TOLL HOUSE CHOCOLATE CHIP COOKIES

In the 1930s, Ruth Wakefield, the inventor of the chocolate chip cookie, ran the Toll House Inn, a popular restaurant in eastern Massachusetts, with her husband. Using an ice pick, Wakefield broke a semisweet chocolate bar into little bits, mixed them into brown-sugar dough, and the chocolate chip cookie was born. In 1939, she sold Nestlé the rights to reproduce her recipe on its packages (reportedly for only $1) and was hired to write recipes for the company, which supposedly supplied her with free chocolate for life. This recipe is very close to Mrs. Wakefield's original (hers called for a teaspoon of hot water and 1/2-teaspoon-sized cookies), and the one you'll still find on the back of every yellow bag of Nestlé chocolate chips.

1 teaspoon salt
1 cup butter (2 sticks), softened
3/4 cup granulated sugar

1 cup chopped nuts (optional)

Steps:

  • Heat oven to 375. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixing bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips and nuts, if using. Drop by rounded tablespoon onto ungreased baking sheets.
  • Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

COMBINE:
2 1/4 c all purpose flour
1 tsp baking soda
1 tsp salt
BEAT:
1 c marg. or butter, softened ( 2 sticks)
3/4 c granulated sugar
3/4 c brown sugar (packed)
1 tsp vanilla extract
2 eggs (add one at a time)
STIR IN:
2 c semi-sweet chocolate chips
1 c pecans, chopped (optional)
NOTE: IF OMITTING NUTS, ADD 2 T. OF ALL PURPOSE FLOUR TO MIXTURE.

Steps:

  • 1. Preheat oven to 375 degrees. Combine first three ingredients.
  • 2. Beat next five ingredients. Gradually add flour mixture.
  • 3. Stir in chocolate chips and nuts (optional)

1 tsp baking soda in hot water
2 1/4 c sifted flour
1 tsp salt
1 c chopped nuts
2 pkg economy size bars ( 7 oz. ea. ) nestle's semi-sweet chocolate
1 tsp vanilla extract

Steps:

  • 1. Cream butter
  • 2. Add brown sugar, granulated sugar, beaten eggs, and dissolved baking soda mixing alternately with flour and salt.
  • 3. Lastly add chopped nuts and Semi-Sweet Chocolate bars which have been cut in pieces the size of a pea.
  • 4. Flavor with tsp. vanilla extract.
  • 5. Drop by half teaspoons on a greased cookie sheet.
  • 6. Bake 10 to 12 minutes in 375 degree oven.

1/2 cup chopped walnuts

Steps:

  • Important: Cut each small square of semisweet chocolate into four pieces.
  • Cream butter or other shortening and add sugars and beaten egg.
  • Dissolve soda in the hot water and mix alternately with the flour sifted with the salt.
  • Lastly, add the chopped nuts and the pieces of semisweet chocolate.
  • Flavor with the vanilla and drop by half teaspoons on a greased cookie sheet.
  • Bake 10 to 12 minutes in a 375 (F) degree Fahrenheit oven.

1 stick margarine (use butter)
1/2 cup light brown sugar
1/2 cup white sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 egg
1 1/2 cups sifted four
2 tablespoons hot water
1/2 teaspoon soda, dissolved in the hot water
1 cup chocolate bits
½ cup chopped nuts

Steps:

  • Cream margarine (butter), add salt and vanilla. Add two kinds of sugar gradually. Add unbeaten egg and beat all together until mixture is light and creamy.
  • Dissolve soda in hot water, sift and measure flour and add these two mixtures alternately to creamed mixture. Fold in chocolate bits and nuts. Drop by teaspoon onto greased cookie sheets. This will make 50 drop cookies of about 2-inch size.
  • Bake at 375 degrees for about 10 to 12 minutes.

Chocolate Chip Cookies made with shortening rather than butter. Yield is approximate and really depends on how big you make the cookies. The Toll House recipe on the bag is supposed to make 5 dozen (60 cookies) so theoretically this should make 90. I made mine larger and didn't get nearly as many.

1 1/2 cups Crisco brand shortening** ((288 grams))
1 1/8 cups light brown sugar ((225 grams))
1 1/8 cups granulated sugar ((225 grams))
3 large eggs, room temperature
1 1/2 tsp vanilla extract
1 1/2 tsp salt
1 1/2 tsp baking soda
1 1/2 teaspoon water
3 cups plus 2 tablespoons all-purpose flour (King Arthur) ((396 grams))

Steps:

  • Preheat oven to 350 degrees F. Have ready three baking sheets lined with parchment paper.
  • With an electric mixer, beat shortening, sugar and brown sugar until creamy. Add the eggs and vanilla on medium speed for 3-5 minutes. Beat in salt. Dissolve baking soda in water and add to batter. Stir until fully blended.
  • Gradually add flour, stirring until almost fully blended. Add chocolate chips and stir until chips are mixed in and flour is fully absorbed.
  • Using a medium size cookie scoop, scoop balls of dough and arrange on baking sheets spacing 2 1/2 inches apart.
  • Bake one sheet at a time for about 12 to 14 minutes or until edges are slightly browned.
  • Remove cookies from baking sheets and cool on racks. Repeat with remaining dough.
