minutes until well blended.
  • Fill cupcake liners about 2/3 full. Bake for 17 - 18 minute or until toothpick inserted comes out clean.
  • Remove from oven and remove from baking tin, cool completely.
