Steps:
- Preheat your oven to 350 degrees.
- Place your chopped plantains on a cookie sheet.
- Bake for about 10-15 minutes until they have a crispiness to them.
- Now use either a spatula or another cookie sheet to press the plantains down and flatten them out. Like a chip.
- Now heat up a large skillet or deep frying pan over medium-high heat. Add your coconut oil to get super hot.
- Once the oil is super hot (I like to say super) add your plantains to start frying up.
- Cooking on both sides for 1-3 minutes
- Place on a paper towel to soak up the excess oil.
- Top with whatever you would like while still hot!
- Consume!

- Slice the tips of the plantains with a knife, then cut 1 or 2 slits in the skin down the length of the plantain. If the peel does not lift off easily you can loosen it by soaking the plantains in a bowl of water with about 1 tbsp of salt for 10 to 15 minutes.
- In a large skillet, heat your fat of choice over medium heat until shimmering, 3 to 5 minutes. Carefully add the disks to the heated fat, cooking on each side for 2-4 minutes, or until they have turned a darker, more golden color. Do not allow to brown.
- Remove the disks from the oil and flatten, using a tostones press or a sturdy glass/jar or flat meat mallet (I STRONGLY RECOMMEND THIS METHOD. Read how I did mine above in the post, using the parchment paper)

- Heat your fat of choice in a large dutch oven over medium heat until it reaches 325˚ F. (Yes, I recommend checking the temperature with your trusty thermometer.)
- In the meantime, cut the ends off of the plantains. Use a sharp knife to cut a shallow line down the length of each plantain, making sure you don’t cut into the fruit. Then, slice each plantain into three even pieces (about 2 inches in length).
- When the oil reaches 325˚F, carefully lower the plantains into the shimmering fat. The oil should immediately start bubbling around the plantains as soon as it comes in contact.
- Fry the plantain pieces for 3 to 5 minutes, turning them occasionally, until they turn golden yellow.
