  • Heat oven to 350°F. Spray large baking dish with cooking spray. In large bowl, beat eggs and milk with wire whisk until smooth. Separate dough into 10 biscuits; cut each into quarters. 8 ounces shredded cheddar cheese
6 -8 slices bread, torn in pieces or cubed
6 eggs, slightly beaten
2 cups milk
salt and pepper

Steps:

  • Add milk to eggs.
  • Mix egg mixture, salt and pepper together.
  • Spray a 9x13 inch pan with cooking spray.
  • Put bread pieces in bottom of pan.
  • Sprinkle ham or sausage over bread and sprinkle cheese over the meat.
  • Pour egg mixture over all.
  • Bake at 350 degrees for 45-50 minutes.

1 cup cubed fully cooked ham
1 can (4 ounces) chopped green chiles
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
6 large eggs
1 can (12 ounces) evaporated milk
1/4 teaspoon pepper
Salsa, optional

Steps:

  • In a greased 8-in. square baking dish, layer the hash browns, ham, chiles and cheeses. In a large bowl, whisk the eggs, milk and pepper; pour over the casserole. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in center comes out clean, about 1 hour. Let stand 5-10 minutes. Serve with salsa if desired.
