OLD-FASHIONED BANANA PUDDING

Old-Fashioned Banana Pudding image

Think the store-bought stuff stands a chance against homemade banana pudding? One bite and you'll be singing a different tune.

Provided by Rebecca Lang

Time 40m

Yield Makes 8 to 10 servings

Number Of Ingredients 10

1/2 cup sugar
2 tablespoons cornstarch
1 teaspoon salt
2 1/4 cups whole milk
4 large eggs, separated
2 tablespoons unsalted butter
1 teaspoon vanilla extract
3 1/3 cups vanilla wafers
4 ripe bananas, cut into 1/2" slices
3 tablespoons sugar

Steps:

  • Preheat oven to 375°F. Whisk together first 3 ingredients in a small bowl. Whisk together sugar mixture, milk, and 4 egg yolks in a medium-size heavy saucepan until well blended. Cook over medium heat, stirring constantly, 6 to 8 minutes or until thickened. Remove from heat; stir in butter and vanilla.
  • Layer half of vanilla wafers in an 8-inch square baking dish. Top with half of banana slices and half of pudding. Repeat procedure with remaining wafers, banana slices, and pudding.
  • Beat egg whites at high speed with an electric mixer until foamy. Gradually add 3 Tbsp. sugar, beating until sugar dissolves and stiff peaks form, about 5 minutes. Spread meringue over pudding, sealing to edge of dish.
  • Bake at 375°F for 7 to 9 minutes or until golden. Let cool 30 minutes, and serve warm; or chill an additional hour, and serve cold.

OLD FASHIONED BANANA PUDDING

Old Fashioned Banana Pudding image

This Old Fashioned Banana Pudding is a classic!

Provided by The Southern Lady

Categories     Breakfast

Time 40m

Number Of Ingredients 12

4 bananas (peeled and sliced)
Vanilla wafers ((I use about 50 wafers to make this pudding))
3/4 cup sugar
1/4 teaspoon salt
1/4 cup all-purpose flour
1 cup regular or 2% milk
1 1/2 cups evaporated milk
4 egg yolks
1 teaspoon vanilla flavoring
4 egg whites
1/2 cup sugar
1 teaspoon vanilla flavoring

Steps:

  • In a medium bowl, slice bananas and sprinkle with lemon juice to keep them from turning black. In a 2 quart casserole dish layer the vanilla wafers and bananas. (I use 10 of the wafers to go around the side of the bowl just because I think it is pretty this way). In a saucepan on top of the stove with a whisk mix together the sugar, salt, flour, egg yolks, regular and evaporated milk. Cook on medium heat, stirring continuously with whisk, about 7 or 8 minutes until thickens. (It will burn very easily so be sure to stir) Remove from stove and stir in vanilla flavoring. Pour over wafers and bananas.

GRANDMA'S BANANA PUDDING

Grandma's Banana Pudding image

My grandma ran a country club and a restaurant in her day. She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!

OLD-FASHIONED BANANA PUDDING

Provided by Virginia Willis

Categories     dessert

Time 45m

Yield 8 servings

Number Of Ingredients 8

1/4 cup all-purpose flour
Pinch of table salt
1 teaspoon pure vanilla extract
About 45 vanilla wafers, such as Nilla
8 bananas, sliced 1/4 inch thick
2 cups whole milk
6 eggs, separated
1 1/4 cups sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the milk in a medium saucepan to a simmer over medium heat. In a second medium saucepan, whisk the egg yolks with 3/4 cup of the sugar until thick and light. Stir in the flour and salt to make a smooth paste.
  • Whisk the scalded milk into the egg mixture, blend well and then return the pan to gentle heat. (Make sure the cream is perfectly smooth before letting it boil!) Whisk until boiling. Continue to cook the cream, whisking constantly, until thick and creamy, about 2 minutes. Add the vanilla extract and stir to combine. Strain the pastry cream into a bowl; set aside.
  • Place a layer of the vanilla wafers all over the bottom of a medium baking dish (9-by-13-inch). Spread half of the reserved pastry cream on top of the wafers. Place the bananas evenly over the pastry cream in the baking dish. Top with a second layer of wafers. Spoon the remaining pastry cream over the wafers; set aside.
  • In a heavy-duty mixer fitted with a whisk attachment, beat the egg whites on high speed until soft peaks form. Gradually add the remaining 1/2 cup sugar, a little at a time, beating until stiff peaks form. Spoon the meringue over the pastry cream and spread evenly to cover the entire surface, sealing well at the edges. Using a spatula, make curls and peaks in the meringue.
  • Bake until lightly browned, 15 to 20 minutes. Remove to a rack to cool slightly. Serve immediately, warm or cold.

OSIE'S "OLD-FASHIONED" BANANA PUDDING

Osie's

This recipe is from my mil, she was such a wonderfully patient lady (especially to let me measure everything for this recipe as she made it!) and is sadly missed. It is the "old-fashioned" way to make banana pudding and does take a while, but the family seems to like it. :) prep & cook time are guesses

Time 40m

Yield 8-12 serving(s)

Number Of Ingredients 10

3/4 cup sugar
2 tablespoons flour
2 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
3 eggs, separated
1 teaspoon vanilla
1 (10 ounce) bag vanilla wafers
6 bananas, sliced
1/4 cup sugar

Steps:

  • Combine (to make custard) sugar, flour, corn starch, and salt in a pot.
  • Stir in milk.
  • Heat over low heat, stirring often to avoid scorching, until thickened.
  • (beleive me, you will know when this happens!-seems like it takes"forever") Beat egg yolks and gradually stir into the hot sugar mixture.
  • Cook 5 minutes, stirring constantly.
  • Remove from heat and stir in vanilla.
  • "Line"a 2 quart casserole dish with a layer of wafers and top with half of the sliced bananas.
  • (**Iusually have this step finished before I begin to make the custard.**) Pour half of"custard" over bananas.
  • Repeat, ending with custard on top.
  • In separate bowl, beat egg whites stiff, but not dry.
  • (I use the electric mixer on high.) Gradually add 1/4 c sugar and beat until mixture forms stiff peaks.
  • Pile on top of pudding.
  • Spread it around to the edges of the dish to"seal" it.
  • (Then make the top pretty by making designs with the back of the spoon.) Bake in a preheated 425 degree oven for about 5 minutes.
  • (until the egg whites start to turn a golden brown) Watch this close, because sometimes mine turns black-really fast!
  • Serve warm or chilled.
