A hearty, delicious way to start a meal, this clam and potato chowder is seafood’s answer to chicken noodle soup.

Yield Serves 6 to 8

Number Of Ingredients 8

4 cups cold water
3 dozen cherrystone clams, scrubbed
1/3 pound good-quality bacon, cut into 1-inch pieces
2 medium yellow onions, cut in 1/4-inch dice
2 cloves garlic, minced
3 medium russet potatoes
1/4 cup white wine
Coarse salt and freshly ground pepper

Steps:

  • Fill a large high-sided saucepan with the 4 cups cold water. Set over high heat, and bring to a boil. Add clams, cover with lid slightly askew, and cook 5 minutes. Remove any clams that have opened, and transfer to a bowl. Continue cooking clams, removing them as they open, for 5 to 10 minutes more. Discard any clams that have failed to open after this time. Strain cooking liquid through a cheesecloth-lined sieve. Set aside.
  • Wipe out saucepan; return to medium heat. Add bacon; cook until golden and crisp, about 7 minutes. Using a slotted spoon, remove bacon from saucepan, and transfer to a paper towel-lined plate to drain, leaving the fat in the pan.
  • Add onions and garlic to saucepan, and cook in bacon fat until soft and translucent, stirring often so they do not brown, about 5 minutes. Add 3 1/2 cups of reserved clam broth and potatoes. Bring to a simmer, and cook until potatoes are very tender, about 20 minutes.
  • Roughly chop clams. Add clams, wine, and an additional 1/2 cup broth to saucepan. Season with salt and pepper. Heat through, and serve. Keep chowder, covered, in the refrigerator 1 to 2 days.

This is 'Hatteras style.' I work in a restaurant near the North Carolina coast and make this two times a week. I have scaled down the batch for home use. It is very simple. You can also use the bacon grease to saute the vegetables in.

1 tablespoon vegetable oil
1 large onion, chopped
5 stalks celery, sliced
4 carrots, sliced
4 cups peeled, cubed white potatoes
2 (16 ounce) cans minced clams, with juice
3 quarts clam juice
1 teaspoon dried thyme
½ teaspoon ground black pepper
8 slices crisp cooked bacon, crumbled

Steps:

  • In a large pot over medium heat, cook onion, celery and carrots in oil until they begin to soften. Stir in potatoes, clams, clam juice, thyme, pepper and bacon. Bring to a boil, then reduce heat and simmer 20 minutes, or until potatoes are tender.

Living near the outer banks of North Carolina I've taken this indigenous recipe for clam chowder and added a northern touch, to the chagrin of the locals. All those here on the "Crystal Coast" (as this area is called) love the added touch. I hope you do also.

Number Of Ingredients 9

51 ounces ocean clams (3 lbs, large can)
46 ounces ocean clam juice (large can)
1/2-3/4 lb salt pork
1 large white onion, chopped fine
2 bay leaves
3 -4 large potatoes, peeled and cube
3/4 teaspoon black pepper
3 cups half-and-half
4 tablespoons cornstarch

Steps:

  • In a skillet saute the salt pork(cut into cubes).
  • Add chopped onions last few minutes and fry with pork.
  • Put all ingredients in a 6 qt crock pot EXCEPT milk and corn starch.
  • Cover and cook approximately 6-7 houirs in a slow cooker.
  • During the last half hour mix cold half and half with the corn starch.
  • add to crock pot slowly mixing well.
  • Cook for another half hour.
  • Goes well with white wine and French bread.

4 (6.5 ounce) cans minced clams
2 (28 ounce) cans crushed tomatoes
2 (29 ounce) cans diced tomatoes
7 carrot, (7-1/2")s carrots, sliced
1 stalk celery, diced
8 medium (2-1/4" to 3" dia, raw)s potatoes, cubed
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tablespoon dried oregano
1 tablespoon dried basil
2 tablespoons Worcestershire sauce
3 drops hot pepper sauce
½ teaspoon onion powder
salt to taste
ground black pepper to taste

Steps:

  • Combine canned tomatoes and clams together with juices in a large stock pot. Stir in oregano, basil, sauces, and onion powder. Simmer for 30 minutes.
  • Add vegetables, and simmer for 2 to 3 hours. Stir occasionally. Salt and pepper to taste, and serve.

Add the onion and cook until tender (but don’t let it color), about 5 minutes, stirring a few times. Pour in the water, then add the salt and pepper. Bring to a boil. Add the chowder clams, reduce the heat to low, and slowly simmer, uncovered, until the clams are tender, about 1 hour.
  • Add the potatoes, increase the heat to medium, and simmer until they are tender, about 20 minutes. During the last 10 minutes, add the clams in the shell and cover the pot. Add the milk if using right before serving but give it enough time to warm (a couple of minutes usually works).
  • If you like, set a slice of bread in the bottom of each large shallow serving bowl, then ladle in the chowder, making sure to get a couple of the clam shells. Sprinkle with parsley and serve with oyster crackers.

  • Over medium heat in a soup pot, fry the bacon. After the bacon is crispy remove the pieces to a paper towel to drain. Reserve 2 teaspoons of the bacon dripping and sauté the onion and celery for about 5 minutes.
