This peas recipe takes just 5 minutes! Cooking frozen peas with garlic and lemon makes them taste incredible. It's an easy side dish that everyone loves!

2 cups frozen peas (about 10 ounces)
2 garlic cloves
1 tablespoon salted butter
1 tablespoon olive oil
1/4 teaspoon kosher salt
Fresh ground pepper
Zest of 1/2 lemon, optional

Steps:

  • Rinse the peas under warm water and shake off excess liquid.
  • Smash and peel the garlic cloves.
  • Add the butter and olive oil to a large skillet over medium-high heat. Add the smashed garlic and frozen peas and cook for 2 minutes until warmed through but still bright green.
  • Season with the kosher salt, fresh ground pepper and lemon zest. Discard the garlic cloves and serve immediately.

1 pound fresh sugar snap peas, trimmed
1/4 cup hoisin sauce
1/4 cup reduced-sodium soy sauce
2 tablespoons agave nectar
1 tablespoon lime juice
2 teaspoons rice vinegar
2 teaspoons Sriracha chili sauce or 1 teaspoon hot pepper sauce
8 Chinese or napa cabbage leaves, julienned
1 tablespoon sesame seeds, toasted

Steps:

  • In a large saucepan, bring 6 cups water to a boil. Add peas; cover and cook for 1-2 minutes. Drain and immediately place peas in ice water. Drain and pat dry., For dressing, in a small bowl, whisk the hoisin sauce, soy sauce, agave nectar, lime juice, vinegar and chili sauce. In a large serving bowl, combine the peas, cabbage and sesame seeds. Add dressing; toss to coat.

1 lb sugar snap pea, trimmed
3 tablespoons garlic-flavored olive oil
1/4 cup soy sauce, low sodium
1/4 teaspoon sesame oil
2 drops chili oil
1/4 teaspoon packed brown sugar
2 tablespoons toasted sesame seeds

Steps:

  • Preheat oven broiler, and move rack to top position.
  • Place the snap peas in a baking dish, and drizzle olive oil and toss to coat. Spread the snap peas in a single layer.
  • Broil the snap peas about 5 minutes.
  • Meanwhile, mix together the soy sauce, sesame oil, chili oil, brown sugar, and sesame seeds in a large bowl. When snap peas are removed from the oven, toss them immediately with the sauce.

2 tablespoons rice wine
1 tablespoon brown sugar
½ teaspoon cornstarch
1 tablespoon vegetable oil
1 tablespoon minced fresh ginger root
1 tablespoon minced garlic
1 pound beef round steak, cut into thin strips
8 ounces snow peas

Steps:

  • In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.
  • Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to a boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Asian Fried Rice with Peas image

This dish is an excellent accompaniment to almost any Asian entrée, such as Chicken with Ginger and Snow Peas (page 157) or Pacific Rim Flank Steak (page 180). Add some chicken, shrimp, beef, or pork cooked without salt to transform this into a main dish.

Yield Serves 8; 1/2 cup per serving

Number Of Ingredients 10

1 cup uncooked brown rice or 4 cups well-chilled cooked brown rice
1 tablespoon canola or corn oil
4 or 5 medium green onions, thinly sliced, and 2 medium green onions, thinly sliced (optional), divided use
2 tablespoons snipped fresh cilantro
1 1/2 tablespoons plain rice vinegar
1 tablespoon soy sauce (lowest sodium available)
1 teaspoon ground cumin
1/2 teaspoon sugar
1 cup frozen green peas
2 teaspoons black sesame seeds (optional)

Steps:

  • Prepare the rice using the package directions, omitting the salt and margarine. Spread on a baking sheet and refrigerate for at least 1 hour. For best results, transfer the cooked rice to an airtight container instead of to a baking sheet. Refrigerate for a day or so.
  • In a large nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook 4 or 5 green onions for 1 minute, or until fragrant, stirring occasionally.
  • Stir in the cilantro and rice. Cook for 2 minutes, or until heated, stirring constantly to separate the grains.
  • Stir in the vinegar, soy sauce, cumin, and sugar. Stir in the green peas. Cook for 2 to 3 minutes, or until the mixture is hot and the peas are heated through, stirring occasionally. Sprinkle with the remaining 2 green onions, then with the black sesame seeds.
