This is so easy! I use it when I'm having people over for dinner because it can easily be doubled to feed a large gathering or dinner party. Once you put it in the oven, you can forget about it for 2 hours and move on to something else. It's always a huge hit with our guests! Serve over rice and enjoy!

1 (2 ounce) package chipped beef
6 skinless, boneless chicken breast halves
1 pound sliced bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 (16 ounce) container sour cream
½ teaspoon paprika

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.
  • Bake in preheated oven for 2 hours.

2 boneless skinless chicken breasts
2 tablespoons butter
1 garlic clove, minced
1 medium onion, sliced
salt and pepper
1 cup white wine or 1 cup water
1/2 cup sour cream

Steps:

  • In a medium frying pan, lightly brown garlic in butter over medium heat, about 2 minutes.
  • Add chicken and cook, turning, about 10 minutes or until brown on all sides.
  • Place onion slices on bottom of pan under chicken.
  • Sprinkle chicken with salt and pepper; pour wine or water over chicken.
  • Cover, reduce heat to low and simmer about 20 minutes or until chicken is done.
  • Remove chicken to serving plates and keep warm.
  • Add sour cream to pan drippings and cook, stirring, about 2 minutes until warm but not boiling.
  • Spoon over chicken.

1/3 cup dried breadcrumbs
7 teaspoons flour, divided
9 ounces boneless skinless chicken breasts
1 egg, slightly beaten
2 teaspoons margarine
2 teaspoons oil
1/2 cup sliced fresh mushrooms
1/4 cup canned chicken broth
1/4 cup dry white wine
1 ounce provolone cheese, cut into strips

Steps:

  • In a shallow bowl or on a paper plate, combine the bread crumbs and 2 Tbsp of flour; dip chicken into egg, making sure all sides are coated, then dredge in crumb mixture.
  • Repeat process, being sure to cover the chicken entirely.
  • In a 10 inch nonstick skillet, combine the margarine and oil.
  • Heat over a medium heat until the margarine is bubbly and hot.
  • Add chicken and cook, turning once, until both sides are lightly browned and chicken is cooked through, 2-3 minutes on each side.
  • Transfer to a plate and keep warm.
  • To the same skillet add the mushrooms and saute until lightly browned, 1-2 minutes; sprinkle with remaining teaspoon of flour and stir quickly to combine.
  • Add broth and wine.
  • Cook, stirring constantly, until mixture thickens, about 1 minute.
  • Return chicken to skillet and top evenly with cheese; cover and cook until cheese is melted, 2-3 minutes. Garnish with parsley.

3 tablespoons Salted Butter
4 Chicken Breasts, split, skinned, boned & flattened
2tablespoons Flour
3/4cups Chicken Broth
1/4cup Champagne or White Wine
1/2cup Cream (Half & Half)
2 tablespoons Champagne Mustard
24 Grape Tomatoes, cut in half
1tablespoon Fresh Minced Tarragon
1/2tablespoon Fresh Rosemary

Steps:

  • Melt butter in a large skillet on medium heat. Add chicken breasts and cook until done & lightly browned on both sides. Remove Chicken to a warm, covered serving platter. 2. Stir flour into the pan drippings with a whisk. While whisking, gradually add chicken broth, wine and light cream. Stir and cook until the sauce thickens & bubbles. Stir in the mustard. 3. Turn heat to low, return the chicken to the skillet, add taragon and rosemary, cover & heat for about 10 minutes, making sure the sauce does not get too thick. (If it does, add more wine or chicken broth). 4. Garnish with tomatoes and some fresh rosemary sprigs.

4 -6 boneless skinless chicken breasts
4 ounces armour dried beef, slices
4 -6 slices bacon (one for each chicken breast)
2 cups sour cream
8 ounces cream of mushroom soup

Steps:

  • Spray a 13x9x2-inch pan with non-fat cooking spray.
  • Finely chop dried beef in food processor.
  • Evenly spread chopped dried beef on bottom of pan.
  • Wrap one slice of bacon around each chicken breast.
  • Mix sour cream and cream of mushroom soup together, beating with a whisk to blend well. Pour mixture over chicken.
  • Cover pan with foil and bake in a 275 degree (very LOW temperature) oven for three hours.
