Flavorful Flounder For the Oven image

My variation on an already fantastic fish recipe. I just tweaked it to make it easier for myself. I'm all about ease when it comes to cooking these days.

cooking spray
2 pounds flounder fillets, rinsed and patted dry
¼ teaspoon salt
3 tablespoons lemon juice, divided
½ cup grated Parmesan cheese
¼ cup butter, melted
3 tablespoons mayonnaise
3 tablespoons chopped green onions

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with nonstick cooking spray.
  • Season both sides of flounder fillets with salt. Place into the prepared baking dish. Brush 1 tablespoon lemon juice over fillets.
  • Mix remaining lemon juice, Parmesan cheese, melted butter, mayonnaise, and green onions in a bowl; spoon over the fillets.
  • Bake flounder in preheated oven for 10 minutes. Switch oven to broil; broil fillets until the tops are just browned, 3 to 5 minutes.

2 flounder fillets, cut into equal pieces
2 tablespoons fresh lemon juice
2 teaspoons canola oil
2 tablespoons dried breadcrumbs
pepper, to taste
1 tablespoon parmesan cheese
1/4 cup cilantro, minced

Steps:

  • Preheat oven to 350°F.
  • Spray baking dish with nonstick cooking spray.
  • Place the fillets, skin-side down, in the baking dish.
  • Sprinkle evenly with lemon juice.
  • Brush each fillet with 1 teaspoon oil.
  • In a small bowl, combine the bread crumbs, cheese and pepper; sprinkle evenly over the fillets.
  • Bake for 15 minutes, or until done.
  • Sprinkle with minced cilantro and serve.

A real easy baked flounder filet dish that turns out great!

1 pound fresh Brussel sprouts (or frozen)
1/2 cup extra virgin olive oil (divided)
salt and pepper
1/4 cup balsamic vinegar
1/2 cup grated parmesan cheese (divided)
4 small Flounder fillets (appx. 3-4 oz. each or just 2 bigger ones)
1/2 teaspoon dried dill weed
1/2 teaspoon dried basil
2 fresh lemons
1/2 cup chopped fresh parsley (or 1/4 cup dried)

Steps:

  • Set your oven at 400°F/200°C. Rinse the brussel sprouts off and pat them dry. Cut the stem end off and remove the outside leaves. Cut them in half through the stem and put them in an aluminum foil lined baking pan. Drizzle with extra virgin olive oil and balsamic vinegar. Lightly sprinkle salt, pepper and grated parmesan cheese. Gently mix it all up getting the sprouts coated. Then sprinkle some more parmesan and drizzle a little more balsamic vinegar.
  • Put it in the oven and lets get started on your Oven Baked Lemon Parsley Flounder. Get out a cookie sheet big enough for the filets to lie out flat. Line it with aluminum foil first if you want to make the clean up easier. Spread the filets out flat on the cookie sheet. Drizzle with some extra virgin olive oil and turn them over a couple of times to get them coated with the oil. Finish the turning over routine with the rounded side up and the flat side, with the guy stripe down the middle, down. Sprinkle with some dried dill weed and/or dried basil, salt, pepper and grated parmesan. Then into the oven they go.
  • The flounder will take 8-10 minutes. While the oven is doing it's work squeeze the juice from two lemons into a small bowl. Chop up a handful of fresh parsley leaves and add it to the lemon juice. Dried parsley leaves will work in a pinch but only use half as much as the fresh. But, fresh works best. Mix it together and let it sit.
  • Gently poke one of the filets with a fork and if it wants to flake apart they are done. The brussel sprouts had a head start so it all will be done at about the same time. Put the filets and the brussel sprouts on the plates for serving and then carefully spoon the lemon and parsley mixture over the filets. Enjoy your Oven Baked Lemon parsley Flounder. A well chilled California Vermentino or Chardonnay would go great.

Flounder Fillets in Lemon Sauce always turn out juicy, flaky, and amazingly tasty every time! The lemon sauce is sublime with every bite, you'll fall in love with this recipe - hands down. Super quick and easy, making dinner a snap!

frozen flounder fillets - about 3 to 4 fillets
1 Tbsp. extra virgin olive oil
1 Tbsp. butter
1/8 tsp. sea salt
1/4 tsp. herbs de Provence
pinch of cayenne pepper
1/8 tsp. dried oregano
1 Tbsp. finely chopped parsley
2 Tbsp. white wine
3 Tbps. lemon juice, plus extra

Steps:

  • First, thaw the frozen flounder fillets either on the counter or overnight in the fridge. Open the packages, and drain the excess water from their packaging. Give them a quick rinse under running water, and allow them to drain again.
  • Next, in a 10-inch non-stick skillet, heat olive oil and butter on low heat, until the butter melts.
  • When the butter is melted, add the fillets to the skillet. Sprinkle over them with some sea salt, herbs de Provence, oregano, and cayenne pepper.
  • Cook them on low heat for 30 seconds to one minute. They will start to release excess water, and that's fine.
  • Pour in the wine and lemon juice, and sprinkle over them with freshly chopped parsley. Then cover with a lid.
  • Simmer for 4 to 6 minutes or more, ( depending on how thick the fillets are) until the fish turns opaque-white-ish and the sauce is reduced a little. And the fish flakes off with a fork.
  • When the flounder fillets are fully cooked. Turn off the heat. Squeeze additional lemon juice over the fish (about 1 tablespoon, or more). Then serve.
  • Serves 2

¼ cup butter, melted
3 tablespoons white wine
3 tablespoons seasoned bread crumbs
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
  • Rinse flounder fillets, pat dry, and place on the baking sheet. Season with salt and pepper. Whisk butter and wine together in a bowl; pour over flounder. Sprinkle each fillet with bread crumbs and then paprika.

  • Turn the oven on at 400°F. Rinse off the fillets and pat them dry with a paper towel. Spray a cookie sheet with oil and spread the fillets out on it. You could line the cookie sheet with aluminum foil before you spray it for an easier cleanup. In a bowl 1/4 cup olive oil or melt 1/2 stick of butter and add 1 tablespoon garlic powder or chopped garlic, salt, pepper, juice from 1/2 of a lemon and dried parsley flakes. Here's where you get to do it your own way. With the basic oil or butter then you can add lots of different things to your liking. Paprika, Parmesan cheese, honey, red pepper flakes, balsamic vinegar and on and on. Brush the mixture over the flounder saving some for the veggies.
  • Line a small baking pan with foil and put in some potatoes cut into about 3/4 inch cubes and some frozen broccoli florets or carrots. Brush them with the rest of the butter (or oil) mixture and put everything in the oven at the same time.
  • Seven minutes on bake then three minutes on broil, but, all ovens are different so watch them. When the flounder starts to sizzle around the edges switch from bake to broil and then as soon as they start to get the slightest brown on top take them out. The veggies will keep up with the fish so it all should be ready to go.
