ORZO CHEESECAKE FRUIT SALAD
I love this salad it never get watery. You can add what ever fruit you like and it also makes a nice light dessert.

- 1. Cook orzo according to package directions. Drain and rinse in cold water; set aside. In a large bowl, combine the pudding mix, sour cream and pineapple.
- 2. Stir in the oranges, marshmallows, pecans, peaches, cherries, coconut and orzo. Fold in whipped topping. Cover and refrigerate for 2 hours or until chilled.

- Cook and drain orzo noodles.
- In a saucepan combine eggs, sugar, salt, cornstarch while gradually adding in reserved juice and stir to mix.
- Bring to a boil and stir, until mixture is a little thick.
- Set aside to cool.
- In a large serving bowl, combine orzo, orange, pineapple and juice mixture; mix with Cool Whip.
- Refrigerate until serving.
CHEESECAKE FRUIT SALAD

- Combine milk and pudding mix in the bowl of a stand mixer and mix until incorporated. Slowly blend in cream cheese, increasing the speed to high until mixture is smooth. Mixture should be somewhat thick.
- Fold in frozen whipped topping, using a spatula, until well incorporated and mixture is light and creamy. Add grapes, strawberries, bananas, blackberries, raspberries, and blueberries. Fold in gently, until fruit is well coated and evenly mixed in. Cover and refrigerate until ready to serve.

My boss gave me this recipe and it is fantastic. Don't be afraid of the combination of fruit and pasta! This makes a great side dish for a potluck or picnic.

- Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain and transfer to a large bowl. Add mandarin oranges, pineapple chunks, crushed pineapple, and maraschino cherries to orzo.
- Combine juice from mandarin oranges, juice from pineapple chunks, juice from crushed pineapple, sugar, eggs, and flour in a saucepan over low heat; cook, stirring often, until sauce is thickened, 5 to 7 minutes. Remove sauce from heat and cool, about 30 minutes.
- Pour cooled sauce over orzo mixture and toss to coat. Refrigerate until flavors blend, 8 hours to overnight. Fold whipped topping into orzo mixture before serving.
