ORANGE SPICED TEA COOKIES

Number Of Ingredients 8

1 1/4 cup flour
1/4 teaspoon salt
1 TB tea (I suggest 2 tea bags of Good Earth's Sweet and Spicy herbal and black tea)
1 stick butter (8 TB)
1/4 cup granulated sugar
1/4 cup confectioners' sugar
1-2 Tablespoons orange zest
2 Tablespoons orange juice

Steps:

  • Combine the flour, salt, and tea. Tea from tea bags should be ground finely and won't need additional processing. Loose tea leaves may need to be ground before adding to the dry ingredients.
  • In a stand mixer (or using a hand held mixer) cream the butter and sugars together until light. Add the zest and orange juice. Mix until well blended.
  • Make a log shape with the dough, wrap in plastic wrap and refrigerate for 30 minutes.
  • Preheat oven to 350 degrees F. Slice cookie dough in 1/4 inch slices. Place on a parchment lined cookie sheet. Bake for 10-12 minutes. Cool on a wire rack.

I've been making these cookies since I was a little girl. When my mother retired from baking the holiday cookies and passed the mantle on to me, she also passed along this recipe. 1 cup butter, softened
1-1/2 cups sugar
1 large egg
2 tablespoons dark corn syrup
4 teaspoons grated orange zest
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
ICING:
4 cups confectioners' sugar
3 tablespoons meringue powder
5 to 6 tablespoons warm water
Assorted decorations: raisins, cranberries and sprinkles

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, corn syrup and orange zest. In another bowl, whisk flour, baking soda, cinnamon, salt and cloves; gradually beat into creamed mixture. Divide dough in half., On a lightly floured surface, roll each portion of dough into a 9-in. square. Cut into 18 rectangles, 3x1-1/2-in. each. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until edges are light golden. Remove from pans to wire racks to cool completely., For icing, in a large bowl, combine confectioners' sugar, meringue powder and enough water to reach a piping consistency. Beat on high speed with a portable mixer 10-12 minutes or on low with a stand mixer 7-10 minutes or until peaks form. Frost cookies. Using a #3 round tip, pipe designs on cookies; decorate as desired.

1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground cinnamon
¼ teaspoon salt
½ cup shortening
½ cup butter
1 cup white sugar
½ cup finely chopped almonds
3 tablespoons grated orange zest
2 cups sifted confectioners' sugar
⅔ cup orange marmalade
2 tablespoons orange juice
½ cup sliced almonds for garnish

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Combine the flour, baking powder, nutmeg, cloves, cinnamon, and salt.
  • Beat the shortening and butter with an electric mixer until smooth. Add the sugar and beat until combined. Mix in the chopped almonds and orange zest. Gradually add the flour mixture to the butter mixture and stir until combined.
  • Transfer the cookie dough to a lightly floured surface and roll it into a rectangle about 13 inches long. Cut the dough into 3 1/2-inch rectangles using a fluted pastry wheel or sharp paring knife. Place the cookies on an ungreased baking sheet.
  • Bake in the preheated oven until lightly browned, about 12 minutes. Allow the cookies to cool slightly on the baking sheets, and then transfer them to a wire rack to cool completely.
  • Combine the sifted confectioners' sugar, the orange marmalade, and the orange juice and stir well. Spread the glaze on the cookies and garnish with sliced almonds, if desired.

1/2 cup/115 grams cold unsalted butter, cut into ½-inch cubes, plus more at room temperature for brushing the pan
1 1/3 cups/175 grams all-purpose flour
3/4 cup/80 grams almond flour
3/4 cup packed/160 grams dark brown sugar
1 teaspoon kosher salt (Diamond Crystal)
1/4 teaspoon ground cloves
1/4 teaspoon freshly ground black pepper
1/4 cup/57 grams heavy cream
6 tablespoons/142 grams orange marmalade
1 whole orange
Confectioners' sugar, for dusting

Steps:

  • Position a rack in the middle of the oven and heat the oven to 350 degrees. Butter a 9-inch springform pan.
  • In a medium bowl, combine the flour, almond flour, brown sugar, salt, cloves and black pepper. Rub the butter into the flour mixture using your fingers until small pebbles form. (Alternatively, use a food processor to pulse the dry ingredients with the butter.) Pour the cream over the mixture, stir just until combined and squeeze until the dough forms ¾-inch clumps. Transfer a little less than half of the crumble (1½ loosely packed cups/210 grams) to a small bowl and refrigerate.
  • Transfer the remaining dough to the buttered pan and flatten into an even layer by pressing into the bottom of the pan with a glass. Bake on the middle rack until the edges are golden brown and begin to pull away from the sides of the pan, about 22 to 25 minutes. Cool in the pan for at least 10 minutes. If you tap the surface of the cookie, it should sound hollow.
  • Spread the orange marmalade in an even layer over the surface. Sprinkle the reserved crumble over the top. Return to the oven and bake until the top is golden brown, about 35 minutes. Zest the orange directly over the top while the crumble is still warm. Cool completely in the pan, then run a knife along the edges of the crumble before releasing the sides. Dust with confectioners' sugar, cut into wedges and serve.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Beat both sugars, 1/2 cup plus 2 tablespoons butter, and cream cheese together until creamy, at least 5 minutes. Add egg and mix well. Mix in molasses. Mix in vanilla, orange, and maple extracts.
  • Stir flour, orange zest, cinnamon, baking soda, salt, cloves, and nutmeg together in another bowl until well combined and no clumps of zest remain. Add the dry ingredients to the wet ingredients and stir together just until incorporated; don't overmix.
  • Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
  • Bake in the preheated oven until edges are golden, about 12 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

1 can (12 ounces) frozen orange juice concentrate
1/2 cup sugar
2 tablespoons lemon juice
5 teaspoons instant tea
1 teaspoon whole cloves

Steps:

  • In a large saucepan, combine water, orange juice concentrate, sugar, lemon juice and tea. Tie the cloves in a small cheesecloth bag; add to saucepan. Simmer, uncovered, for 15-20 minutes. Remove spice bag. Serve hot. Store leftovers in glass container in refrigerator.

I found this recipe in a book I picked up at a thrift shop. I'm not really a tea drinker so like to find ways to get those good anti-oxidants without the tea taste. This is all orange & spice so I quite liked it. I didn't have whole cloves so made mine with a dash of ground cloves instead. I had one cup warm & then put the rest in the fridge to have iced, it was nice both ways.

1 1/4 liters boiling water
50 g sugar
10 cloves
2 small cinnamon sticks
4 tea bags
4 tablespoons orange juice
2 1/2 tablespoons lemon juice
1/4 orange, rind of (try not to get the pith as this will make it bitter.)
honey
cinnamon stick, to serve

Steps:

  • Combine water, sugar, cloves & cinnamon in a saucepan, mix & bring to the boil.
  • Remove from heat & add tea bags, infuse for 4 minutes.
  • Strain & stir in remaining ingredients.
  • Place over a low heat to keep warm but do not boil.
  • Discard orange peel & add honey to taste, (I added about 1 tsp per cup).
  • Serve with long cinnamon sticks as mixers.
