3c bread flour
2 tsp sugar
1 1/2 tsp salt
1/2 tsp yeast
1 1/3c cold water
1 Tbsp olive oil, plus more for brushing

Steps:

  • To make the dough, combine the flour, sugar, salt, and yeast in the bowl of a mixer. Pulse just to combine. With the machine running, add the cold water and process just until the dough is combined and all dry ingredients are incorporated, about 10 seconds. Let dough rest for 10 minutes.
  • Add the oil to the dough. Process until the dough forms a smooth, tacky ball that clears the sides of the bowl, about 30-60 seconds. Remove the dough from the bowl, knead briefly on a lightly floured work surface, about 1 minute. Transfer to a lightly oiled bowl, cover with plastic wrap and refrigerate for at least 24 hours and up to 3 days. (After refrigerating, the dough can be wrapped tightly in plastic wrap, placed in a zip-top bag and frozen for later use.)
  • The dough will not have risen much. Don't worry, this is normal!
  • One hour before baking the pizza, preheat the oven to 500˚ F. Remove the pizza dough from the refrigerator and divide in half. Form each half into a ball, place on a lightly oiled baking sheet and let sit at room temperature for 1 hour. (If you plan to freeze a portion of the dough, this is the time to wrap in plastic, place in a freezer bag and freeze for later use.)
  • To assemble the pizza, flatten dough into an 8-inch disk on the baking sheet, then gently stretch the dough to a roughly 12-inch circle (using a rolling pin if necessary).
  • Lightly brush the dough with olive oil. Bake 5-8 minutes. Top with sauce and desired toppings and return to oven. Bake until the cheese is bubbling and slightly browned, another 8-10 minutes. Let cool about 5 minutes before slicing and serving.

This is hands down the best pizza dough! It makes a New York-style pizza crust that is a thin crust pizza in the center with beautifully puffed edges. You'll love chewing on the crust - it's crisp, chewy and so satisfying.

1 1/4 cups warm water (105-110˚F)
1/2 tsp active dry yeast
1 tsp honey
1/2 Tbsp fine sea salt
3 1/3 cups all-purpose flour

Steps:

  • In a small bowl, stir together water, honey, and salt then sprinkle the top with 1/2 tsp yeast and let sit 5 minutes then stir.
  • Measure 3 1/3 cups flour in a large mixing bowl and make a well in the center. Pour yeast mixture into the center then stir with a firm spatula until the dough comes together. Knead by hand 2 minutes (dough will be sticky). Cover the bowl with plastic wrap and let rise at room temperature 4-5 hours or until doubled in size.
  • Transfer dough to a floured surface, turn to coat lightly in flour so it isn't sticky then divide in half. Fold each piece of dough in half 8 times, gently pulling the sides over the center like closing a book, turning the dough each time and repeating for 8 folds. Form a ball in your hands and transfer each piece of dough to a lightly oiled bowl seam-side-down, cover and refrigerate overnight (18 hours) or up to 1 week.
  • PREP: Remove the dough 1 hour before using to let it relax and come to room temperature. Before forming the pizza crust, fully preheat your oven so pizza can be baked right away. Place a pizza stone or inverted baking sheet onto the center rack of the oven and preheat to 550˚F. Also, lightly flour a pizza peel and prep toppings.
  • When dough is about room temperature and oven is preheated, transfer 1 piece of dough to a floured surface, turning to lightly coat in flour. Pat the center of the dough gently with fingertips. DO NOT pop any bubbles present.
  • Lift the dough over both knuckles and roll your knuckles under the center of the dough, working outward as you rotate the dough along your knuckles and leaving a thicker crust at the edge. Continue working the dough until a 10-12" pizza has formed. It will shrink slightly so make it a little bigger than you think. Place the dough down on a lightly floured pizza peel. Give the pizza peel a little shake to make sure the pizza slides over it and is not sticking.
  • Spread on desired pizza sauce and toppings. Give the pizza another jolt to make sure it slides on the pizza peel (you don't want it to stick while transferring it into the oven). Slide pizza onto the preheated pizza stone and bake at 550˚F for 8-10 minutes or until crust is golden brown and some of the larger bubbles on the crust are lightly scorched to ensure a crisp crust.

This makes a very tasty tender and chewy crust, you can leave the dough in one piece for an extra large pizza or divide it in two for two smaller pizzas --- this must be prepared a day in advance and refrigerated overnight after the first rise, no need to preheat the oven before baking the pizza, and make certain to sprinkle the cheese on top of the crust then place the remaining topping on top of the cheese --- you will love this crust!

Yield 1 large pizza dough

Number Of Ingredients 8

1 1/2 cups warm water
3 teaspoons yeast
1 teaspoon sugar
4 cups all-purpose flour (more as needed or use half bread flour and half all purpose flour)
1/2 cup olive oil (can use vegetable or Canola oil)
2 teaspoons salt
1 teaspoon sugar
fresh garlic (optional) or garlic powder (optional)

Steps:

  • Proof the yeast with 1 teaspoon sugar in 1-1/2 cups warm water for about 8-10 minutes or until foamy.
  • Meanwhile fit a heavy-duty stand mixer with the kneader blade.
  • In the bowl, place 4 cups flour with 1/2 cup oil (can use vegetable or Canola oil) 1 teaspoon sugar, 2 teaspoons salt and the fresh chopped garlic or garlic powder (if using).
  • After the yeast is proofed and foamy, add it to the bowl and start kneading, adding in more flour if needed to create a soft smooth dough (knead for about 8-10 minutes).
  • Remove the dough to a lightly floured surface and let rest for about 10 minutes.
  • Grease a large bowl.
  • Gather up dough and knead gently for about 30 seconds and place into the bowl.
  • Cover and let rise for about 1 hour (might take more or a little less than 1 hour) or until the dough doubles in size.
  • Punch down dough.
  • Shape into a large ball.
  • Generously oil the outside of the dough ball, and place in a heavy-duty ziploc plastic bag and close the bag.
  • Place in the fridge overnight.
  • If the dough keeps rising in the bag, just punch lightly with hands and it will go down (you might have to do this several times, it will not effect the texture or taste).
  • When ready to use roll out dough and place on a large pizza pan or two small pans, trim ends with a pizza cutter.
  • Top with sauce then sprinkle with cheese and then top with favorite toppings (I like bacon and mushrooms!) the cheese must be put on before the toppings and over the sauce.
  • Set oven to 425 degrees (bottom rack) and place into the oven immediately without preheating.
  • Bake for about 30 minutes or until the crust is light brown on bottom.

153 g type 00 flour
153 g all-purpose flour
8 g fine sea salt (1 teaspoon)
2 g active dry yeast (3/4 teaspoon)
4 g olive oil (1 teaspoon)
202 g lukewarm water (scant 1 cup)

Steps:

  • In mixer bowl, thoroughly combine the flour and salt and make a well in the center. In a separate bowl, thoroughly combine the yeast, olive oil, and lukewarm water. Pour the wet mixture into the well in the dry mixture and begin mixing the two together with dough hook, gradually incorporating the dry into the wet. After about 3 minutes, when the wet and dry are well combined, turn off the mixer and let it rest, uncovered, for 15 minutes. This allows time for the flour to absorb the moisture.
  • Turn the mixer back on and knead the mixture for about 3 minutes. The dough will be moist and sticky, but after a few minutes of kneading it should come together into a smooth mass; add a teaspoon of flour at a time if it seems too wet. Divide the dough into 2 pieces, shape them gently into balls, and wrap them in plastic wrap. Refrigerate for at least 24 and up to 48 hours before using. This process, called proofing, allows for the fermentation that gives the dough structure-which means a chewy, pliable crust-and flavor. One ball with make one thin-crust 12" pizza, enough to serve 2 people generously. The other one can be frozen and used another time; thaw in refrigerator for several hours.
  • TO COOK: Preheat oven to 450 or 500 F., with baking stone on center rack; allow to heat at least 45 minutes.
  • Place ball of dough on a floured counter, cover loosely with plastic wrap. When dough is a puffy, after about 30 minutes, gently press with fingertips and stretch it into a 12" circle - it will most likely be uneven in shape. Don't roll with a rolling pin, as that flattens all the bubbles and lightness in the dough. Lift the round, stretch the top edge gently, and let the weight pull it larger. Sprinkle a peel or rimless baking sheet with some semolina or cornmeal and AP flour. Place stretched dough onto peel, allow to rest 5 - 10 minutes. Spread crust with 3-4 oz. pizza sauce, any meat or veggie toppings, and 4 oz. grated mozzarella. Slide from peel onto heated stone , bake for 8-10 minutes until cheese begins to brown and crust is nicely browned. If you are using cooked meat topping, you can bake it without cheese for about 5 minutes to heat through and firm up the crust, then add cheese and bake for another 5 minutes.
